Abstract

AbstrakRujak Gobet merupakan salah satu makanan tradisional khas Malang, Jawa Timur, yang memiliki nilai budaya dan filosofi mendalam, khususnya dalam tradisi mitoni (tujuh bulanan). Penelitian ini bertujuan untuk mengkaji sejarah, filosofi, serta resep asli Rujak Gobet dan mengembangkan modifikasi penyajiannya dengan teknik modern plating. Metode penelitian yang digunakan adalah eksperimen, yang memodifikasi tampilan Rujak Gobet tanpa mengubah cita rasa aslinya. Modifikasi dilakukan dengan teknik pemotongan buah yang presisi, pengolahan bumbu yang lebih kental, dan penataan visual yang estetik menggunakan garnish edible flower dan pemilihan piring berwarna gelap. Hasil menunjukkan bahwa penyajian modern mampu meningkatkan daya tarik visual dan nilai estetika Rujak Gobet, tetapi tetap mempertahankan keaslian rasa tradisionalnya. Penelitian ini menunjukkan bahwa modernisasi penyajian makanan tradisional dapat menjadi salah satu strategi untuk memperluas penerimaan pasar, melestarikan budaya kuliner, dan meningkatkan nilai jual makanan lokal dalam industri kuliner masa kini.AbstractRujak Gobet is one of the traditional foods of Malang, East Java, which has deep cultural and philosophical values, especially in the mitoni (seven-month) tradition. This research aims to examine the history, philosophy, and original recipe of Rujak Gobet and develop modifications to its presentation in the context of fine dining through modern plating techniques. The research method used is experimental, which modifies the appearance of Rujak Gobet without changing the original taste. Modifications were made with precision fruit cutting techniques, thicker seasoning processing, and aesthetic visual arrangement using edible flower garnishes and dark-colored plate selection. The results show that the modern presentation is able to increase the visual appeal and aesthetic value of Rujak Gobet, but still maintains the authenticity of its traditional taste. This research shows that the modernization of traditional food presentation can be one of the strategies to expand market acceptance, preserve culinary culture, and increase the selling value of local food in today's culinary industry..
