The aimed of the study was to determine the performance of chitosan in inhibiting bacterial growth at different storage time of fish by using TPC method. This research was conducted at Chemical Laboratory of Teacher Training and Education, and Faculty and Milk Processing Laboratory of agricultural faculty of Syiah Kuala University Banda Aceh on February 2015. Observation parameter was bacterial counting by TPC method storability on control, 1%, 1.5%, 2%of chitosan concentrations. The result showed that chitosan was able to inhibit bacterial growth of bacterial colonies Decapterus macrosoma’s meat during 14 days of storage time.       Penelitian ini bertujuan untuk mengetahui kinerja kitosan dalam menghambat pertumbuhan bakteri pada waktu simpan yang berbeda dengan metode TPC. Penelitian ini dilaksanakan di Laboratorium Kimia Fakultas Keguruan dan Ilmu Pendidikan, Laboratorium Pengolahan Susu Fakultas Pertanian Universitas Syiah Kuala Banda Aceh pada bulan Februari 2015.Parameter pengamatan meliputi perhitungan jumlah bakteri dengan metode TPC danperlakuan konsentrasi kitosan kontrol, 1%, 1,5% dan 2%. Hasil pengamatan menunjukkan bahwa penggunaan kitosan mampu menghambat pertumbuhan koloni pada daging ikan layang hingga waktu simpan selama 14 hari.
