Training on melon processing technology into healthy snacks towards a green lifestyle through digital retargeting

Abstract

Fruit leather is a type of processed food product made from fruit pulp that is dehydrated to a moisture content of 10-15%, providing a shelf life of up to 12 months under proper storage conditions. Banjarsari Village is a strategic agricultural area with significant potential for melon cultivation; however, the downstream processing of harvests remains suboptimal. Melons that fail to meet market standards (low-grade) are often discarded or sold at extremely low prices, potentially leading to organic waste and economic losses. This community service program aims to enhance the income and welfare of the Banjarsari Village community by providing training on processing local melons into healthy snacks, branded as "Meloop" fruit leather, and assisting in marketing through digital retargeting technology. The program's implementation stages included socialization with melon farmers and PKK (Family Welfare Movement) members, training on processing technology using food dehydrators, vacuum packaging techniques, and digital marketing management. The results indicated that the partners successfully understood and implemented fruit leather production, vacuum packaging, and digital marketing strategies, as evidenced by an average post-test score exceeding 7. The implementation of this program successfully transformed non-marketable harvests into high-value economic products while supporting a green lifestyle through agricultural waste reduction (zero waste) in Banjarsari Village, Bandarkedungmulyo, Jombang.
