The continuous development of technology encourages innovation in various fields, including agriculture and food processing such as shallots and garlic, which are important commodities in Indonesian cuisine. The need for these two types of onions increases by 3–5% per year in line with population growth, the culinary industry, and modern lifestyles. With this development, an automatic onion processing machine with a 3-in-1 mechanism was created. The testing method used in this study is testing the performance of the 3-in-1 onion processing machine. The test was carried out at a rotational speed of 1400 RPM, using test materials in the form of shallots and garlic, each weighing 1 kg. The parameters measured include the time of the peeling, slicing, and grinding process (grams/minute), the working capacity of the tool (kg/hour), and the quality of the processed results which are assessed from the level of cleanliness of the peel, the thickness of the slices, and the smoothness of the ground results.
