Fluctuations in commodity prices during peak harvest seasons and weak post-harvest management create economic vulnerabilities for horticultural farmers in Kedung Pengawas Village, Bekasi Regency. Additionally, local informal micro-businesses face structural barriers due to a lack of formal business legality. This thematic community service program aimed to empower the community through food product diversification and business legality acceleration. The program implemented a multidisciplinary participatory action approach involving 20 active partners, including PKK driving cadres, women farmers, and local youth. Key interventions integrated educational socialization on nutrition, interactive training to process raw spinach into healthy spinach noodles with crispy kangkung toppings, and direct counseling via the KKN Law Clinic. The program findings demonstrated a significant cognitive improvement in functional food utilization, with the developed noodles successfully passing organoleptic evaluations for their ideal chewy texture and savory taste. Furthermore, the law clinic successfully issued and delivered 10 official Business Identification Numbers via the Online Single Submission portal. Ultimately, this initiative carries strong implications for transforming informal village actors into law-abiding, economically resilient, and creative food entrepreneurs.
