The fisheries processing sector still faces challenges in increasing the added value and competitiveness of fishery products, particularly in modern fishery-based Micro, Small, and Medium Enterprises (MSMEs). This study aimed to analyze the Business Model Canvas (BMC) and the added value of fish chips processing at Generasi Restu Ibu MSMEs in Depok City. The research employed a case study method with a quantitative descriptive approach. Data was collected through observation, interviews, questionnaires, and documentation, while value-added analysis was conducted using the Hayami method. The results showed that 175 kg of tilapia surimi produced 255 kg of fish chips with a conversion factor of 1.46. The processing activity generated an added value of IDR 365,480.34/kg with a value-added ratio of 85.11%, categorized as high added value, and generated a profit of IDR 364,600.34/kg. In conclusion, fish chips processing is economically feasible and has strong potential to be developed as a modern fish-based processed product.
