Abstract

The safety of street-vended food is a critical public health issue, as such foods can serve as vehicles for the transmission of pathogenic bacteria that cause foodborne illnesses. This threat is exacerbated by the emergence of antibiotic-resistant bacteria, which complicates the treatment of human infections. This study aimed to assess the impact of drug-resistant pathogenic bacteria on the safety of street food in Surakarta City, Central Java Province, Indonesia. A descriptive laboratory-based method was employed to analyze 20 street food samples collected from various locations in Surakarta. Isolated bacteria were tested for susceptibility using the disk diffusion method (Kirby–Bauer) against four antibiotics: chloramphenicol, levofloxacin, amikacin, and ampicillin. The results revealed varying inhibition zone sizes across the antibiotics, indicating differing levels of bacterial sensitivity. On average, chloramphenicol demonstrated the highest antibacterial activity, followed by ampicillin, amikacin, and levofloxacin. Conversely, certain isolates from specific food samples showed no inhibition zones against any of the tested antibiotics, suggesting the presence of multidrug-resistant (MDR) bacteria. These findings indicate that street food can act as a source for the spread of antibiotic-resistant bacteria, posing potential health risks to the public. Therefore, improvements in food hygiene and sanitation, routine food quality monitoring, and surveillance of antibiotic resistance in read to-sell foods are essential aligned with the "One Health" approach—to mitigate the spread of antimicrobial resistance. The study's results are expected to serve as a scientific basis for refining street food safety management policies and preventing the rise of antibiotic resistance in Indonesia.
