Improving production efficiency and traceability remains a major operational challenge in the medium-scale fish processing industry. This study presents the design and implementation of an Internet of Things (IoT)-based automation system tailored for real-time process monitoring in a medium-scale fish processing facility, specifically implemented at the institutional kitchen unit of the National Nutrition Agency. The system integrates DS18B20, DHT22, infrared sensors, and ACS712 current sensors with an ESP32 microcontroller and Blynk application interface to monitor room temperature, ambient humidity, product counts, and electrical energy consumption. Results from a 10-day evaluation demonstrated stable performance, maintaining room temperature accuracy within ±0.5°C and transmission latency under 1 second. System evaluation conducted with 10 operational staff () using the System Usability Scale (SUS) yielded an average score of 82.5, indicating high user acceptance.
