The Free Nutritious Meal Program (MBG) and fruit-processing business activities around the madrasah environment generate a daily volume of fruit peel waste that has not yet been managed. This activity aims to initiate the processing of fruit peel waste into eco-enzyme at MAN 1 Samarinda as a pilot for independent organic waste management. A total of 3,000 grams of fruit peel waste was collected on 2 September 2026 from a fruit juice processing business near the activity location, consisting of orange and watermelon peels. Of this amount, 3,000 grams were processed into 1 fermentation container with a sugar : organic waste : water ratio of 1 : 3 : 10. Fermentation began on 2 September 2026 and was observed at the beginning and end of the observation period, namely day 0 and day 14, through organoleptic parameters including color, aroma, and gas formation. Observation results on day 14 compared to day 0 showed a change in solution color from clear pale yellow to light brown/murky brown.
