Vannamei shrimp (Litopenaeus vannamei) is a marine product with high economic potential. Breaded shrimp is a form of food diversification of vannamei shrimp into a value-added product produced by PT. XYZ. The quality of breaded shrimp relies on the company’s quality assurance through the implementation of Good Manufacturing Practices (GMP). This study aims to observe the breaded shrimp production process with the application of GMP. Additionally, it seeks to ensure that the production process is safe, consistent, and of high quality. The observation was conducted at PT. XYZ located in Sidoarjo Regency, East Java, from July 15, 2024, to August 15, 2024. A descriptive method was used in this research, involving the collection of primary and secondary data. Data collection was carried out through active participation, observations, interviews, and literature studies. The implementation of GMP requires management commitment, ongoing training, as well as investment in adequate production facilities and equipment. The company must ensure a work culture that supports the consistent and effective implementation of GMP.
