Abstract

Kepok banana flour is a processed food that has the potential to be used as a functional food. One of the efforts to improve the functional food of banana kepok flour is Modification. Modified kepok banana flour can increase the levels of resistant starch and total fiber. Modified kepok banana flour can be used in the manufacture of processed food typical of Mandar, namely kabosol. This study aims to determine the effect of adding modified kepok banana flour to kabosol on resistant starch content, fiber content and product acceptability. This research is an experimental study with a post-test design.The research design used a completely randomized design (CRD) with five factors. They were F0 (0%), F1 (25%), F2 (50%), F3 (75%), and F4 (100%). Parameters measured were resistant starch content, total fiber, and hedonic test (taste, aroma, color, and texture). The data was processed using the ANOVA test at a 5% confidence interval. Based on the results of the study, there was an effect of adding modified kepok banana flour to kabosol based on resistant starch content (p=0.0133), fiber content (p=0.0243), and organoleptic tests (color (p=0.0208), taste (p=0.0284), aroma (p=0.0432), and texture (p=0.0459)) at a 5% confidence interval. Treatment F4 (100%) showed the highest values ​​of resistant starch and total fiber, which were 25.02 % and 20.65%. In addition, the F4 treatment (100%) gave a good acceptance of color (4.9), taste (6.1), aroma (6.0), and texture (5.1 kabosol made with the addition of 100% modified banana flour gave a significant effect on the resistance starch content, total fiber and acceptability test. Kabosol with the best treatment can be used as a preferred functional food so that it can be consumed daily, especially for weight control and people with diabetes mellitus.

Abstract

The WHO in 2018 in the world has recorded that there are 422 million people suffering from diabetes mellitus or an increase of 8.5% of the adult population and also according to estimates there are deaths before the age of 70 years with a total of about 2.2 million. especially in countries with low and middle economic status. It is estimated that this will continue to grow until the year 2035, the number will reach around 600 million people. Controlling blood sugar levels with non-pharmacological therapy is generally safer. Lowering blood sugar levels can be done with non-formacological efforts in the form of consuming boiled Moringa leaves and apple juice by people with type II diabetes mellitus. Flavonoid compounds in the form of terpenoids contained in Moringa leaves are so effective and safe for lowering blood sugar. Apples contain large amounts of fiber. The entry of glucose into the bloodstream through the digestion of carbohydrates can be slowed by soluble fiber. To control glucose in people with diabetes mellitus this is very useful. It takes 120 – 180 minutes to process the fiber in apples so that it can lower glucose levels at that time. The purpose of this study was to examine the differences in the effectiveness of Moringa leaf decoction with apple juice in patients with type II diabetes mellitus on their blood sugar levels. The nature of this research is quantitative, using pre experimental design method through one group pre-test post-test design. The results of the paired t-test on respondents who were given Moringa leaf boiled water showed a p value = 0.001 which means that the correlation of blood sugar levels in the administration of Moringa leaf stew both before and after there was a significant difference in patients with type II DM and the results of the paired t-test the respondents who were given apple juice showed a p value = 0.116 which means the correlation of blood sugar levels in the administration of apple juice both before and after in patients with type II DM there was no significant difference. The conclusion of this study showed that boiled water of Moringa leaves was more effective in lowering blood sugar levels in type II DM patients.

Abstract

Diarrhea in children under five is one of the health problems in Indonesia with 21 of outbreak with a total of 1,725 ​​cases and 34 deaths with a Case Fatality Rate (CFR) of 1.97%. Springs are one of the sources of drinking water that are widely used by the community with 1.8 billion people still using sources that are contaminated with faeces. Objective to analyze the bacteriological quality of drinking water sourced from springs and the actions of mothers with the incidence of diarrhea in children under five in Paspan Village, Glagah District, Banyuwangi. This type of research is a quantitative research with a cross sectional study design. The population in this study were 47 housewives who had toddlers in Paspan Village. This study consisted of 3 samples, namely 1 sample of clean water managed by community, 28 samples of respondent's drinking water and housewives who have toddlers using simple random sampling method. The result of study showed that 75% of the bacteriological quality of drinking water had met the requirements and 53.6% of the mother's actions were in the bad category. A total of 7.1% of children under five in Paspan Village experienced diarrhea. Bacteriological quality of drinking water sourced from springs (p = 0.056) and maternal actions (p = 0.040). There is no relationship between bacteriological quality and the incidence of diarrhea in children under fiveHowever, there is a relationship between maternal actions and the incidence of diarrhea in children under five in Paspan Village, Glagah District, Banyuwangi.

Abstract

According to data from the COVID-19 Acceleration Task Force on June 13, 2020, there was an increase in positive cases of COVID-19 by 1,014 people, which led to a total of 37,420 cases. Bus stations as a land transportation entrance route, is something that allows it to be the entrance of the corona virus from various regions, especially during the "New Normal" period. The purpose of this study is to find out an overview of the application of health protocols to mada "New Normal" at Simbuang Type A Station in Mamuju Regency. This study is an observational study with a descriptive approach. The research was measured through observations in the field using questionnaires and validated with a checklist based on the Circular letter of the Ministry of Transportation No. SE 11 of 2020 concerning guidelines and technical instructions for the implementation of land transportation during the adaptation period of new habits to prevent the spread of Corona Virus Disease 2019 (Covid-19). Results: research shows that health protocols during the "New Normal" period that qualify at Simbuang Type A Station Mamuju Regency are: availability of hand washing facilities, spraying buses with disinfectants, appeals for the use of masks, and measurement of passengers' body temperature, while those who do not qualify are: : bus passenger capacity, application of physical distancing in the bus and ownership of a passenger's health certificate. Mamuju Regency Simbuang Type A Station has not implemented health protocols properly.

Abstract

The nutritional status of under-five children in Indonesia remains low, including in North Maluku province. Based on the results of the 2021 SSGI, the prevalence of stunting among under-five children in this province is 27.5%. This figure is higher than the national prevalence of 24.4%. North Maluku has abundant potential for tuna fish that can be utilized in the development of local food that supports nutritional interventions for children. The recent study reported that as many as 86.7% of children aged 12 – 24 months consumed processed foods like nuggets, sausages, and meatballs. Most consumers (98.67%) also showed a high interest in consuming nuggets that contain higher protein and mineral content. The addition of moringa leaf vegetables and carrots to nuggets will increase the nutritional content of nuggets which can increase nutritional intake for children. This study was an experimental study that aimed to determine the shelf life of tuna fish nuggets substituted with moringa leaves and carrots using the Extended Storage Studies (SES) method. SES method was used to determine the shelf life of tuna fish nuggets substituted with moringa leaves and carrots by looking at the organoleptic quality which includes aroma, color and texture. Observations were made in February-March 2021 for 60 days at the Laboratory of Food Science, Poltekkes Ternate. Changes in quality began to occur on the 35th day of observation, namely the texture of the nuggets began to not be crunchy. While the observation of color and aroma did not change until the 60th day of observation. In conclusion, the shelf life of tuna fish nuggets substituted with Moringa leaves and carrots is up to 30 days.

Abstract

The high prevalence of hypertension still encourages research to find blood pressure-lowering drugs, especially those derived from natural ingredients. One of the plants that have been reported to have the potential to reduce blood pressure is the bilimbi (Averrhoa bilimbi L.). Observations of the antihypertensive activity of this plant have been carried out, both from the use of leaves and fruit. However, several existing studies have shown that the dose of using the leaves and fruit of bilimbi still varies with varying levels of effectiveness, so the effective dose of this plant utilization remains unknown. This study aims to see the efficacy of bilimbi in lowering blood pressure and determine the most effective dose for its use. The literature selection was carried out by searching the Google Scholar database, the Garba Rujukan Digital portal (Garuda), ScienceDirect, Pubmed, and Directory Open Access Journals (DOAJ) using predetermined keywords. Then, the identification and screening of articles based on duplication and inclusion criteria were carried out. The study results showed that the fruit had higher effectiveness in lowering blood pressure than the leaves. This literature study concluded that consuming 100 ml of bilimbi fruit juice regularly for 14 days may lower the blood pressure up to 34 mmHg.

Abstract

The Covid-19 pandemic has resulted in changes to integrated antenatal care services. Existing problems can be seen from the input including human resources, facilities and infrastructure, funding sources, policies and SOPs. Processes and outputs include coverage of pregnant women's visits, handling of complications in pregnancy. The purpose of this study was to analyze in depth the implementation of integrated ANC during the Covid-19 pandemic at the Kalasan Health Center. This study uses a qualitative method with a holistic case study approach (holistic single-case study). The number of informants in the study was 10 informants. The technique of taking informants is purposive sampling. Data collection is done by looking at the SOP for the Implementation of the Integrated ANC, visit reports, in-depth interviews online. The instrument in this study used semi-structured online interview guidelines. Data analysis used thematic analysis. The results of the analysis of the problems of implementing an integrated ANC during the Covid-19 pandemic found 3 themes, namely input problems, process problems, and output problems. The conclusions of this study are the limitations of human resources, infrastructure, sources of funds, changes in SOP policies, the fear of patients to check their pregnancies, restrictions on patients and service time, changes in services, limitations in handling pregnancy complications, decreased coverage of pregnant women visits.

Abstract

Community Health Center (Puskesmas) is the spearhead of health services in Indonesia that aims to provide health services evenly, integratedly, affordably and thoroughly. The use of health services during the COVID-19 pandemic makes people afraid to seek treatment so that there is a decrease in visits to health centers for treatment so that the utilization of health services becomes less optimal.to know the factors related to the utilization of health services in Puskesmas Kasihan 1 in the new normal era. This type of research is quantitative with cross sectional research design. The sample in this study was all outpatient units at Puskesmas Kasihan 1 Bantul Yogyakarta. Participants were recruited using accidental sampling techniques. The sample numbered 106 respondents. Data analysis used in this study is a multivariate analysis with logistic regression statistical tests.it was obtained that faktors related to the utilization of health services in the new normal era are age, gender, health insurance and disease history factors. The most related factor is the history of disease. A person who has a history of disease will routinely check themselves into the puskesmas kasihan 1 during the COVID-19 pandemic or during the adaptation of new habits (New Normal) while complying with health protocols. with a value of p = 0,000 (p<0,05) with an OR value of 55,692.
