Abstract

(Plectropomus leopardus) or grouper coral trout is one kind of commodities that have high economic value. As marine fisheries commodities are much in demand for large-scale farmers or household level will require broodstock who have qualified to produce quality eggs and a good seed. qualified to produce quality eggs and a good seed. The purpose of research is to gain knowledge in maintenance activities of the broodstock grouper coral trout on a concrete tank by comparing theory and application in the field. Maintenance engineering of coral trout grouper broodstock includes the preparation of concrete tanks, broodstock selection, water quality management, feeding, spawning and harvesting of eggs, and disease. Research in Balai Besar Penelitian dan Pengembangan Budidaya Laut (BBPPBL) Gondol. Penyabangan Village, Subdistrict Gerokgak, Buleleng, Bali. On 18th January – 18th February 2016. Methods of work used in this research is descriptive data retrieval methods include primary data and secondary data. Data retrieval is done by means of active participation, observation, interviews and literature study. Results of Field Work Practice is the broodstock of grouper coral trout are maintained as much 217 with an average weight of 512.9 kg and an average length of 56.1 cm. Maintenance of broodstock grouper coral trout performed in container maintenance the round-shaped sized 100 m3 with a depth of 3 m with inlet and outlet Water management is performed by using a system is running water that flowing water as much as 300% -400%, the quality of sea water showing the value of 34.9 ppt salinity, DO 6.0 ppm, pH 8, and the temperature of 29 ˚C. Feed given in the form trash fish as much as 7-10 kg a day. Grouper coral trout spawning is done naturally by the male and female parent ratio of 1: 2, which produce eggs an average 2,252,292 items. During maintenance activities parasites invade have been found. Parasites invade the broodstock of grouper coral trout is Benedenia sp., Cryptocaryon sp., And viral infections Viral Nervous Necrosis (VNN)

Abstract

Freezing is one of processing of fishery products intended to preserve food by inhibiting the growth of microorganisms, resist chemical reactions and enzyme activity. Program eligibility freezing base in the industry is needed to ensure food safety, namely sanitation standard operating procedures (Sanitation Standard Operating Procedures / SSOP) and the good food production (Good Manufacturing Practices / GMP). Good Manufacturing Practices (GMP) are the basic requirements that should be met by a company that wants to produce quality and safe food consistently. These requirements include the production requirements, locations, buildings and facilities, production equipment and employees. Research implementation goals are to know directly how the application of GMP, knowing the factors that affect the application of GMP, know and understand the problems or obstacles that arise in the implementation of GMP in the freezing squid (Loligo vulgaris). The research was carried out at PT. Starfood International, located in Kandang Semangkon village, District Paciran, Lamongan, East Java Province on 18th January to 18th February, 2016. The work method was implemented as the descriptive method with collecting data through observation, documentation, interview, and active participation. PT. Starfood International is a branch of PT. Kelola Mina Laut which is a national private company that is form of limited company engages in the processing of fishery products. This company has three operational activity units including surimi managing unit, frozen fish managing unit and fish meal managing unit. The implementation of GMP is done by assessing some aspects include plant location, the building, the final product, processing equipment, production materials, personal hygiene, process control processing, sanitation facilities, label, product description, storage, maintenance of treatment facilities and sanitation activities, laboratory, packaging and transportation.

Abstract

Online marketing training is given to the fishermen groups of Karang Baru and Fisheries Vocational School Nasyrul Ulum Aeng Dake covering about the theory of marketing concepts, use of Web media and social media and online marketing-based governance. Community service is expected to be able to provide the ability of the community to package products into attractive packaging and the community can use marketing online so as to expand the reach of marketing, namely reaching regional and national areas. With the community service, it is expected to increase the economy of the seaweed grass cultivation community in Aeng Dake Subdistrict Seaweed Village. Community service activities are carried out by various methods, namely theoretical and practical training and assistance in online marketing media management activities. and practices aimed at students of the Nasyul Ulum Aeng Dake Vocational School of Fisheries Products Processing. The training provided was in the form of introducing various kinds of interesting packaging forms. The training activities continued on the direct practice of product packaging as well as presentations from student students regarding packaged products. The activity aimed at the Karang Baru fishermen group is in the form of assistance in making online marketing media, namely web and social media.

Abstract

Seaweed is one of the sea commodities have high economic value, because of extensive utilization, in daily activity as well as in the industrial world, so it has a vast domestic market and abroad. Seaweed contains hidrocoloid compounds such as carrageenan, agar and alginate. It has the main product from Rhodophycae, such as Gracilaria,Gellidium. The purpose of Research is to determine the characteristics of chemical physics powdered agar fromGracilariasp. PT. Biocolloid Java, Surabaya. Activity Research will be implemented at PT. Java Biocolloid, Kembangan Sub-District, District Krembangan, Surabaya. This activity will be held on February 1 to February 26, 2016. The research methods used in Field Work Practice is descriptive method with data collection included primary data and secondary data. Data were collected by observation, interview, active participation, and literature. The of chemical physics powder to be conducted by the quality control, research and development PT. Java Biocolloid Surabaya include granulometri, turbidity, pH, gel strength, viscosity and water content. The value of granulometri powder that is 100% pass meshsize 60. The powder that has a turbidity value of 11.0 to 29.9 NTU, pH 6.4 to 6.8, the gel strength 800-1000 g / cm, viscosity 17-19 cP and moisture content 8- 11%. The quality of chemical physics powdered agar produced by PT. Java Biocolloid already meets the quality standards to be a good powder in accordance with the quality standards powdered agar by the consumer both nationally and internationally.

Abstract

This study aim was to determine the effect of washing and raw materials on frozen storage on the quality of surimi and kamaboko from raw material of tilapia (Oreochromis sp). There were three types of raw materials used, namely minced fish, surimi, and surimi with addition of sorbitol, with three washing treatments and four weeks frozen storage period observed every week. The method used consisted of measurements of pH, water content, bite test, and folding test. Then the results obtained for the best kamaboko tilapia (Oreochromis sp) were obtained from fillet raw materials compared to the raw material of Minced fish and raw materials of Minced Fish + Sorbitol, with a frequency of washing once and frozen storage for 3 weeks.
