Abstract

Fluctuating asymmetry of bilateral meristic characteristic is one of the simple methods that can be used to determine the stability of an individual fish development. This study aims to provide quantitative information about the level of asymmetry red tilapia (Oreochromis niloticus) in Genteng Fish Hatchery Center through bilateral meristic characteristic observation. The number of fish used in this study is 100 fish which have a measurement of 5-7 cm. Bilateral meristic characteristic observed is the number of soft pectoral fins, the number of soft pelvic fins, and the number of scales on the lateral line. The results show that the highest value of the fluctuating asymmetry magnitude (FAm) and fluctuating asymmetry number (FAn) are obtained at the number of scales on the lateral line those are 3.71 and 0.86. Furthermore, on soft pectoral fins, the FAm value obtained is 1.29 and the FAn value is 0.58. Meanwhile, the lowest FAm and FAn values obtained from the soft ventral fins which are 0.93 and 0.50. The overall FAm value is 5.93 and the overall FAn value is 1.94.

Abstract

Freezing is one of processing of fishery products intended to preserve food by inhibiting the growth of microorganisms, resist chemical reactions and enzyme activity. Program eligibility freezing base in the industry is needed to ensure food safety, namely sanitation standard operating procedures (Sanitation Standard Operating Procedures / SSOP) and the good food production (Good Manufacturing Practices / GMP). Good Manufacturing Practices (GMP) are the basic requirements that should be met by a company that wants to produce quality and safe food consistently. These requirements include the production requirements, locations, buildings and facilities, production equipment and employees. Research implementation goals are to know directly how the application of GMP, knowing the factors that affect the application of GMP, know and understand the problems or obstacles that arise in the implementation of GMP in the freezing squid (Loligo vulgaris). The research was carried out at PT. Starfood International, located in Kandang Semangkon village, District Paciran, Lamongan, East Java Province on 18th January to 18th February, 2016. The work method was implemented as the descriptive method with collecting data through observation, documentation, interview, and active participation. PT. Starfood International is a branch of PT. Kelola Mina Laut which is a national private company that is form of limited company engages in the processing of fishery products. This company has three operational activity units including surimi managing unit, frozen fish managing unit and fish meal managing unit. The implementation of GMP is done by assessing some aspects include plant location, the building, the final product, processing equipment, production materials, personal hygiene, process control processing, sanitation facilities, label, product description, storage, maintenance of treatment facilities and sanitation activities, laboratory, packaging and transportation.

Abstract

Green mussel (Perna viridis) is a fishery food that is often consumed by the community because the price is relatively affordable. This animal has the potential to be used because it has a large population, but one of the problems in Indonesian waters, especially Kenjeran Beach, is that it contains Pb metal. Consuming green mussels with Pb levels will interfere with body health, so it is necessary to take action to reduce the Pb metal content in green mussels, one of which is using citric acid. The purpose of this study was to determine the effect of soaking green mussel meat in citric acid with different concentrations on the reduction of Pb heavy metal levels. This research is a laboratory experimental with a Completely Randomized Design (CRD) consisting of 4 different treatments of immersion concentration in citric acid (0 , 0.21 , 0.25 and 0.29 M). The results showed that the immersion of green mussel meat in citric acid with concentrations of 0.21 , 0.25 and 0.29 M had a significant effect on the reduction of heavy metal lead (Pb) after immersion in citric acid at a concentration of 0.29 M is 0.1120 ppm, 0.25 M is 0.1167 ppm and 0.21 M is 0.1160 ppm. Soaking green mussels in citric acid with different concentrations did not affect the yield value of green mussel meat.

Abstract

Ikan komet (Carassius auratus auratus) merupakan ikan hias air tawar yang banyak dibudidayakan dan memiliki warna yang menarik. Produksi benih ikan komet belum bisa memenuhi tingkat permintaan pasar yang terus meningkat setiap tahunnya, sehingga perlu dilakukan peningkatan pada kegiatan pembenihan. Salah satu faktor yang memberikan pengaruh sangat besar terhadap tingginya kematian ikan pada kegiatan pembenihan adalah suhu. Suhu merupakan faktor lingkungan yang dapat mempengaruhi pertumbuhan rata-rata serta menentukan waktu penetasan serta berpengaruh langsung pada proses perkembangan embrio. Secara umum fase awal kehidupan ikan merupakan fase yang paling sensitif dan mudah menjadi stres dalam menerima pengaruh lingkungan. Tujuan penelitian ini yaitu untuk mengetahui pengaruh suhu terhadap embriogenesis telur ikan pelangi, waktu inkubasi telur ikan pelangi, dan suhu optimal untuk menghasilkan daya tetas maksimal telur ikan pelangi. Penelitian ini dilaksanakan pada bulan Juni-Juli 2015 di Unit Pengembangan Budidaya Air Tawar (UPTBAT) Punten, Batu, Jawa Timur. Metode yang digunakan yaitu metode eksperimental. Variabel yang diamati adalah perkembangan embrio dan daya tetas telur ikan komet. Hasil penelitian menunjukkan bahwa suhu berpengaruh terhadap waktu perubahan fase embriogenesis dan waktu inkubasi telur ikan komet. Semua perlakuan suhu (22,5-29,5°C) merupakan suhu optimal pemeliharaan telur ikan komet.

Abstract

Pesticides and heavy metal are the major contributor for environmental pollution and have been spread out widely in aquatic environments. Daphnia sp. is a zooplankton that mostly used to detect aquatic pollution. The aim of this research was to study the effect of exposuring different concentration of heavy metal (Pb and Cd) and pesticides (diazionin) to the sex ratio offspring of Daphnia sp. The experiment composed of three kind of treatments (Cd, Pb and diazinon), each consist of 5 treatments namely 25%, 50%, 75%, 100% and 0% as control, and 4 replications. The data was analyzed with Kruskal Walace. If there was any different in each treatment, then was analyzed with Duncan Double Gap Test and linear regression. The research showed that exposuring Cd, Pb and diazinon with different concentration to the Daphnia sp. during 96 hours could increase the percentage male offspring of Daphnia sp. Concentration of Pb, Cd and peticides gave positive correlation to the sex ratio offspring of Daphnia sp. Further research was needed to know the practical technology using sex ratio offspring of Daphnia sp. to detect the level of pollution.

Abstract

Avicennia marina is a plant that is commonly found in coastal areas. Avicennia marina fruit is known to have high carbohydrate and crude fiber content so that it has great potential as an alternative food ingredient that is able to meet the nutritional needs of the body. The purpose of the study was to of Avicennia marina fruit flour on the quality of crackers and its effect on the crude fiber content of crackers and to determine the best formulation for substitution of Avicennia marina fruit flour on crackers. The research uses experimental method with 5 different substitution treatments (0, 25, 30, 35 and 40%). Parameters observed were water content, ash content, protein content, crude fiber, hardness, organoleptic and yield content. The results showed that the best treatment was found in the substitution treatment of 25% Avicennia marina fruit flour with a moisture content, ash, protein, crude fiber, hardness of texture and yield are 3.18%, 2.56%, 6.75%, 3.39%, 42.18 N and 67.62%, respectively. The organoleptic results of the best treatment showed that organoleptic values included texture, taste, flavor and color are accepted by the panelists.

Abstract

In this PKM program, our partner is residents in Petemon, Surabaya, East Java Province. This community has generated the production of noodle and jelly candy from seaweed. Seaweed processing has a very broad market potential due to the increasing demand and use of seaweed processing products, whether used in the health, pharmaceutical or industrial fields. Development of seaweed with an industrial concept approach that starts from upstream, processing basic products into formulation products with a lot of derivative products, both food and non-food products. In food ingredients, seaweed can be formulated, among others, into ice cream, pudding, jelly candy or other foods and soft drinks Based on interviews and observations in the field, there are 2 main focuses of the problems currently faced by partners, namely: 1) lack of knowledge about seaweed and 2) product diversification of seaweed which have an added value. Some of the things planned by the PKM team are innovating seaweed to be noodle and jelly candy as well as providing training and mentoring for financial analysis, packaging and marketing. The purpose of this activity is to transfer knowledge of making product diversification of seaweed, develop the creativity of the partner, increase the noodle and jelly candy production and improve the welfare of the partner. This activity was realized with an approach in the form of making a sustainable cooperation program until the end of PKM, creating a family atmosphere between the two and understanding that the problems experienced were a shared problem so that they could be solved together according to the level of responsibility to achieve the expected benefits, namely increased yields, production and productivity and competitiveness, independence and welfare of the community.

Abstract

Kecamatan Lingsar, Kabupaten Lombok Barat, Provinsi Nusa Tenggara Barat merupakan sentra perikanan tawar terutama ikan Nila, Lele dan Mas. Desa Sigerongan dan Saribaye, merupakan sentra perikanan tawar yang cukup maju di Kabupaten Lombok Barat dan karena hal tersebut maka lokasi kegiatan Pengabdian kepada Masyarakat dilakukan di Kelompok Pembudidaya Telaga Biru yang berlokasi di Desa Sigerongan dan Padegirang di Desa Saribaye. Pada hari besar keagamaan, produksi ikan cenderung meningkat karena pembudidaya ikan menaikkan jumlah ikan yang dipelihara untuk memenuhi kebutuhan masyarakat. Peningkatan produksi ikan yang melebihi permintaan masyarakat menyebabkan harga ikan menjadi murah. Salah satu upaya untuk mengatasi masalah tersebut adalah dengan memanfaatkan sekaligus meningkatkan nilai jual produksi ikan Nila melalui diversifikasi pengolahan ikan Nila menjadi berbagai produk olahan yang mudah diproduksi dan diminati masyarakat sehingga meningkatkan pendapatan masyarakat di kedua Desa. Program Pengabdian kepada Masyarakat yang dijalankan melalui proses sosialisasi, pelatihan (workshop), pendampingan dan evaluasi kepada keluarga pembudidaya, yaitu istri dan anak pembudidaya sebagai sasaran antara, selain anggota Pemberdayaan Kesejahteraan Keluarga kedua desa tersebut. Pengujian organoleptik secara hedonik juga dilakukan untuk mengetahui tingkat kesukaan terhadap produk olahan yang telah diproduksi. Hasil kegiatan menunjukkan bahwa setelah dilakukan penyuluhan tingkat pengetahuan masyarakat terhadap produk olahan berbasis ikan Nila di dua Desa meningkat serta rata-rata nilai uji hedonik adalah menyukai produk nugget ikan Nila.

Abstract

Java. The quality of ebi fry products is largely determined by the quality management of the company, one of it is the determination and application of the Critical Control Point (CCP). The purpose of this study is to determine the determination of CCP and the problems that occur in the application of CCP in the production of ebi fry at PT. Jala Sembilan Semarang, Central Java. This Field Work Practice is carried out at PT. Jala Sembilan which is located at Jalan Tugu Industri IV No. 3, Randu Garut, Tugu District, Semarang City, Central Java on December 30, 2019 to January 23, 2020. The working method used is a descriptive method with data collection including primary data and secondary data. Data collection can be done by means of active participation, observation, interviews, and literature review. Determination of CCP is done after analyzing the hazards in each production process flow. Ebi fry production at PT. Jala Sembilan has 2 CCPs, namely on package receiving and metal detecting. The application of CCP on the receipt of ebi fry packaging has been carried out by checking allergen labels. The application of CCP in metal detecting has encountered problems, namely the metal detector machine that has interference and is not sensitive so that every time the product is passed the alarm is always on.

Abstract

Collagen is a connective tissue protein that is mostly produced from cattle and pigs. The use of cows and pigs as the manufacture of collagen causes a disease case, among others are bovine spongiform encephalopathy and transmissible spongiform disease. One of the alternative materials in the isolation of collagen is the use of fish skin. The purpose of this study was to determine the effect of the concentration of acetic acid solution on the characteristics of red snapper collagen produced by the hydroextraction method and to determine the optimum concentration of acetic acid solution in the red snapper skin collagen isolation process using the hydroextraction method. This study was experimental with Completely Randomized Design (CRD) consisting of 3 acetic acid treatment: (P1) acetic acid with concentration 0,1 M; (P2) 0,15 M and (P3) 0,2 M. This study showed that the use of different acetic acid had a significant effect (p<0.05) on the yield parameters that is 1.72 – 2.46%, water content 11.12 – 12.8%, and protein content 83.66 – 84.81% and had no significant effect on the pH. The best treatment was P3 which use the higher concentration of acetic acid that produced higher yield 2.46% and protein content of 84.81%. P3 with concentration of acetic acid 0,2 M can be used for found the best result of characterization of collagen.
