Abstract

Background: WHO has declared a global emergency due to the outbreak of COVID-19 since January 2020. Traditional markets are a category of places that are vulnerable to transmission because market conditions are public facilities and many people are active in these locations. The purpose of this study is to determine factors related to the implementation of health protocols - 19 on traders in Traditional Markets. Methods: This type of research is quantitative analytic with a cross sectional design, with the research subject being traditional market traders. The sampling technique applied was proportional random sampling. The research instruments used were observation sheets, questionnaire sheets and cameras. Bivariate data analysis using chi square statistical test. Result: The results showed that there was a relationship between the level of knowledge of the COVID-19 Health Protocol p-value 0.031, the attitude level of the COVID-19 Health Protocol p-value 0.037, the personal hygiene level of traders p-value 0.001 with compliance with the implementation of the COVID-19 Health Protocol. Conclusion: The need to complete sanitation facilities, especially hand washing facilities. More actively socializing health protocols, routine inspections related to sanitation, and conducting indirect counseling methods through social media and print media.

Abstract

Background: Toddler period experiences a process of rapid growth and increased nutritional needs, so mothers of toddlers are advised to visit Posyandu (Integrated Healthcare Center) to check the growth and development of toddlers, in order to anticipate if there are developmental disorders of toddlers that are not according to their age. North Rejowinangun Village experienced a decrease in the percentage of children under five compared to every year, in 2020 the achievement of toddlers was calculated to be 40.62% and in 2021 it was 22.53%. The purpose of this study was to determine the factors associated with the visit of mothers of children under five to the posyandu. Methods: This study used an analytic observational type with a cross sectional design. The number of samples was 91 respondents, the sampling technique used two stage cluster sampling and the data were analyzed by Chi Square test. Results: statistical tests showed that the variables were age (p = 0.096), education level (p = 0.0001), occupation (p = 0.041), knowledge (p = 0.0001), distance traveled (p = 0.0001), family support (p = 0.0001) and the role of cadres (p = 0.0001). Conclusion: there is a relationship between education level, level of knowledge, occupation, distance traveled, family support and the role of cadres with maternal visits to posyandu. There is no relationship between age and mother's visit to posyandu.

Abstract

Background: The Covid-19 pandemic in Indonesia is a health problem that has not yet ended. Covid-19 cases in Indonesia on 31 May 2022 were 6.054.973 cases. Indonesia ministry of Health informed that SARS-CoV-2 continues to mutate to form new variants. Therefore, efforts are needed to prevent the transmission of Covid-19 through the implementation of the Covid-19 health protocol. The purpose of this studi was to determine the factors related to community adherence in implementing the Covid-19 health protocol in the Karangsari Healthcare Center, Cirebon Regency. Method: This type of research uses an analytical survey with a cross sectional design. The research sampel is 99 respondents, with cluster sampling technique. The instrument used a questionnaire. Data were analyzed by chi square test and logostic regression. Results: The result show that knowledge (P=0,009, RP=1,470) and attitude (P=0,003, RP=1,564) are related to community adherence in implementing the Covid-19 health protocol in the Karangsari Healthcare Center, Cirebon Regency. Conclusion: There is a significant related between knowledge and attitude with adherence in implementing the Covid-19 health protocol. Attitude is the factors that most influence the adherence in implementing the Covid-19 health protocol in the Karangsari Healthcare Center, Cirebon Regency.

Abstract

Background: The prevalence of underweight adolescents according to Riskesdas 2018 is 16.8%, which means that it has not reached the target set by WHO, it is said to be normal if the prevalence is below 10%. The factor that causes the high prevalence of underweight in adolescents is an inappropriate diet. In adolescence, snack foods have a big contribution to the total daily caloric intake. This study aims to develop a snack bar product formula as a practical snack for energy content, proximate, and organoleptic quality. This study aims to develop a snack bar product formula as a practical snack for energy content, proximate, and organoleptic quality. Methods: The experimental research design with Completely Randomized Design (CRD) was carried out in three stages, they are (1) making taro flour, mung bean flour, and cinnamon powder, and (2) making snack bars with a ratio of taro flour: mung bean flour 75%:25%(F1), 65%:35%(F2), 55%:45%(F3), cinnamon powder for the three formulations are 1%, (3) snack bar testing consists of nutritional, energy, and organoleptic content tests. The data were analyzed descriptively for nutrient and energy content and the Kruskal Wallis test followed by the Mann-Whitney test for organoleptic analysis. Results: The results of the highest energy content showed an average of 526.36 kcal/100 g, carbohydrates 58.775 g, fat 36.04 g, and protein 7.825 g. The result of the overall organoleptic test that the panelists most favored was F3 (55% taro flour: 45% mung bean flour). Conclusion: There were differences in the calorie, carbohydrate, protein, and fat content of the three formulations, and the overall organoleptic test results were favored by the panelists.

Abstract

Background: In research on the long-term stability and shelf life of yoghurt, it was found that sweet potatoes were the only starch that performed well at three storage times, the sensory viscosity was significantly higher than the control, and samples containing starch were more accepted. The purpose of this study was to determine the effect of shelf life on the physical and microbiological characteristics of yellow sweet potato synbiotic yogurt (Ipomoea batatas L). Methods: Quantitative experimental research with RAL research design factorial pattern 3, with a shelf life difference consisting of 3 levels, duplo repetition. The free variables are the shelf life of yellow sweet potato yoghurt for 0 days, 7 days, and 14 days, and the bound variables are physical characteristics (pH content, viscosity, TAT, TPT) and microbiology (total BAL). Results: Yellow sweet potato synbiotic yoghurt with all three shelf life meets the standards, namely in TAT, TPT and Total BAL and does not meet the standards at pH and viscosity because the pH is too low and the viscosity is too thick. Conclusion: Yoghurt with a shelf life of 14 days still meets the standards and can be consumed.
