Abstract

Pertumbuhan industri café di Indonesia yang melebihi 10.000 gerai di tahun 2023 menuntut efisiensi pengelolaan bisnis. Café The Garrison menghadapi tantangan prediksi penjualan akibat fluktuasi mingguan signifikan. Penelitian ini bertujuan menerapkan metode ARIMA untuk peramalan bisnis guna mengoptimalkan inventaris dan pengambilan keputusan. Metodologi menggunakan kerangka CRISP-DM dengan data penjualan 8 produk terlaris selama 63 minggu. Proses analisis meliputi dekomposisi STL, uji stasioneritas Augmented Dickey-Fuller, serta identifikasi model melalui plot ACF/PACF dan kriteria AIC. Evaluasi akurasi menggunakan MAPE dan RMSE. Hasil menunjukkan 7 dari 8 produk memiliki MAPE <30% (sesuai standar F&B Kolassa, 2008), seperti Beef Rice Bowl (ARIMA(1,0,2), MAPE 18,72%) dan Chicken Rice Bowl (ARIMA(2,0,0), MAPE 21,34%). Produk Thomas Grace mencapai MAPE terendah 8,74% dengan ARIMA(0,0,0). Namun, Spicy Wings menunjukkan MAPE tertinggi (45,45%), mengindikasikan keterbatasan ARIMA pada produk berfluktuasi tinggi. Penelitian membuktikan efektivitas ARIMA untuk peramalan penjualan café dengan pola stabil, sekaligus merekomendasikan pendekatan alternatif untuk produk dengan variasi acak. Temuan ini dapat menjadi acuan pengelolaan inventaris berbasis data dan mitigasi risiko bisnis di sektor F&B.
