Abstract

Background: The prevalence of diabetes is increasing, one of the pillars of intervention is the provision of high-fiber or complex carbohydrates food. Sorghum as local food has the potential to manufacture as cookies diabetes because it contains fiber and low glycemic index. Foods with a low glycemic index help to prevent against high blood glucose fluctuation. Levels of resistant starch can be improved with the addition of parboiled red beans fluor. Parboiled process aims to improve the digestibility and resistant starch level of red beans. Objective: Determine parboiled red beans fluor % addition which still preferred by consumer panelists, and then determine the glycemic index of cookies sorghum with the addition of selected parboiled red beans fluor. Methods: Experimental study, the first stage was organoleptic test with randomized block design. 6 treatments of parboiled red bean flour and three replications. The addition consists of 0, 10, 20, 30, 40, and 50%. The second stage was the determination of the glycemic index. The subject had to fasting for 10 hours, consumed white bread, and then measured the glycemic response at 0, 30, 60, 90, 120 minute. Four days later the same step repeated with cookies sorghum as food had to consumed. Glycemic index values determined by comparing the inceremental area under curve of cookies sorghum with the incremental area under curve of white bread. Results: The addition of parboiled red bean flour preference is 30%. Cookies sorgum glycemic index was 48.5Conclusion: Cookies sorghum can be used as a snack food for healthy people because it has a low glycemic index

Abstract

Background: Cardiovascular disease occurred by many factors, one of them is because of consuming high saturated fat intake from fried food. Previous studies have shown that there are inconsistent results from the research related to the correlation between fried food intake and cardiovascular disease. This literature study is important to be done to explain the problem of different results for each previous study. Objective: To examine the correlation between fried food intake and cardiovascular disease from various previous studies also to analyze the correlation between fried food intake people with polymorphisms of ALDH2 and ABCA1 genes and cardiovascular disease occurrence. Methods: Exploring literature material was done by Pubmed and Science Direct databases. Article research methods were sought by observational studies (cross-sectional, case-control, and cohort). Eight articles were selected based on the inclusion criteria that have been determined. Results: Fried food intake is associated with cardiovascular diseases such as coronary heart disease, ischemic heart disease, and heart failure. However, the EPIC-Spanish cohort study shows that fried food intake is not associated with cardiovascular disease. People with polymorphisms carrier in the ALDH2 gene rs671 genotypes A/A and A/G has a higher risk of increase CHD compared to a person who is a GG genotype carrier. People with polymorphism carrier in the ABCA1 gene rs4149339 genotype CC also has a higher risk of developing CHD compared with people who carry a TT genotype. Conclusion: Fried food intake has a positive correlation with the risk of cardiovascular disease in adulthood and the elderly. Fried food intake with people who have a certain gene variations is associated with cardiovascular disease occurrence.

Abstract

Background :Stunting is called a cross-generation nutritional problem caused by multifactors including genetic factors (maternal height). Another factor causing stunting is lack of nutrition. ASI fulfills all of the baby's nutritional needs, so breastfeeding status also affects the incidence of stunting. Objective : to determine the relationship of exclusive breastfeeding and maternal height with the incidence of stunting in children aged 6-36 months in the UPTD of the Ulee Kareng Health Center in Banda Aceh. Methods : This research is descriptive analytical research with cross sectional design with a quantitative approach. It was held on May-June 2019. The population of this study was all children aged 6-36 months in the UPTD of the Health Center Ulee Kareng Banda Aceh. The sample size was 81 children aged 6-36 months. The sampling technique in this study was accidental sampling. The instrument used was a questionnaire to determine toddler identity and the identity of the respondent. Measurement of height using microtoice, and body length was measured using an infrantometer Analysis of data using the chi square test with a 0.05 degree of confidence.Result : Based on the results of the study, children who received exclusive breastfeeding were 51.9%. Short mother 58%. Normal child 51.9%. There is a relationship between exclusive breastfeeding and maternal height with the incidence of stunting in children aged 6-36 months. With p-value 0.05. Namely exclusive breastfeeding with the incidence of stunting in children (p-value = 0.011). Maternal height with incidence of stunting in children (p-value = 0.028).Conclusion : Exclusive breastfeeding and maternal height have a relationship with the incidence of stunting in children aged 6-36 months in the UPTD of the Health Center Ulee Kareng Banda Aceh. So it is expected that mothers give exclusive breastfeeding for babies as an effort to prevent stunting.
