Abstract

Tepung terigu bagi masyarakat Indonesia telah menjadi komoditas pangan kedua setelah beras, sehingga kebutuhan di masa mendatang akan semakin meningkat. Untuk memastikan produk tepung terigu di pasar memenuhi kualitas tepung terigu sebagai bahan makanan, pemerintah melalui Kementerian Perindustrian telah mengeluarkan peraturan Nomor 49/M-IND/PER/7/2008, tentang Standar Nasional Indonesia (SNI 01-3751-2006) tepung terigu sebagai bahan makanan secara wajib. Dengan adanya revisi SNI 01-3751-2006 menjadi SNI 3751-2009, maka Menteri Perindustrian telah mengeluarkan peraturan Nomor 35/M-IND/PER/3/2011, tentang pemberlakuan Standar Nasional Indonesia (SNI 3751-2009) tepung terigu sebagai bahan makanan sebagai SNI wajib, yang mulai berlaku pada tanggal 22 Maret 2012. Studi ini dilakukan, untuk mengevaluasi dan melihat pelaksanaan peraturan standar tepung terigu. Hasil studi menunjukkan bahwa 93,99% contoh dari 366 contoh telah memenuhi syarat SNI 01-3751-2006 dan 95,85% dari 217 contoh telah memenuhi syarat SNI 3751-2009.
