Abstract

This paper describes application of fuzzy logic for predicting the competitiveness ofagroindustry of carrageenan and to develop strategy for enhancing it. Fuzzy expert system isused to predict the competitiveness using sustainable competitive advantage perspective withfour inputs, such as production amount, a place to compete, competitor, and customer service.Knowledge base management system is constructed using rule based production type, whereasinference mechanism is developed using Mamdani’s inference system. Matlab’s Fuzzy ToolboxVer 6.5 is used to design system implementation. Scenarios is constructed to improve thestrategy based on outputs of competitiveness using fuzzy analytical hierarchy process

Abstract

Knowledge Management (KM) and supply chain is a new approach used by many companies to create value, increase organizational effectivity and productivity, and competitiveness. However, this concept is still rarely used in agroindustry. The integration of KM and supply chain is very important. A supply chain which applies knowledge managemen system in all the chains will get the final value larger than the total values of all chains, and thus improve competitiveness f the product. The application of KM is initiated by collecting information from supply chain system which were then analysed and shared with all of the components of all chains to support decision making process. A key of success in the implementation of KM is knowledge sharing among components within the system. Another important factor is leadership to support the implementation of KM and colaboration with other parties

Abstract

The objective of the study was to learn the effect of lime duration and storage durationon quality of salted egg. The research was a factorial experiment (2x4) using Randomized BlockDesign with three replication. The first factor was preservation of two levels, i.e. : withoutsoaking in lime solution (P0) and with soaking in lime solution (P1). The second factor wasstorage duration, i.e ; 0 (L1), 12 (L2), 24 (L3), and 36 (L4) days. The variable measured were themicrobial load, protein content and organoleptic properties, i.e : the colour, flavor, taste andtexture of salted egg. Data were subjected to analysis of variance followed by Duncan MultipleRange Test (DMRT). The conclusion was that the interaction between soaking in lime solutionand storage duration had no different effect on protein content, microbial load, flavour and tastebut it had different effect on texture and colour of salted egg. The soaking in lime solution gavea lower result of microbial load i.e : 6,55x107 cfu/g but the organoleptic quality on texture,colour and flavour of salted egg gave a lower degree of preference score by panelist. It issuggested to keep salted egg preserved with lime solution at room temperature not more than 24days to produce good quality salted egg base on protein content, microbial load, flavor and taste.

Abstract

The organization as a pool of resources, capabilities and competencies needed togenerate physical products or intangible services which create the competitive advantage. It isdeveloped by effective management of technical aspects and by learning aspects of theorganization, and also the influence of an effective networking. How these two factors work toestablish value of the organization then effect the degree of competitiveness, is influenced byhow much the assets owned by an organization. This value is categorized into tangible andintangible assets. Development of coconut-based products shows a meaningful opportunity inthis regard. On the other hand, changes in the global environment have brought changes in thebehavior of consumers and competition conditions. Review of the role, coconut commoditiesprovides a great role to the economy nationally. Indonesia is a country with the largest area ofcoconut production in the world, followed by The Fillippines and India. Exports of coconutproducts from Indonesia tended to increase. The size of the role and potential of coconut wasnot followed by the performance of the coconut industry. This is shown by the problemsassociated with value-added products, linkages, transfer the risks and benefits, the contributionfor the development of rural agro-industry, export value of products, industrial competitivenessin medium and small agro-industry in the global market and information flow. Optimizing thevalue of intangible assets in the system of agro-industry can be improved through theimplementation of Knowledge Management occurred through developing external structure,internal structure and individual competency. Application of Knowledge Management refers tothe model of two dimensions, namely the process of knowledge creation and innovation, andelements that enable or influence the activities of knowledge creation. This model isimplemented by using Knowledge Management Roadmap which consists of 10 steps in 4phases. Through the implementation of Knowledge Management, coconut agroindustry isexpected to become the business units that have optimal value capable of performingcompetitiveness. Finally, it will satisfy the consumers through on time delivery product, createthe customer loyalty which in turn increase the sales growth and gain the result in financialaspects in earning growth

Abstract

White sugar is an important commodity Indonesia. Sugar’s price fluctuates due to itsavailability. The availability is depend on the season of sugar crop. Government has to controlits price to fullfill national price. However, previous experience shows that scarcity of productavailability and fluctuated of price due to unbalanced supply and demand quantity. This paperproposed a model to control price of white sugar for case of one commodity and multi region.One time horizon is divided into four periods: (i) beginning of harvesting period, (ii) end ofharvesting period, (iii) beginning of planting period, and (iv) end of planting period. There aretwo type of region considered (i) deficit region and (ii) surplus region. A price band isdetermined to define maximum and minimum price of white sugar. The government has twopolicy options to control the price of white sugar (i) price support program, and (ii) pricestabilization program. This problem is modeled as mathematical programming problem withobjective function is to maximize total benefit of producer, consumer, and government.Numerical example is provided to illustrate model mechanism for price of white sugar in bothregion.

Abstract

The importance of food security in national development is an important issue amongall agrees that food security becomes a priority in national development. Distribution systemthat is effective and efficient as the prerequisite to ensure that all households can obtain food inquantity and quality sufficient over time, with reasonable prices. A difference of foodproduction capability between regions and between seasons requires accuracy in managing thedistribution system, so that food is available at all times throughout the region. Study on theanalysis of the stock in the food distribution system aimed at supporting food security system toget a description and identification of food stock of factors that affect the stock in the fooddistribution system. Ishikawa diagram, why-why analysis is used to identify, analyze and solveproblems. This diagram places the problems solved on the right, i.e. the fish head. Factorsidentified as a problem category are placed above and below the framework of the fish whichare connected with arrows. Discussion about the analysis results of the stock in the fooddistribution system in supporting food security comes to a conclusion: Stock food, especiallyrice comes from domestic production and the import of food reserves and the reserves comefrom the government and the community; factors that affect the stock in the food distributionsystem includes production facilities and distribution infrastructure, the condition of geography,logistics management and government regulations

Abstract

The objective of this research is to determine the influential proportion of sweet potato Subgrade frozen usage as the substitution material toward the production of an extract product snack by using corn grits and rice. The parameters examined were organoleptic characteristic and proper analysis of financial. The organoleptic analysis comprises taste, crispiness, appearance, color, and aroma. The chemical analysis includes sucrose, water, and essence, as well as protein content. The result of this research shows that organoleptic testing toward the taste of an extract product snack by using Beni azzuma sweet potato subgrade indicates that the combination treatments give a positive influence toward organoleptic characteristics of the product. An extract product of snack product from Beni azzuma sweet potato Subgrade as the substitution material with 95% rice formula and 5% Beni azzuma sweet potato Subgrade is chosen as the best product for having the highest weight or quality, 0.970. Proper analysis from the snack processing is shown by NPV score, Rp. 2.,016,418,748 (bigger than zero), the IRR score is 50.00% (bigger than deposit interest, 12.56%). The investment expense needed for constructing the unit of an extract product snack processing with Beni azzuma sweet potato Subgrade as the substitution material is Rp. 330,978,230. The investment will be back after 3 years 5 months, and every year the project can give the profit of 50% from the investment expense.

Abstract

This research aimed at identifying the wastes of plywood production in PT Sumber MasIndah Plywood. Results were then utilized to determine methods in reducing wastes. Theidentification of waste was carried out using lean manufacturing approach. The data werecollected from manufacturer records, study to determine processing time, as well as interviewand quisioners which were distributed to workers in each department. Big picture mapping andvalue stream mapping tools (VALSAT) were then utilized to process the data. Results ofanalyses using big picture mapping showed that total production lead time was 438,8 minutes,with 235,97 minutes of them were value added activities; and 27 days of total information leadtime. Workshop waste analyses resulted in the highest waste generated during plywoodproduction process. Those were 133 waiting time (delay), 113 defect and 78 excessivetransportation. Further analyses using VALSAT showed three methods to identify the data inmore detail, namely process activity mapping (PAM), supply chain response matrix (SCRM)and quality filter mapping (QFM). Results from PAM method revealed 125 activities duringproduction, consist 62 value added activities, 33 necessary but non value added activities and 30non value added activities. While results from SCRM showed the average 22,63 days of totalorder fulfillment process comprised of 4,13 days of total physical stock and 18,5 days of totallead time. QFM result showed ratio of scrap defect reject 0,4% and ratio of scrap defect UTY3,46%. In general waste in plywood production at PT Sumber Mas Indah Plywood wasgenerated from worker, material, machinery, methods and environment. One of the ways toimprove it is by applying pull system (Kanban)

Abstract

Every company wishes to provide the best possible service to their customers bydelivering their products on time, for which quality and production lead time are the key factorsthat need continuous improvements by way of adopting the right internal strategy. This researchapplies the concept of lean manufacturing to identity wastes along the value stream to find outnon added value activities. In the initial stage, Big Picture Mapping is used to describe thewhole stream entirely, than Process Activity Mapping is used to find value added, non valueadded and necessary-but-non-value added activities, whilst Quality Filter Mapping is used tofind the defects of the quality of defect type. In the last stage, Total Product Maintenance(TPM) is applied to minimize defects by means of Overall Equipment Effectiveness (OEE). TheOEE Sensitivity analysis is applied to the operating time, cycle time and defects to find out themost influential factor for the improvement of OEE. The result of this research has identifiedcycle time as the influential factor that affects the OEE value. The 10% decrease in cycle timewill improve OEE by 10,20%
