Abstract

Ina sua is a traditional salted fish originated from Centre Molluca (Teon, Nila, Serua) in which is processed by fermentation during a certain time. The research on the compotition of nutrion as well as amino acid of this product is still rare done. There for the current research is to analyze the compotition of N-protein and amino acid of ina sua during fermentation process. The results show that ina sua has 16 types of amino acids consisting of 9 amino acids esential and the rest were 7 amino acids non esential. The highest content of amino acids were glutamate acids (3,384%) and the lowest one was histidin (0,527%), while the content of N-protein were ecresed during fermentation process up to 12 weeks.

Abstract

The objective of this study were to identify carotenoid, phenolic contents, and to determine the free radical scavenging activiy, and active oxygen species on the skin, flesh, flakes and seeds of pumpkin.Active oxygen compound quenching effects was conducted using linoleic acid as substrate containing erythrosine as a sensitizer and exposed under continuous illumination (400 lux) with the fluorescent light for up to 15 hours. The results showed that all of the pumpkin parts containing beta-carotene and phenolic. All parts of the fruit had a free radical scavenging activity and activity oxygen species.Scavenging free radical activity of EET-Skin 78.85%, EET-Meat 62.16%, EET-tuft 74.74% and 78.28% EET-seed respectively were observed in this study. In the measurement of oxygen singlet activity stabilizer in the photooxidation of linoleic acid system for 15 hours, the amount of extract concentration significantly contribute to reduce the oxidation of linoleic fatty acid. The extract seeds from pumpkin was the most strongly inhibit the oxidation of linoleic fatty acid in the photooxidation. It can be concluded that pumpkin seeds extract had the most strongest free radical scavenging activity and active oxygen species.

Abstract

Diarrhea is the main reason of malnutrition, and furthemore inhibits infant growth. Malnutrition causes antibody declining on infant. In many cases, non-lactose formula and low lactose formula could accelerate diarrhea recovery, beside soy based formula and hydrolized protein. The objetives of this research were to compare the increasing weight then to determine and compare nutritional status on child by Z-score index based on age (Weight/Age) between non lactose formula group and low lactose formula group on diarrhea child at the age of 6-24 months. This research was using Quasi Eksperiment method, Pre and prost-test Control group desing.The results showed that after received non lactose formula, the average of patient weight became 9.30 ± 2.0 kg. While in control group, the average of patient weight was 7.60 ± 0.99 kg after treatment. The number of malnutrition patient on treatment group were 7 persons from 15 persons became no malnutrition patient, and on control group were 3 persons from 15 persons became 2 patients. It can be concluded that the increasing of child weight and nutritional status on non lactose formula group was better compared to low lactose formula group. Based on the results on the results of this research it can be recommended that diarrhrea child should be given non lactose formula beside breastmilk.

Abstract

A research on processing of wine nutmeg meat was done using  some yeast as a starter and the fermentation was held at room temperature for 14 days. The aim of current research were to analyze total sugar, total acid, and pH during fermentation process. Research methods using completely randomized design with treatment on the type (Saccharomyces cerevisiae, Amylomyces rouxii, and Rhizopus oligosporus) with concentrations (4, 6, 8 grams). The results show that the best wine meat nutmeg obtained by using Rhizopus oligosporus treatment at a concentration of 4 grams with the following characteristics of total sugar 1.15% total acid 0.19% and pH 3.28. Further more the organoleptic taste and odohedonic quality value were like and rather likes to color on the concentration of 8 grams.

Abstract

Canary is original plants Indonesia which growing many in Indonesia area part of east, like North Sulawesi, Maluku, Seram and Alor island. This study aims to determine the total conten of phenolic compounds and antioxidant activity of extracts of canary husk of some species of Canarium vulgare Sp. solvent is hexane, ethanol, ethyl acetate and acetone. Results showed that the canary husk extract of Canarium vulgare Sp. species has a total phenolic content and antioxidant activity are great. Highest total phenolic content of the extract produced by solvent acetone was 171.0 mg/kg, followed by extracts of ethyl acetate, ethanol, and hexane has a total phenolic content of consecutive 111,17 mgkg, 99,67 mg/kg, and 67,17 mg/kg and the highest antioxidant activity in the solvent ethyl acetate extract of 93.66% followed by 92.97% acetone extract, ethanol amounted to 89.92% and by 14.45% hexane. Result of this research indicate that canary husk acetone extract have fenolik content and highest antioxidant.

Abstract

The study of fish nugget snike (Awaous melanocephalus) with the substitution of tempe has beendone. Four formulations of nike and tempe ratio were observe, i.eformula A1 (100% nike: 0% tempe) A2(75% nike: 25% tempe), A3(50% of nike: 50% tempe), and A4 (25% of nike: 75% tempe). Organoleptic assesment was done to obtain the most preferred formula. Assesment on the effect of tempe to the shelf life of nugget, where also conducted. Quality parameter estimated were TPC, TBA, TVBN, and pH. Data were analyzed using a completely randomized design, faktorial 4x3 dan 3x ulangan, treatments was test educing Annovawith 0.05, for significant effect testedusing Duncan's multiple rangetest (DMRT). The result showed that the most preferred formulation by the panel ists wasthe formula A2. The longest shelf life was the formula A4, which up to 20 days of storage. TBA value also shown the same results as of TPC, the lowest TBA(0057 mg malonaldehid/100 g samples) until 20 days of storage

Abstract

The research data was obtained from direct observations and interviews with the manager of the depots, while the levels of some heavy metals (Pb, Cd, Hg, and As) in drinking water sources and recharge derived from the results of laboratory examination and presented in the form of table, graphs and compared with standard appropriate quality standard regulations (Permenkes No.492/Menkes/Per/IV/2010 on Drinking Water quality Requirements and Minister Regulation. 416/Menkes/per/IX/1990 of these Terms and Water quality Monitoring). Metal content of Pb, Cd and Hg in both raw water sources and refilled drinking water did not exceed the set standard quality, while the metal content of As in the water source did not exceed the standards for quality, but there was one depot of refill drinking water which obtained its water from water source had exceeded the drinking water quality standards in excess of 84% of the standard.

Abstract

Maternal mortalityin developing countries according to the WHO (World Health Organisation) 40% associated with anemia inpregnancy. Maternel Mortality Rate (MMR) is one indicator ofthe success of health careina country, It is associated with the occurrence of anemia include sufficient levels of vitamin C andiron sufficiency level. The purposeof this study to determine the relationship of the consumption of protein, B vitamins, filicacidand iron with the incidence of anemia in pregrant women in the second and third trimester Amurang Health Center East. Types of analytic studies is the cross sectional study design. The experiment was conductedat the health centerwith a sample of East Amurang Pregnant women with gestational age Trimester II and III. The research instrument used in this study is the questioner Semi Quantitative Food Frequency (FFQ) and blood laboratory test method Cyanmethemoglobin. Statistical analysis used the chi squeare test. Results of data analysis of protein consumption relationship with the incidence of anemia using Chi-Square test vaues obtained ρ=0.000, using the error rate α=0.05 so the value of ρ=0.000>0.05, the relationship of vitamin C with anemia with a value of ρ=0.000<0.05, the relationship with the consumption of folic acid anemia with ρ value=0.000<0, the relationship with the consumption of iron anemia with ρ value=0.000<0.05 anemia.
