Abstract

The research of cookies of bamboo shoots was as functional food carried out to increase the utilization of bamboo shoots that were very potential in West Kalimantan as functional food. The bamboo soot cookies was made from dry processing of luxuriant bamboo shoots to mamboo shoots flour, and the production of bamboo shoots cookies. Results of analysis showed luxuriant bamboo shoots contained thewater 94.4 %, ash 0.28 %, protein 1.6 % fat 4.78%, carbohydrate 0.637 %, rough fibre 2.03%, vitamin C 0,003 %, phosphor 0.120 %, calcium 114 mg/kg, and sodium 27,4 mg/kg. Dry bamboo shoots were produced through the process bleaching with the solution to salt 3% and produced bamboo shoots flour with results efficiency 6,25 % and had the content of the level of water 5,66%, the level of ash 6,44 %, protein 20.9 %, fat 3.64 %, the carbohydrate 17.9 %, rough fibre 3.97%, and vitamin C 0.0021 %. Best bamboo shoots cookies that is to the C treatment variable that was produced from the mixture of bamboo shoots flour: wheat flour: maize flour = 20:60:20. Results of the analysis were based on the standard of the quality of the biscuit (SNI-0-2973-1992) showed that the product that was produced contained the water 4,14%, ash 3.22%, protein 8.95%, fat 16.5%, carbohydrate 37,01%, rough fibre 0.379%, calorie 332,34 cal, and the Executive Board’s metal < 0,040 mg/kg, Cu 1,92 mg/kg, Hg<0,004 mg/kg, as well as Zn 27,1 mg/kg. Bamboo shoots cookies that were produced were categorised as functional food that could help the process of the digestion so as to be estimated could reduce the risk of colon cancer.

Abstract

The wastewater effluent of Ngabang Palm Oil Industry in one of several industrial waste, that contains high organic substances. One of them is nitrogen (N-total). Waste water treatment of palm oil industry used ponding system today, and one of solution to treat that wastewater effluent is using aquatic weeds as biofilter action. Water hyacinth (Eichornia crassipes (Mart.) Solms) and water fern (Salvinia molesta D.S.Mitchell) known as aquatic weeds that capable to decrease in a large amount the organic and inorganic substances. The aim of this research is to study the capacity of water hyacinth and water fern in decreasing nitrogen compounds (N-total, ammonia, nitrate, nitrite, N-organic) in wastewater effluent palm oil industry based in variation of treatment and difference of exposure time. This research was carried out in green house and Biology Laboratory of Biology Programme Study, Mathematic and Science Faculty of Tanjungpura University and Testing Laboratory of Institute for Industrial Research And Standardization Pontianak, from July 1st – October 31th, 2006. This experiment was designed in Completely Randomized Factorial Design with three treatments and three replication times. The collected data analized by Annava Test and least Significance Difference (LSD) test. The result show that the treatment with combination of water hyacinth and water fern were able to decrease the N-total (92,64%); ammonia (96,47%); and nitrite (90,14%).

Abstract

The main componenet of lemongrass oil that is sitronellal and rhodinol (sitronellol and geraniol) was isolated by using vacuum of distillation fraksinasi. Variably the research included the variable continue to, that is the sample weight (300 mL) and process time (4 hours); and the variable changed, that is the pressure (80, 95 and 100 mbar) and the temperature (145, 150, and 160o C). Results of the analysis of the ras material showed that lemongrass oil that came from Kota Panjang, Gayo Lues, Province Aceh had the content sitronellal that was high that is of 51.067% and rhodinol of 30.761%. The characteristics from lemongrass oil was yellow faded, the ray index 1.466, the specific gravity 0.889 solubility in alcohol 1:1 clear and the round of optics 19.15. The distillation sitronellal, 28.87% rhodinol (22.60% geraniol and 6.27% sitronellol) and 11% other component. The condition for the process that was good enough in the isolation sitronellol used distillation vacuum of fraksinasi with the temperature and the pressure that were low that is 145o C and 80 mbar. The condition for the process that was quite good in the isolation rhodinol was use to use vacuum of distillation fraksinasi in the temperature and the pressure that were not too high and or low that is 150o C and 95 mbar.

Abstract

The research on The Application of Effervescent Technology of Aloe vera as Functional Drink has been done. The objectives were to obtain effrvescent tablet prefered by the panelist as well as nutritious as aloe vera-based functional food also to obtain appropriate formula resulting good quality of effervescent tablet. Formulation of effervescent tablet with treatments of maltodextrin concentration were done. The result showed that the best formulas of aloe vera effervescent tablet were aloe vera concentration 33%, maltodextrin 7,5%, acid-karbonat total 43%, sorbitol 5%, sukralose 3 % and Polyethylenglicol 8000 %.

Abstract

The goal of this research is debittering of orange juices with enzimatic process. Naringinase enzim is produced with Penicillium decumbens. The research metode is complete random design with two variabel. The first variabel is concentration of enzim : 0,0; 200; 400 ppm and the second variabel is time of incubation : 1, 2 and 3 hours. The product of this research is tested ascorbic acid, Total Plate Count and organoleptic test. The result showed concentration of naringinase enzim 400 ppm and incubation 3 hours can eliminated the after taste of orangge juice without reduce the ascorbic acid and colour of orange juice.
