Abstract

Antioxidant are subtances that when present in food or in the body at low concentration compared to that of an oxidizable substrate markedly delay or prevent the oxidation of that substrate. The mechanism by which antioxidants protect food from oxidation is by scavenging of free radicals via donation of an electron or a hydrogen atom,or by deactivation of metal ions and singlet oxygen. Natually occuring inhibitors of oxidation in food generally originate from plant-based materials.Antioxydant can be classified into groups based on how they work and where they are found.There have been a number of assay mathods developed to measure the capacity of antioxidant as pure compounds or in extract.These methods foccus on different mechanisms of the antioxidant such scavenging of oxygen and hydroxyl radicals,reduction of lipid peroxil radicals,chelation of metal ions,or inhibition of lipid peroxidation.The very common methods used were:ORAC,OSI,DPPH ,and TEAC.There are three principle,techniques that may be used to extract naturally occuring antioxidant:extraction using solvent solid-phase extraction,and supercritial carbondioxida extraction

Abstract

 Research on design of cocoa better and cocoa powder equipments for small scale industry was conducted.The steps of this experimental were a literature study,comparative study and plant visit on the large cocoa and chokolate industries,design equipment to produce cocoa butter and cocoa powder for small scale industry,peformance test of equipments and analysis of cocoa butter and coco powder products using Indonesia National Standard (SNI)requirements.The treatment conducted consist of the effect of temperature extraction in hydrolic pressing and the effect of alkalization with sodium hydroxide and sodium carbonate in 4% concentration.The result showeds that the a set of cocoa butter and cocoa powder processing equipment were able to be implemented for small industry by small modification.The performance of the equipment in term of efficiency on cacao bean peeling,throw put capacity of peeling, roasting energy consumption,efficiency of cocoa paste grinding and efficiency of hydrolicpressing were 81,29%,34.kgs per hour,4.92 liters of kerosene per 20 kgs of cocoa bean 83,5% and 28,7% respectively. The cocoa bitter and cocoa powder product have not fulfilled the requirements of Indonesia National Standard(SNI) in term of fat content of cocoa butter;water content,fat content,ash content and vthe degree of particle size loose in mesh number 200 of cocoa powder.

Abstract

The research is aimed at studying the effect of rotation mollen dryer and comparison sugar addition with noni pulp to the characteristic of noni juice microencapsulation (morinda citrifolia).The rotations of mollen dryer used are 24,30,and 36 rpm.Comparison sugar addition and noni pulp are 47%:41%,54%:34% and 60%: 28%.The result showed that analysis of the best product are obtained from rotation of mollen dryer 36 rpm comparison addition of sugar and noni pulp (60%:28%) that resulted in the lower mean value of like acceptability (taste ,flavor,colour,texture and interest visible) with water contend at 6,96% ,total sugar93,75% vitamin c 0,18 mg/100g ) and tss 86,70 %.

Abstract

Fannel (Foeniculum Vulgare Mill) has been well known by indonesia people. Fannel seeds have strong pleasant odour because of essential oil. The major essential oil constituents of fannel were anethole and limonene, with more than 80% of the total oil. The other chemical consituents were- pinene, myrcene, y-terpinene, fenchone, estragole and fenchyl acetate. To increase the use of fannel oil, anethole consituent can be converted to its derivations by oxydation, acetylation, reduction, esterification and alcylation processes. Fennel seeds are used as a flavoring for goods and beverages and the essential oil from seed and plant has flavoring, cosmetic and pharmacuetical uses. The tendency in consumming medicine from natural plant material source, cause in the increasing use fennel as medicine raw material, especially the simplified usage which was used in traditional medicine.

Abstract

The study on oil extraction of avocado fruit has been conducted on the effect of rwa materials and extraction method on the characteristic of avocado oil.There are two method : soaking treatment and fermentation treatment before pressing to separate the oil from avocado fruits.The solvent were hexane,diethyl ather and alcohol, whereas the fermentation times were 3,5 and 7 days.Based on the study the subtances compositions of avocado fruit were 71.72% pulp 9.51% peel and 18.77% seed.The result indicated that the best treatment for oil extraction were obtained by using the diethyl ether soaking of dried fruit and 3 days fermentation of pulp before pressing.The first treatment have produced the yield 37.76% oil,4.20% free fatty acid 2,07 mg/100 gram vitamin E, 102 IU/100 gram vitamin A and 10.3 mg/gram beta karoten while the second treatment has produced the yield 21,44% oil,7,85% free fatty acid ,1,40 mg/100 gam vitamin e ,0,5 IU/100 gram vitamin a and 18,1 mg/gram b karoten.

Abstract

The aim of this study was to improve the quality of cananga oil from Bolyolali Central of Java by bleached treatment with zeolite and tartaric acid.were heated at 50 and 60 celsius degree in boiled water bath with active zeolite (A1)and natural zeolite (A2) at 3%(B1),6% (B2)and 9%(B3) and also with a tartaric acid at 3 percent using magnetic stirrer at 250 rpm for 60 minutes.The control was cananga oil without treatment.After filtered the cananga oil were analyzed for the yield, colour tranmission,metal content, ester number,specific gravity at 20 celsius degree,rotary index,optic rotation and solution in 95% of ethnol.The results indicated that the best treatment in term of he yield,tranmission,ester number and metal content was that treating cananga oil with 6% of active zeolite and 3% of tartaric acid at 50 celsius degree.Active zeolite was more affective than natural zeolite in absorbing the undesirable containment.

Abstract

Heat pump drying (HPD) is one of innovative drying methods due to many advantages in drying for agricultural,food,and timber product.HPD is a drying can employ significant reduction of the energy consumption by energy recovery from condensation humudity.Comparing to orther drying methods such as fluidized,spouted, vaccum drying,HPD was leading in high water removal (kg H2O/kw/hour), wide operating drying temperature scale,wide operating humidity,better quality products,and low operational cost.So far HPD still has some limitation in its application such as the use of CFCs (Cloro fluoro carbon)as refrigerant that is not environmental friendlier,needs regular maintenance for all components of drying system including refrigerant charging, the possilibities for leak of refrigerant, and increase of operational cost.In drying food product,application of HPD was succesful especially in resulting uniform moisture contant,better tensile strength.Timber drying was also enhanced by HPD and the result show that the dried timber has better quality in terms of reduction brown tain in radiana pine,collapse,case hardening,and warpage.The latest tecnology of HPD was hybrid HPD covering fluidized bed HPD,infra red HPD, radio freqiency HPD, solar energy HPD,and multiple chambers of HPD.
