Abstract

Research on the levels of awareness and responsibility of small scale food industry to produce a qualifying and safe food has been conducted .this research was conducted by carrying out a survey, an interview , plant visit and distribute a questionnaire to the managers/owners of small scale of small scale food industries at six region ,ie jakarta,bogor tangerang,bekasi(jabotabek),bandung (west java) and padang ,bukit tinngi (west sumatera)A random sampling of food products samples that was taken from small scale food industry at traditional market or at the businesses operation was also conducted to identify the food product were safety regulion the results showed that generally ,after the indonesian government decree the food safety regulations,i.e food act no. 7 decree in 1996; lebeling government no. 69 in 1999 on cosumer protection act no. 8 decree in 1999 ; the of food hygiene practices and 36.31% implementation labeling goverment regulation no. 69 decree in 1999.

Abstract

The indonesian palm oil production in 2005 will reach about 11.3 milion tons and it is estimated that palm oil production still continue increasing for the next ten years .however ,eighty percent of palm oil exported from indonesia was crude palm oil (CPO) whereas a big of domestic consumption of CPO is consumed in edible oils in term of frying oil margarine and shortening on the contrary ,palm oil downstream industry and biodiesel industry is less develop is less than in malaysia; in point of fact the value added products that produce from palm oil downstream processing industry can reached 50 to 300 percent higher than in edible oil processing industry .the increasing demad palm oil ,the environmental friendly derived products of palm oil and the scarcity of petrochemical scour will open wide market of the palm oil the to develop palm oil based on the downstream processed products of palm oil than tends to increase in demand is very important this article reviews the existing of technology potency for the palm oil downstream processing industry development and its implementation possibility ,development prospect of the palm oil downstream processing industry ,and the line of the policy development.

Abstract

The objectives of this research were(1)to study the effects of fixation time on distillation for lemon leather,(2) to investigate chemical composition of lemon oil (flavor),and (3)to apply lemon flavor on soft drink simulation .the method used in resulting lemon oil was water-steam distillation continued by the second 3 hours .the results show that lemon oil produced during the fist there hours distillation was higher (1.738%) than those resulted from the second three hours distillation (o.701%) based on gas chromatography test,lemon oil resulted contain a-pinen,b-pinen,limonen, linalool and sitral (neral and gerenial) these were identified by measuring peak enrichment three formulas were used on the application of lemon oil or flavor on soft drink namely (1)mixture of cellulose microcrystalline ,sorbitol,and lemon oil (2) mixture of cellulose microcystalline ,sucrose and lemon oil and (3)whey powder,tricalcium phosphat,and lemon oil .based on the organoleptic test and larmond scale the preferred soft drink was from cellulose microcystalline, sorbitol, and lemon oil. with citric oil additions.
