A study on preventing the fermentation during the collection of palm sap has been done. The solution of 0.1% sodium metabisulphite, lime powder and ginggihiang leaf (Leea aequata Linn.) were used as preservatives. The bamboo and paralon tubes were used for collecting the sap. The result showed that the preservative was absolutely needed for preventing the fermentation during the sap collection. The average of pH value of sap using lime powder, sodium metabisulphite, natural preservative (ginggihiang leaf) and control is 6.85, 6.40, and 5.90 respectively.Â

Alpha pinena is the main component of turpentine oil. This compound is very important since its derivates are used in various indutsries. It may be transformed into borneol, iso-borneol, citronellol and geraniol through an acid reaction which are used in parfumery or it mey be oxidised to pinic and pinonic acid which are used in polymer industry. The isolation of a-pinena from turpentine oil has long been know for centuries, unfortunately no one has discussed it in detail. The aim of this experiments is to find out a suitable condition during the isolation especially the value of reflux ratio if a fractional distillation process is undertaken. By using an Oldershaw type fractional column equipped with five perforated plates it was found that 1:3 ratio was the optimum condition. Not less than 80% of a-pinena with 96% purity had been isolated by this method from a commercial turpentine oil.

The variation of the dielectric properties of bananas was applied for measuring their quality. The loss tangent was express the degree of banana maturity. Other quality factors measured were sugar and moisture content, pH, pulp to peel ratio and texture. Destructive and non destructive methods were studied to investigate the realtionship between them. The non destructive method was performed by inserting two blades into the banana. Quantitative and quallitative changes of banana were measured with approximately linear correlation with the loss tangent as measured with a universal bridge. The analysis showed that the loss tangent of the banana decreased during the maturation period. The best correlation between sugar content and the loss tangent existed with a linear correlation of 0.93.Â

When vitamin A undergoes oxidation in fatty food, two possible types of oxidation should be considered. Firstly, there is a possibility for the vitamin A to react directly with oxygen. However, it is also possible to be oxidised by the products of autoxidation of the lipid. This work is set out to study the rate of autoxidation of vitamin A. It is shown that this process is relatively slow. The factors which influence the rate of autoxidation were also explored.Â

Coconut shell charcoal was converted into activated carbon by means of dry distillation method at approximately 600 degree celcius with or witout a very limited amount of oxygen. The activation time used were 1,2, and 3 hours respectively. The samples were then cooled using hot or cold water, with three different colling times of 1,2 and 3 minutes. Parameters taken in the analysis were yield, ash content and iodine adsorption. The results showed that the yield varied from 73,09% to 80,85%. The lowest ash content was 1,99% and the highest iodine adsorption was 700,17 mg/g.
