Abstract

Hydrocoolingis a simple way to quickly lower the temperature of food until the material temperature near the storage temperature. In addition, food packaging treatment can inhibit the rate of weight loss and product quality. This study used a completely randomized design (CRD) which consisted of two factors. The first factor wasthe immersion time in the hydrocoolingprocess (without soaking, 1 minute immersion, and 2 minutes of immersion (immersion water temperature 5oC ± 1)) and the second factor wasthe type of plastic (Polypropylene (PP) plastic type and High-DensityPolyethylene (HDPE) plastic). Each experimental unit was repeated 3 times and all experimental units were stored in a refrigerator with a temperature of 10oC ± 1. The parameters observed were a) moisture content, b) weight loss, c) material hardness, d) color, and e) cooling rate. Observations were made for 8 days with data retrieval intervals for 2 days. During cold storage sweet corn undergoes many physical changes. These changes began to appear on the 6th day. On the 6th day, sweet corn stored in cold storage experienced physical changes, namely wilting, wrinkling, starting to pale, and brownish color appeared at the tip to the base of the surface of the sweet corn. On the 8th day sweet corn experienced a 57decrease in weight loss and moisture content in the treatment without hydrocoolingand without packaging, while the hydrocoolingtreatment (1 minute and 2 minutes) and packed (with Polypropylene (PP) plastic and High-DensityPolyethylene plastic (HDPE) also experienced a decrease in water content and weight loss but still had a high average value of moisture content and weight loss. The result of the decrease in moisture content and weight loss affected the hardness of sweet corn, color, and cooling rate. The best treatment combination was obtained in thehydrocoolingtreatment for 2 minutes with Polypropylene (H2P1) packaging with a weight loss value of 0.33%, hardness 34.20 N / mm2, color L 50.00, a 16.69, b 51.81, water content 74.167%, and a cooling 2.3982 oC / 30 minutes.

Abstract

This research was aimed to determinethe effect of Low-density polyethylene as packaging material for the quality of parsley (Petroselinum crispum L.) during cold room. Additionally, this study was to determinethe thickness of the low-density polyethyleneplastic which can retain the grade of parsley for a longer time. The design experiment used in this study was a Completely Randomized Design (CRD) method using one treatment factor, namely the treatment of low-density polyethylene plastic thickness (LDPE)with a thickness of 0.02 mm; 0.03 mm; 0.04 mm; 0.05 mm; and a thickness of 0.06 mm. This research was replicated3 times in order to obtain 18 units of experimental results. The parameters observed include: weight loss, characteristics, color test, damagerate and respiration rate. The results of this research signified that the thickness of low-density plastic (LDPE) gave a very significant effect on characteristics, color test, damage rate, respiration rate and weight loss. The best handling was obtainedby use of LDPE plastic with a thickness of 0.05 mm with a weight loss of 13.88%, color of 13.93, 43.81 mg CO2/kg/hour for respiration rate, characteristic scoring test value of 3.73, and 3.87 for damage level. Low-density polyethylene plastic with a thickness of 0.05 mm can retain the quality of parsley better than other thicknesses during shelf life of 12 days at 8°C ± 2°C.

Abstract

This research aims to obtain the best concentration of sugar and vinegar (acetic acid) 25% as a holding solution to prolong the freshness of Gerbera cut flowers (Gerbera jamesonii). This research was carried out at the Postharvest Laboratory,Faculty ofAgricultural Technology, Udayana University. This study useda completely randomized design (CRD) method with two factors, the first factor was sugar with concentrations (0%, 1%, 2%, 3%, 4%) and the second factor was vinegar (acetic acid) 25% (0 ppm, 1 ppm, 2 ppm, 3 ppm and 4 ppm) with two replications. Analysis of variance shows the effect of interaction of sugar and vinegar (acetic acid) 25% binds was significantlydifferent (P <0.05) onthe length of freshness of the flower, percentage of wilting flower, browning rate, total absorbed solution and pH. In this research, a combination of 3% sugar and 1ppm vinegar was found to be the best treatment combination. This treatmentmaintainedthe freshness of flowers for9 days and effectively maintainedthe lowest percentage of wilting flowers (24.99%) withthe highest absorbable solution that is 326.5 ml. The combinationtreatment with 3% sugar concentration and vinegar (acetic acid) 1 ppm also showed the highest score on the color of flowers or browning flowers compared to other treatments.
