Abstract

The development of applied science literacy is an important competency that should be taught to high school students to prepare them to face challenges in today's modern era. Applied science literacy in the context of probiotic beverage fermentation can be linked to chemistry, biology, and food technology to produce safe, high-quality products. This competency helps students develop critical thinking and scientific understanding relevant to their daily needs. In addition to science literacy, mastery of entrepreneurial skills enables students to see business opportunities based on applied science products such as probiotic drinks, which are trending among teenagers. The combination of the two will result in a holistic learning model that encourages students to become a creative, innovative, adaptive, and competitive generation. This community service method takes the form of material workshops, Fermentation practicals, and evaluations. The results of this training programme were very well received by the students of Muhammadiah 2 Genteng High School, who listened enthusiastically to the material presented, practised making kefir probiotic drinks, and processed kefir into contemporary products. Overall, this programme was successful and provided benefits in the application of applied science, namely in the use of fermentation for students. The learning outcomes of this training were very beneficial for the students, as evidenced by the survey results showing that 80% had insufficient knowledge of probiotic beverage fermentation methods. After being given the material, 90% of the students' knowledge increased related to probiotic beverage fermentation methods. These results show excellent progress that applied science literacy in education is very important.
