Abstract

This community service program aimed to strengthen the pedagogical knowledge and practical capacity of vocational hospitality teachers in Mimika Regency, Central Papua, through a four-day mentoring program that used bartending (mocktail) practice as its learning context within the Indonesian deep learning (Pembelajaran Mendalam) approach. The program responded to limited access to structured in-service training in remote areas. Ten teachers from three vocational high schools took part in interactive sessions, hands-on mocktail practice, costing exercises, and reflection. Evaluation used a 30-item pre-test and post-test (maximum score 150), working papers, and daily mentoring reports. Mean scores rose from 112.0 to 127.0 (mean gain 15.0, 95% CI 7.1–22.9; exact Wilcoxon p = .006; class-level normalised gain 0.39, medium); nine of ten teachers improved, although one declined and individual gains varied widely. Teachers documented at least nine mocktail recipes, five of which were costed with a 25% food-cost method. Because the evaluation had no comparison group and no standardised performance rubric, the results describe this cohort only. The program shows that pairing a pedagogical framework with hands-on beverage practice is a feasible route to teacher upskilling in a remote vocational context.
