Abstract

  Abstrak Pewarnaan alami adalah zat pewarna yang berasal dari tumbuhan seperti ekstrak gambir. Ekstrak gambir adalah ekstrak remasan daun dan ranting tumbuhan gambir (Uncaria Gambir Roxb) yang telah dikeringkan. Dalam proses pewarnaan alami perlu melakukan mordanting untuk penguat dan pembangkit warna. Teknik mordanting ada tiga teknik yaitu teknik mordating awal/pendahuluan, simultan, dan akhir. Tujuan penelitian ini adalah  untuk mengetahui hasil jadi pewarnaan alami dengan ekstrak gambir menggunakanteknikmordanting yaitu awal / pendahuluan, simultan, dan akhir pada jilbab berbahan sutera, dan untuk mengetahui pengaruh pewarnaan alami dengan ekstrak gambir menggunakanteknik mordanting awal / pendahuluan, simultan, dan akhir pada jilbab berbahan sutera. Jenis penelitan ini termasuk penelitian eksperimen. Teknik pengambilan data pada penelitian ini menggunakan metode observasi, yang berjumlah 30 responden dan lembar instrumen dalam bentuk berupa pemberian skor kemudian dianalisis menggunakan bantuan komputer program SPSS 17 dengan nilai signifikan 0,05. Hasil analisis menunjukan (1) hasil jadi pewarnaan alami dengan ekstrak gambir pada jilbab berbahan sutera menggunakan tiga teknik mordanting yang terbaik yaitu teknik mordanting simultan dengan Mean sebesar 2,87 pada aspek kerataan warna. Mean sebesar 3,71 pada aspek ketajaman warna. Mean sebesar 3,54 pada aspek daya serap warna. Mean keseluruhan aspek pewarnaan alami pada teknik simultan sebesar 3,37 termasuk kategori sangat baik. (2) ada pengaruh yang signifikan teknik mordanting awal/pendahuluan, simultan, dan akhir berpengaruh terhadap hasil jadi pewarnaan alami pada jilbab berbahan sutera dengan ekstrak gambir menggunakan teknik Tie Dye.   Kata Kunci: teknik mordanting, hasil jadi pewarnaan alami pada jilbab berbahan sutera, ekstrak gambir, teknik tie dye   Abstract   Natural dye is the dye originated from plants like gambir extract. Gambir extract is extracted from leaf and branch of gambir plant (Uncaria Gambir Roxb) that dried. In the process of natural dyeing required to do mordanting to strengthen and generates the color. There are three mordanting technique, they are pre-mordanting, simultaneous mordanting, and post-mordanting. research aimed to know the outcome of natural dyeing with gambir extract by using mordanting technique that are pre-mordanting, simultaneous mordanting, and post-mordanting on silk fabric veil, and to know the effect of natural dyeing with gambir extract by using mordanting technique that are pre-mordanting, simultaneous mordanting, and post-mordanting on silk fabric veil. Type of this research included in experimental.Data collection technique this research was using observation method, by 30 respondents and using instrument sheet in form of scoring then analyzed using SPSS 17 with level of significance 0,05. Research yield shows (1) The best outcome of natural dyeing with gambir extract on silk fabric veil by using three mordanting technique is by using simultaneous mordanting with mean 2.87 on aspect of color evenness, mean 3.71 for aspect of color sharpness, mean 3.54 on aspect of color absorption, and mean for total aspect of natural dyeing with simultaneous technique is 3.37 that included in very good category. (2) there are significant influence of pre-mordanting, simultaneous mordanting, and post-mordanting technique toward the outcome of natural dyeing on silk fabric veil with gambir extract from each aspect.   Keywords: mordanting technique, the outcome of natural dyeing on silk fabric veil, gambir extract, tie dye technique

Abstract

Fermentation has been developed to produce a distinctive taste in food, one of which is coffee. Fermentation affects the quality and taste of coffee in coffee beans. This study conducted coffee fermentation using Lactobacillus plantarum bacteria, isolates of Lactic Acid Bacteria. The research method begins with the preparation of Lactobacillus plantarum inoculants which will be used for coffee fermentation, fermentation, total phenol and flavonoid content, caffeine content, chlorogenic acid content, compound analysis, antioxidants, and proximate analysis. Total phenol and flavonoid, caffeine, chlorogenic acid, and antioxidant using the UV-VIS Spectrophotometer instrument. In addition, compound analysis is carried out using GC-MS. This study showed that the bacterium Lactobacillus plantarum would hydrolyze sucrose into simpler sugars with the enzyme invertase and produce organic acids through glycolysis. Liberica coffee fermented using Lactobacillus plantarum bacteria contains phenol compounds, flavonoids, antioxidants, and compound compounds higher than Original Liberica coffee. Meanwhile, the caffeine and chlorogenic acid of Liberica coffee fermented using Lactobacillus plantarum bacteria are lower than Original Liberica coffee. Overall, the chemical compounds of Liberica coffee that have been fermented using Lactobacillus plantarum bacteria are better than Original Liberica Coffee. Liberica coffee beans fermented using Lactobacillus plantarum bacteria have better physical quality and taste than Original Liberica coffee
