Abstract

Thalasina anomala is a type of shrimp that is generally found in the muddy areas of the mangrove area on the coast of the Selat Panjang. The purpose of this study was to obtain the chemical composition of meat and carapace and the rendemen of T. Anoma. Meat and carapace as raw material. This research method description and data analyzed statistically. In this study, there are two stages, namely preparation and rendement of body parts of rama shrimp and then proximate analysis of meat and carapace. Proximate test results from meat and carapace of successive shrimp are water content 76.58 %, 38.93 % gross weight (gw), protein content 81, 46 %, 10.12 % dry weight (dw) , fat content of 5.01% (dw), 2.36% (dw), ash content of 3.93% (bk), 73.96% (dw) and Carbohydrates 9.61% (dw), 14.62% (dw). This value shows that protein in meat is beneficial in food, while carapaces ash content shows the high mineral content

Abstract

Abstract

Slipper lobster live on the bottom of sandy and muddy waters at a depth of 10-200 m and are found throughout Indonesian waters. The carapace is the most significant part of its body, of which approximately 50% is a source of waste, but it can be utilized as functional food in the form of chitin and chitosan. One of the determinations of chitin and chitosan quality depends on the demineralization process. The potential of this shrimp has not been fully utilized due to the lack of information on mineral content after the demineralization process. This study aims to obtain information on flour, chitin, and chitosan mineral content. This research used a descriptive method. The parameters observed were yield, water, ash, and mineral content (K, Mg, Ca, Na, Fe, and P). The results showed that slipper lobster weighed about 80-240 g with a length of 15-25 cm with the yield and mineral content of flour, chitin and chitosan of slipper lobster carapace as follows: yield 29.04%, 41.02%, 33.42%, water 2.36%, 3.96%, 3.25%, ash 52.89%, 8.27%, 3.16%, potassium 55.73 mg/L, 9.09 mg/L, 4.55 mg/L, magnesium 37.23 mg/L, 5.59 mg/L, 5.95 mg/L, calcium 766.87 mg/L, 137.62 mg/L, 126.91 mg/L, sodium 146.62 mg/L, 17.82 mg/L, 10.73 mg/L, iron 12.82 mg/L, 1.89 mg/L, 1.72 mg/L, phosphorus 0.17 mg/L, 0.06 mg/L, 0.05 mg/L.

Abstract

Big eye scad fish with the Latin name Selar crumenophthalmus is one type of small pelagic fish that has economic value. Life of benthic fish populations in the salt water, is inseparable from parasitic infestations. Fish parasites are one of the important problems in fisheries biology. Researchers examined parasites on bentong selar fish originating from fish auction sites in the Sibolga area. The research data obtained are several species of parasites and the prevalence rate of each parasite that attacks big eye scad fish, such as: Acanthocephala spp. 14.28%, Anisakis simplex 2.86%, Norileca indica 2.86% and Digenea 5.71%.

Abstract

Teluk Rhu Village is a village that has potential in terms of fisheries and marine tourism. Some of the people in this village are fishermen, and the rest are fish farmers. The minimum knowledge and competence have fishermen in Teluk Rhu Village cause the welfare to be relatively low. To improve the fishermen's income needed knowledge improvement through food diversification technology based on fishery products. There are four methods used in this program, such as observation, material delivery, product manufacturing practices, and program evaluation. Twenty fishermen were participants and were involved very enthusiastically and actively in this program. There were two materials presented to increase fishermen's knowledge, including digital literacy and food innovation products. Lastly, all participants were trained to make several processed food products such as fish balls, nuggets, and fish sticks. The questionnaire data show that the community service program had several benefits for most participants. Thus, it's hoped that the new knowledge can make them more enthusiastic and motivated to begin a new businesses to increase family income.
