Abstract

The research aims to investigate the changes of the quality of several clones of sweet pota fo planted in two sites. The clone of 1-57,IR, CN 1332-2, 73-6, 73-6/l,and 73-6,12 was planted at Telang, Bangkalan located 5 m above sea level and at Batu, Malang located 600 m above sea level. Theharvestfrom two sites above was then·storaged in a room inMalang whithout temperature arrangementfor 60 days. The treatments were arranged ina complete randomize with three replications. ·Results showed that clone IRfrom Malang had longer storaged life compared to clone 1-57, CN 1332-2, 73-6, 73-6/l, and 73-6,1.2. It was characterized by the changes of water contentfrom 0,96% to 3 % and the changes in respiration ratefrom 5,8% to 83,1%. Clone 73-6,l.2from Bangkalan had better storage life compared to clone 1-57, IR, CN 1332-2, 73- 6,and 73-6/l. Also this clone had starch contentfrom 10,6% to 21,3% .It can be concluded that clone IR is suitable for upland areas while clone 73-6,1.2 is suitable for lowland area. Moreover, toexamine consumer preference to the storaged tuber, an organoleptic test should beemployed.

Abstract

ABSTRAKTahu merupakan produk olahan makanan yang berasal dari kedelai. Tahu sering kita jumpai mulai di warung sederhana hingga pusat perbelanjaan modern, harga yang relatif terjangkau membuat salat satu olahan yang terbuat dari kedelai ini menjadi makanan favorit bagi semua kalangan. Evaluasi sarana produksi pangan industri tahu di UD Sumber Makmur bertujuan agar perusahaan mengetahui cara menjaga keamanan pangan sarana produksi dengan berpedoman pada Good Manufacturing Practices (GMP). GMP sendiri merupakan pedoman cara berproduksi pangan supaya produsen pangan memenuhi persyaratan-persyaratan yang telah ditentukan untuk menghasilkan produk pangan yang bermutu dan aman dikonsumsi sesuai dengan tuntutan konsumen. Adapun 14 aspek GMP yang harus diterapkan pada perusahaan pangan. Hasil penilaian mutu sarana pengolahan pangan di UD Sumber Makmur masuk dalam kategori IV yaitu Kurang, dengan jumlah ketidaksesuaian untuk kategori minor sebanyak 1 penyimpangan, kategori mayor 2 penyimpangan, kategori serius 3 penyimpangan, dan untuk kategori kritis 1 penyimpangan. Tofu that we often find everything from simple stalls to modern shopping centers, the relatively affordable price of making one processed prayers made from soybeans is a favorite food for all people. The evaluation of the food production facilities of the tofu industry at UD Sumber Makmur aims to let the company know how to maintain food safety of production facilities by referring to Good Manufacturing Practices (GMP). GMP itself is a guideline on how to produce food so that food producers meet the specified requirements to produce quality food products that are safe for consumption in accordance with consumer demands. The 14 aspects of GMP must be applied to food companies. The results of the assessment of the quality of food processing facilities in UD Sumber Makmur fall into category IV, namely Less, with the number of nonconformities for minor categories as much as 1 deviation, major category 2 deviations, serious categories 3 deviations, and for critical categories 1 deviation.Keywords: Tofu, UD Sumber Makmur, Good Manufacturing Practices (GMP)

Abstract

Result Klastering from research show have beenformed by 7clusterfrom entireall responder (100) people, among other things is: (1) cluster 1, is very paying attention to group of quality and security in purchase of goods, (2). cluster 2,group taking afancy tojamu Madura, but they remain to price, (3) cluster 3, isgroup which not take asproblem of the price in buying jamu Madura, (4) cluster 4, is group taking afancy tojamu Madura and there is desire to consume the jamu of Madura a more regular again and this group is not fanatical to certain j amu's brand, (5) cluster 5,group.which enough take afancy to thejamu Madura and they desire toconsume thejamu of Madura a more regular, (6) cluster 6, is represent taking afancy to jamu Madura and they buy thejamu alsofor thepresent of existingfamil y outside Bangkalan and to be resold and (7) cluster 7, this group take a fancy to the jamu Madura but in buying their not require the suggestionfrom famil y member orfrom others.
