Abstract

Tujuan penelitian ini adalah untuk mengetahui pengaruh formulasi berbagai total padatan yang terdiri dari gum Arab sebagai enkapsulan dan oleoresin fuli pala sebagai core terhadap karakteristik mikrokapsul yang dihasilkan. Variasi formulasi oleoresin fuli pala dan gum arab yang dicobakan adalah (5%), (10%), (15%), (20%) dan (20%). Pembentukan emulsi dilakukan dengan Turrax homogenizer dengan kecepatan 4000 rpm selama 5 menit. Pembentukan mikrokapsul dilakukan dengan menggunakan pengering semprot (spray dryer) dengan suhu inlet dan outlet masing-masing 1100C dan 620C. Mikrokapsul yang dihasilkan dianalisis karakteristiknya yang meliputi, aktivitas antioksidan dengan metode RSA (radikal scavenging activity) DPPH (2-2Dhpypenil-2 Picrylhydrazil) dan kromatografi gas-spektrometri massa (GC-MS). Sifat mikrokapsul yang diperoleh aktivitas antioksidan (IC50) 1032 ppm dan kromatografi gas-spektrometri massa (GC-MS) dengan komponen terbesar penyusun mikrokapsul oleoresin fuli pala yaitu sabinene hexane, 4-methylene-1-, myristycin, phenol 2,6 dimetoksi-4-2 (2-peopenil), phenol, 2-metoksi-4-(propennyl).Dziezak, D. Abstract

 ABSTRAK Tujuan penelitian ini adalah untuk mengetahui pengaruh formulasi berbagai total padatan yang terdiri dari gum Arab sebagai enkapsulan dan oleoresin fuli pala sebagai core terhadap karakteristik mikrokapsul yang dihasilkan. Variasi formulasi oleoresin fuli pala dan gum arab yang dicobakan adalah A1 (5%), A2 (10%), A3 (15%), A4 (20%) dan A5 (20%). Pembentukan emulsi dilakukan dengan Turrax homogenizer dengan kecepatan 4000 rpm selama 5 menit. Pembentukan mikrokapsul dilakukan dengan menggunakan pengering semprot (spray dryer) dengan suhu inlet dan outlet masing-masing 1100C dan 620C. Mikrokapsul yang dihasilkan dianalisis karakteristiknya yang meliputi rendemen mikrokapsul, kadar oleoresin terkapsulkan, kadar oleoresin tak terkapsulkan, kadar air, engel of repose, wettability dan rehidrasi, aktivitas antioksidan dengan metode RSA (radikal scavenging activity) DPPH (2-2Dhpypenil-2 Picrylhydrazil) dan kromatografi gas-spektrometri massa (GC-MS). Mikrokapsul yang terbaik diperoleh dengan variasi formulasi oleoresin fuli pala dan gum arab adalah  A1 (5%). Sifat mikrokapsul yang diperoleh menpunyai rendemen mikrokapsul 24,68%, oleoresin terkapsulkan 92,68%, oleoresin tak terkapsulkan 7,607%, kadar air 8,444%, angel of repose 19,083 (0), wettability 5,9 (menit), aktivitas antioksidan (IC50) 1032 ppm dan kromatografi gas-spektrometri massa (GC-MS) dengan komponen terbesar penyusun mikrokapsul oleoresin fuli pala yaitu sabinene hexane, 4-methylene-1-, myristycin, phenol 2,6 dimetoksi-4-2 (2-peopenil), phenol, 2-metoksi-4-(propennyl).

Abstract

Nutmeg oleoresin microcapsule is the solid, liquid, and gas coating technology of the nutmeg fruit.  The purpose of this study was to know how mace nutmeg oleoresin microcapsules could preserve the broiler chicken meat at room temperature during 4 days of observation. The experimental design used was a Completely Randomized Design (CRD) consisting of 5 treatments with mace concentration of nutmeg microcapsules oleoresin (0, 50, 100, 150, and 200) ppm. The variables observed were water content, pH value, total microbes, and organoleptic properties (color, aroma, and texture). The results showed that mace nutmeg oleoresin microcapsules did not affect (p> 0.05)  water content and sensory properties of broiler chicken meat, but had a significant effect (p <0.05) on the pH value and total microbe at the same day of room temperature storage. Panel organoleptic test results on the level of preference for meat color, aroma, and texture of chicken meat were in the range score of 3 (somewhat like) to 4 (somewhat dislike). The treatments of nutmeg oleoresin did not affect (p> 0.05) on color, the aroma, and the texture of broiler chicken meat. This research shows that marinating using oleoresin microcapsules has not been effective as a preservative to broiler chicken meat at room temperature. In this study data were collected by interview, observation and questionnaire on 50 respondents. The analysis used includes test data instruments (validity test and reliability test), multiple linear regression analysis, classic assumption test (normality test, multicollinearity test, heteroscedasticity test), and hypothesis testing (f test, t test, coefficient of determination). From the results of the analysis using regression, it can be seen that the variables of work experience, work motivation and work environment all have a positive influence on the performance of the Gerdema task force. From the t-test results obtained from work experience, work motivation and work environment, all have a significant influence on the performance of the Gerdema task force. Keywords: work experience, work motivation, work environment, performance, Gerdema

Abstract

Tujuan penelitian ini adalah untuk mengetahui apakah mikrokapsul oleoresin fuli pala dapat mempertahankan dan mengawetkan daging ayam broiler yang disimpan pada suhu ruangan. Rancangan yang digunakan adalah Rancangan Acak Lengkap (RAL) terdiri dari 5 perlakuan, dengan konsentrasi mikrokapsul fuli pala adalah : P1= (0 ppm), P2= (50 ppm), P3= (100 ppm), P4= (150 ppm) dan P5= (200 ppm). Variabel yang diamati adalah kadar air, nilai pH, total mikroba dan sifat organoleptik (warna, aroma dan tekstur). Data-data dianalisa statistik dengan analisis varian dan apabila ada perbedaan antar perlakuan dilanjutkan dengan uji lanjutan (DMRT) menggunakan SPSS versi 23. Hasil penelitian menunjukkan bahwa daging ayam broiler yang direndam menggunakan mikrokapsul oleoresin fuli pala tidak berpengaruh (P>0,05) terhadap kadar air dan total mikroba daging ayam tetapi berpengaruh nyata (P<0,05) terhadap nilai pH. Hasil uji organoleptik panelis pada tingkat kesukaan terhadap warna daging, aroma dan tekstur daging ayam berada pada kisaran angka 3 (agak suka) sampai 4 (agak tidak suka) dan menunjukan bahwa daging ayam broiler tidak berpengaruh (P>0,05) terhadap warna, aroma dan tekstur daging ayam broiler. Kesimpulan dari penelitian ini adalah perendaman daging ayam menggunakan berbagai konsentrasi mikrokapsul oleoresin fuli pala mempengaruhi nilai kadar air dan mampu menurunkan nilai pH dan menghambat aktivitas mikroba serta tidak mempengaruhi tingkat kesukaan panelis terhadap warna daging, aroma dan tekstur daging ayam broiler.
