Abstract

ABSTRACT This study aimed to study the formaldehyde content of tofu traded in the City Central Market and the Wua-Wua Central Market. This research used a descriptive method. This study used two tests, which were qualitative (Phenylhydrazine Method) and quantitative (Titration Method) tests. The qualitative test aimed to determine the presence or absence of formaldehyde content in the tofu while the quantitative test aimed to determine the levels of formaldehyde in tofu. The results of this study indicate that there were 10 samples out of a total of 17 samples of tofu traded in the City Central Market and the Central Market of Wua-Wua with formaldehyde content. The levels of formaldehyde varied in the range of 47 mg/g to 81.1 mg/g. Both samples with the highest and lowest levels of formaldehyde were found in the City Central Market. Keywords:Tofu, Formaldehyde, KMnO4, Qualitative Test, Quantitative Test ABSTRAKPenelitian ini bertujuan untuk mempelajari kandungan formalin pada tahu yang diperdagangkan di Pasar Sentral Kota dan Pasar Sentral Wua-Wua. Penelitian ini menggunakan metode deskriptif. Penelitian ini menggunakan dua uji yaitu uji kualitatif (Metode Fenilhidrazin) dan uji kuantitatif (Metode Titrasi). Uji kualitatif bertujuan untuk mengetahui ada tidaknya kandungan formalin pada tahu sedangkan uji kuantitatif bertujuan untuk mengetahui kadar formalin pada tahu. Hasil penelitian ini menunjukkan bahwa terdapat kandungan formalin pada tahu yang di perdagangkan di Pasar Sentral Kota dan Pasar Sentral Wua-Wua sebanyak 10 sampel dari jumlah 17 sampel. Kadar formalin yang diperoleh berbeda-beda, kadar formalin tertinggi terdapat di Pasar Sentral Kota 4 yaitu 81,1 mg/g sedangkan yang terendah terdapat di Pasar Sentral Kota 11 yaitu 47 mg/g. Kata kunci: Tahu, Formalin, KMnO4, Uji kualitatif, Uji Kuantitatif

Abstract

Since the government of the Republic of Indonesia imposed large-scale of social distancing (pembatasan sosial berskala besar or PSBB) in early 2020, economic actors have had difficulty maintaining their businesses. The impact of the Covid-19 pandemic has also been felt by MSMEs (micro, small, and medium enterprises) of the Masjid Jogokariyan congregation (jamaah). In order to care for the jamaah and to improve the economic level of the jamaah at the Masjid Jogokariyan, finally the takmir (manager) took the initiative to create the Pasar Rakyat Jogokariyan (PRJ) which means Jogokariyan People's Market program. This PRJ opens up opportunities for new comer business actors or old players affected by Covid-19. Takmir began using digital platforms and marketing mix strategies. This study used a qualitative method with a phenomenological approach, collected data using in-depth interviews, observations, and documentation. The data analysis used Creswell's phenomenological analysis. This study aims to determine the policies of the Masjid Jogokariyan administrators in managing the PRJ Program both from the perspective of human resource management (HRM) and marketing management. We managed to meet 27 people and provide sufficient information for us to use as informants. The key informant was the head of the Masjid Jogokariyan administrators. Through him, we were directed to obtain other information from masjid jamaah, tourists, and MSME owners involved in the PRJ program. PRJ at that time was an alternative program to overcome economic problems experienced by residents or jamaah of the Masjid Jogokariyan. Over time, and the economy has started to return to normal, PRJ has now changed to the pasar Ramadhan Jogokariyan (Jogokariyan Ramadhan Market) which of course only exists during the month of Ramadan. Abstract

The phenomenon of environmental damage due to unlicensed gold mining activities harms aquatic ecosystems. Mercury (Hg) waste from the mining process has the potential to cause bioaccumulation in aquatic biota such as fish and crabs, which can lead to mercury contamination in the human body through the food chain. The bioaccumulation process can also produce toxic organic compounds that harm human health. Therefore, this research aims to determine whether mercury bioaccumulation occurs in yuyu crabs in the Janja River, Malomba Village, Dondo District, Tolitoli Regency, due to gold mining activities. The method used in the research is the calibration curve method with Cold Vapor Atomic Absorption Spectrophotometry (CV-AAS) analysis at a wavelength of 253.7 nm. The results obtained from this research indicate that bioaccumulation has occurred in yuyu crabs that live in the Janja River. The highest accumulated mercury metal levels were obtained at upstream locations with an average of 5.24 ppb; the lowest was in the midstream, which is 1.53 ppb. At the downstream location, it has a mercury concentration of 4.53 ppb. So it shows that the mercury contamination in the yuyu crab samples is below the quality standard threshold, Indonesian National Standard No. 7387 of 2009, for the heavy metal mercury in other types of crabs and crustaceans is 1.0 ppm or 1000 ppb.
