Abstract

Personal higiene penjamah makanan dalam proses pengolahan makanan sangat penting, karena degan penerapan higiene yang sehat dapat meminimalisir kemungkinan terjadinya kontaminasi pada makanan. Penjamah makanan harus mempunyai pengetahuan sikap dan prilaku yang baik dalam mengelola makanan, karena penjamah makanan yang tidak mempunyai pengetahuan, sikap dan perilaku yang baik akan mempengaruhi kualitas makanan yang dihasilkan. Tujuan umum dari penelitian ini adalah mengetahui gambaran pengetahuan, sikap penjamah makanan tentang personal higiene pada 3 pedagang di kantin Poltekkes Kemenkes Riau.Penelitian ini bersifat deskriptif. Penelitian ini dilakukan dengan desain cross sectional. Jumlah sampel dalam pnelitian ini adal 3 orang yang dipilih menggunakan teknik total sampling. Penelitian dilakukan bulan November 2017-Mei 2018.Hasil penelitian menunjukkan pengetahuan penjamah makanan kategori baik sebanyak 2 orang (66,6%) karena dipengaruhi oleh umur, pendidikan, dan lama bekerja.Sikap penjamah makanan kategori baik sebanyak 3 orang (100%) karena pengetahuan yang baik akan menghasilkan sikap yang baik. Personal higiene penjamah makanan kategori baik sebanyak 2 orang (66%) karena pengetahuan dan sikap yang baik tidak diikuti oleh personal higiene yang baik, person higiene bisa dipengaruhi oleh lingkungan dan budaya

Abstract

The presence of Eschericia coli (E.Coli) bacteria is one indicator of food contamination that can cause food-borne diseases. Fresh vegetables have nutritional advantages because they are consumed raw so that the nutrients contained in them are not denatured or changed. Types of vegetables that are usually consumed fresh have the potential to be detrimental to health because they are susceptible to microbial contamination. This study aims to review the sanitation hygiene of traders and determine the content of E.Coli bacteria in cabbage vegetables from fried catfish traders in one of the sub-districts in the city of Pekanbaru. The type of research used is survey and laboratory analysis. Technique sampling in this study is total sampling technique with a sample of 10 fried catfish traders. The results showed that hygiene and sanitation were still low in all traders. All traders do not use running water for washing vegetables and cutlery, and vegetables are not stored in closed containers. The results of bacterial analysis, it was found that 6 samples of fresh vegetables cabbage fried catfish contained E.Coli and the rest did not contain E.Coli bacteria. It can be concluded that the application of food sanitation hygiene by food handlers at several fried catfish traders in Pekanbaru City is in the poor category, because from 10 samples of cabbage vegetables, E.coli was found in 6 samples of cabbage vegetables.

Abstract

This study analyzes the internal conflicts and defense mechanisms of Ikrimah ibn Abu Jahal through the lens of Sigmund Freud’s psychoanalytic framework. Employing a qualitative descriptive-analytical approach that utilizes content analysis and the "showing" method, this library research examines seven dialogue sequences across three scenes, following a four-stage process: data identification, classification of internal conflicts and defense mechanisms, theoretical interpretation, and conclusion. Data collection techniques use documentation techniques which are carried out by collecting, recording and reviewing written sources that are relevant to the research topic. The findings reveal that Ikrimah’s internal conflict is multilayered and progressive, manifesting in three distinct phases: (1) the conflict between upholding and surrendering honor in Scene One; (2) the conflict between recognizing and accepting the truth of Muhammad’s prophethood in Scene Two; and (3) the conflict between the burden of his former identity and the emergence of a new identity in Scene Four. To navigate these dilemmas, Ikrimah employs several defense mechanisms: (1) displacement, in which psychic conflict is redirected into physical flight; (2) rationalization, wherein he constructs justifications to conceal his perceived inadequacy and shame; (3) denial, through which he rejects the reality of Muhammad’s prophethood; and (4) repression, the most foundational mechanism, evidenced by his suppression of his underlying belief in the truth of the prophethood.
