Abstract

Pemanfaatan sumberdaya ikan tidak akan menghasilkan manfaat dan nilai ekonomi yang tinggi jika tidak diikuti dengan kegiatan usaha pengolahan dan pemasaran yang baik. Untuk mendorong terciptanya peningkatan pemanfaatan sumberdaya ikan yang optimal dan nilai tambah serta variasi untuk memperluas segmen pasar maka perlu dilakukan pengolahan hasil perikanan sehingga menghasilkan produk yang bermutu. Penelitian bertujuan untuk mengetahui tingkat kelayakan usaha pengolahan ikan cakalang asap pada unit pengolahan yang dilaksanakan secara tradisional pada salah satu home industy di Kabupaten Raja Ampat. Menggunakan metode deskriptif kualitatif, data diperoleh secara primer dan sekunder melalui wawancara mendalam dan studi leteratur serta dikomperasi dengan data pada instansi terkait. Menggunakan analisis Analisis Benefit and Cost Ratio (B/C Ratio). Usaha pengolahan ikan cakalang asap pada salah satu unit usaha pengolahan ikan di Kabupaten Raja Ampat menunjukkan bahwa usaha ini layak dijalankan dengan tingkat kelayakan usaha yang baik Hal tersebut dibuktikan dengan nilai NPV, IRR, Net B/C, dan payback period memenuhi kelayakan kriteria investasi.

Abstract

Probiotic bacteria are a form of biological control because they play a role in suppressing or killing pathogenic microorganisms. Probiotic bacteria are capable of producing antimicrobial compounds such as lactic acid, hydrogen peroxide, and bacteriocins. The aim of this research is to determine the physiology of candidate probiotic bacteria, including their antimicrobial activity, resistance to acidic conditions, and resistance to bile salts. The research method is descriptive. The results of this study indicate that Bacillus safensis strain C251 SA3, Bacillus amyloliquefaciens strain NO10 SA8, and Bacillus australimaris strain IIHR GAPB01 SL1 are each capable of inhibiting the growth of pathogenic bacteria and surviving in acidic conditions (pH 2). However, only Bacillus amyloliquefaciens strain NO10 SA8 is resistant to bile salt pressure. Thus, the potential candidate for probiotic bacteria is Bacillus amyloliquefaciens strain NO10 SA8.

Abstract

Ekosistem padang lamun memiliki peran penting dalam menjaga keseimbangan ekosistem pesisir dan laut, selain itu padang lamun juga berfungsi sebagai habitat bagi spesies laut, mendukung keanekaragaman hayati, serta memberikan manfaat ekonomi dan sosial bagi masyarakat pesisir. Namun, ekosistem ini menghadapi ancaman serius akibat aktivitas manusia. Kegiatan Pengabdian kepada Masyarakat (PKM) ini bertujuan meningkatkan pemahaman generasi muda Papua tentang ekosistem lamun melalui pendidikan lingkungan berbasis ceramah dan diskusi interaktif. Hasil kegiatan menunjukan adanya peningkatan pemahaman siswa sebesar 20% berdasarkan perbandingan nilai pre-test dan post-test. Dengan adanya kegiatan ini, generasi muda diharapkan mampu menjadi agen perubahan yang berperan dalam pelestarian ekosistem pesisir.

Abstract

Based on the results of the Indonesian Nutrition Status Survey (INSS), the prevalence of stunting in West Papua was recorded at 26,02% in the previous year, increasing to 30.00% in 2022. Currently, most children pay less attention to the food type and more often consume unhealthy snacks. This research aims to develop the product of yellowfin tuna fish sticks to meet the nutritional balance of children and prevent stunting. The treatment in this research was adding yellowfin tuna sih meal with the formulation of wheat flour, tapioca flour, and fish flour, namely 100 g: 100 g: 75 g, which was used in making stick products. Testing of yellowfin tuna fish sticks includes hedonic and nutritional content tests. Based on the results of the hedonic test, which includes the parameters of appearance, smell, taste, and texture, yellowfin tuna fish sticks obtained a score that meets SNI standards, namely 7 (seven) for each criterion. Testing the nutritional content shows that yellowfin tuna sih sticks have a water content of 5,11%, protein of 24,11%, fat of 26,28%, fiber of 0,65%, ash of 3,91%, and carbohydrates of 39,91%, according to product specifications.
