Abstract

AbstrakPondok pesantren merupakan institusi pendidikan yang menyediakan layanan penyelenggaraan makanan bagi santri yang tinggal di asrama. Kualitas makanan yang diberikan kepada santri, remaja yang masih dalam usia pertumbuhan, sudah selayaknya terjamin dari segi kebersihan dan keamanan pangan. Higiene dan sanitasi penjamah makanan sebagai syarat mutlak dalam penyelenggaraan makanan, khususunya bagi santri yang tinggal di pondok pesantren. Kegiatan pengabdian ini merupakan bagian dari Pemberdayaan Berbasis Masyarakat, dengan ruang lingkup Pemberdayaan Kemitraan Masyarakat. Tujuan pengabdian ini yaitu memberikan edukasi higiene dan sanitasi pada penjamah makanan di Pondok Pesantren Muara Bantarkalong, Kabupaten Tasikmalaya. Mitra sasaran yaitu Pondok Pesantren Muara Bantarkalong, dengan sebelas orang penjamah makanan sebagai peserta edukasi. Metode pelaksanaan pada kegiatan pengabdian ini yaitu mulai pengkajian, sosialisasi kegiatan, pembuatan bahan edukasi, pelaksanaan edukasi  dan evaluasi menggunakan pengisian formulir pre-post tes. Hasil dari pengabdian menunjukan adanya peningkatan pengetahuan mengenai higiene sanitasi pada penjamah makanan, dan peserta dapat mempraktekan cara mencuci tangan yang tepat. Kegiatan edukasi menjadi langkah pertama dalam pemberdayaan masyarakat ini, sehingga penjamah makanan di Pondok Pesantren Muara Bantarkalong dapat menyediakan makanan yang sehat dan bergizi. Kata kunci: higiene; penjamah makanan; pesantren; sanitasi; santri AbstractIslamic boarding schools are educational institutions that provide food service for students who live in dormitories. Students should get the quality of food, which hygiene and sanitation of food handlers are absolute requirements in food service, especially for students who live in Islamic boarding schools. This community service activity is part of Community-Based Empowerment, with the scope of Community Partnership Empowerment. The community service activity aims to increase food handlers's knowledge about hygiene and sanitation to provide food at the Muara Bantarkalong Islamic Boarding School, Tasikmalaya Regency. The target partner is the Muara Bantarkalong Islamic Boarding School, with eleven food handlers as education participants. The implementation method for this community service activity starts from assessment, activity socialization, making educational materials, implementing education, and evaluation using pre-post test form filling. The results of the community service show an increasing knowledge about hygiene and sanitation among food handlers, and they can practice the correct way to wash their hands. Educational activities are the first step in empowering this community so food handlers at the Muara Bantarkalong Islamic Boarding School can provide healthy and nutritious food. Keywords: food handlers; hygiene; islamic boarding school; sanitation; students

Abstract

Indonesia is one of the countries experiencing the Covid-19 pandemic. One of the efforts to overcome the health problems caused by the pandemic is to pay attention to a healthy diet and equipped with supplements from herbal drinks that can boost the body's immune system. Based on the results of the analysis of the situation in the linggasirna and Jayaputra villages, information was obtained that the community has not understood the implementation of a healthy diet as one of the prevention of Covid-19 transmission and the lack of educational activities about Covid-19 prevention efforts. Providing education to PKK mothers who act as mediators of family health information in the community is expected to be the first step in solving the problem. Education of healthy eating patterns and herbal drinks is delivered using power point media. The positive response of participants to educational activities was seen from the activeness of participants during the discussion. Based on the results of pre-test and post-test data processing amounting to 10 multiple choice questions, the n-gain value obtained by PKK mothers of Linggasirna and Jayaputra villages is 6.3% and 7.1%. This shows that there is an increased understanding of PKK mothers before and after education
