Abstract

Penelitian ini bertujuan untuk pengembangan minuman fungsional berbahan jahe dan kayu manis yang tinggi kandungan flavonoid. Penelitian ini merupakan penelitian eksperimental dengan menggunakan Rancanggan Acak Lengkap (RAL) dengan tiga kali pengulangan. Penelitian terdiri dari pembuatan serbuk jahe dan kayu manis, kemudian serbuk yang terpilih dalam pembuatan formulasi minuman dengan 3 perbandingan jahe dan kayu manis (g) yaitu F1, F2, dan F3 berurutan 1:1, 1:2, dan 2:1. Uji kimia yang digunakan pada penelitian ini yaitu uji flavonoid secara kualitatif dan kuantitatif. Analisis data menggunakan uji ANOVA, apabila terdapat perbedaan nyata maka dilanjutkan dengan uji Duncan Multiple Range Test (DMRT). Adapun data yang diuji adalah flavonoid. Hasil penelitian menunjukkan bahwa setiap formulasi minuman (1:1, 1:2, 2:1) positif terdapat flavonoid berdasarkan uji secara kualitatif, adapun pengujian secara kuantitatif menunjukkan hasil bahwa setiap formulasi minuman berpengaruh nyata terhadap hasil uji total flavonoid dengan p-value<0,05. Total flavonoid pada F1, F2 dan F3 secara berurutan adalah 70,88%, 57,86%, dan 82,96%. Formulasi minuman fungsional terpilih yang diperoleh dari penelitian ini adalah F3 dengan nilai total flavonoid tertinggi.

Abstract

This study examines the dynamics of the Indonesian Democratic Party of Struggle (PDIP) withdrawing its support for the candidate pair running for regent and vice-regent in the 2024 Lampung Timur Regional Election. The primary focus of the research is to analyze the reasons behind PDIP's decision to revoke its endorsement of Ela Siti Nuryamah and Azwar Hadi, as well as the impact of this decision on the democratic process in the region. The study adopts a normative juridical approach, analyzing relevant legislation, particularly PKPU Regulation No. 8 of 2024, which prohibits the withdrawal of support after registration. The findings reveal that concerns among its cadres and constituents opposing the possibility of an uncontested election influenced PDIP's decision. This withdrawal of support not only sparked controversy among the public but also raised questions about the integrity and commitment of political parties in the regional election process. This research aims to contribute to a better understanding of local political dynamics and the legal implications of political party actions in the context of regional elections.

Abstract

ABSTRAK: Manajemen sistem penyelenggaraan makanan yang baik pada sebuah institusi berpengaruh pada ketersediaan makanan dan asupan zat gizi siswa sehingga institusi penyelenggara makanan perlu memperhatikan tahapan penyelenggaraan makanan yang meliputi input, proses, dan output. Penelitian ini bertujuan untuk menganalisis input, proses, dan output penyelenggaraan makanan di Rumah Qur’an Daarut Tarbiyah Depok. Penelitian ini menggunakan desain cross-sectional, dengan subjek penelitian meliputi penyelenggara makanan dan siswa. Data input dan proses diperoleh dari hasil wawancara dengan kuesioner dan observasi. Data tingkat kesukaan diperoleh menggunakan kuesioner uji hedonik. Pengolahan dan analisis data dilakukan secara deskriptif dengan menggunakan Microsoft Excel 2016. Hasil penelitian menunjukan bahwa penyelenggaraan makanan dilakukan dengan secara swakelola dengan metode konvensional meliputi makan pagi, makan siang, dan makan malam. Hasil analisis input diperoleh hasil penyelenggara makanan terdiri dari satu orang yang bertanggung jawab terhadap seluruh tahapan penyelenggaraan makanan. Hasil analisis proses, diketahui bahwa tidak terdapat siklus menu yang tetap, pengadaan bahan dilakukan secara mandiri membeli ke pasar setiap 3 hari, perencanaan menu ditentukan ketika bahan sudah tersedia, penyimpanan bahan masih belum terstandar, persiapan dan pengolahan makanan dilakukan pada tempat yang sama, pendistribusian makanan menggunakan sistem sentralisasi dan desentralisasi. Hasil analisis tingkat kesukaan pada menu makanan termasuk kategori biasa.  ABSTRACT: A good food management system in an institution affects the availability of food and nutrient intake of students so that food service institutions need to pay attention to the stages of food administration which include input, process, and output. This study aims to analyze the input, process, and output of food service at Rumah Qur'an Daarut Tarbiyah Depok. This study used a design cross-sectional, with research subjects including food organizers and students. The data were input and process obtained from the results of interviews with questionnaires and observations. The level of preference data was obtained using a hedonic test questionnaire. Data processing and analysis was carried out descriptively using Microsoft Excel 2016. The results showed that the administration of food was self-managed with conventional methods including breakfast, lunch, and dinner. The results of the analysis input show that the food organizer consists of one person who is responsible for all stages of food administration. The results of the process analysis, it is known that there is no fixed menu cycle, procurement of materials is carried out independently by buying to the market every 3 days, menu planning is determined when materials are available, material storage is still not standardized, food preparation and processing is carried out in the same place, distribution food using a centralized and decentralized system. The results of the analysis of the level of preference on the food menu include the usual category.

Abstract

A diverse and nutritious diet is essential to support good nutritional status. Nutritional issues such as stunting and wasting in Central Sulawesi are influenced by dietary patterns, food security, and vulnerability. The Food Consumption Pattern Score (Skor Pola Pangan Harapan or PPH) is used to evaluate the quality of dietary intake and its impact on nutritional status. This study aimed to analyze changes in PPH scores, food security and vulnerability indices, and their relationship with the nutritional status of children in Central Sulawesi from 2021 to 2023. This ecological study utilized secondary data from districts in Central Sulawesi, analyzed descriptively and through linear regression to assess variable relationships. The average PPH score remained stable, ranging from 77.2% to 80.6%. Both energy and protein adequacy levels improved in most areas, but wasting prevalence increased from 8.9% in 2021 to 13.0% in 2023. Regression analysis indicated that better dietary patterns and food utilization significantly reduced stunting (p < 0.05), while life expectancy had a significant effect in reducing wasting (p = 0.014). Research in Central Sulawesi (2021–2023) reveals a reduction in stunting from 28.9% to 27.0% but a rise in wasting from 8.9% to 13.0%. Key factors include access to clean water and effective food utilization, which lower stunting risk, while life expectancy reduces wasting. Stabilized Hope Food Pattern Scores (PPH) negatively correlate with stunting. Interventions should prioritize clean water access, food utilization, nutrition education, and public health programs to enhance life expectancy and reduce malnutrition.
