Abstract

The research on bacterial testing on boiled water of boiled mackerel (Rastelliger sp) has been conducted. The study applied treatment of boiled water that is not replaced and is used continuously in several stages. This study aims to determine the effect of boiled water on the quality of fish production, and determine its effect on meat tectrus, gill color, and aromas. The study was conducted with a descriptive qualitative method. Boiled mackerel quality is measured using the total plate count method, which is to count the number of bacterial colonies in the water before boiling and after boiling.

Abstract

Abstract

Hand sanitizer is an antiseptic substance that can be used to clean hands. To reduce the chemical content in Hand sanitizers, by using natural ingredients that contain antimicrobial ingredients. The natural ingredients used in this study were lemongrass and cloves. The purpose of this study was to determine the physical quality (organoleptic, homogeneity), phytochemical content and effectiveness of lemongrass and clove extracts against Staphylococcus aureus bacteria. This study uses an experimental laboratory research method where the data obtained in the observations are presented in the form of quantitative descriptive analysis with concentrations of 0%, 25%, 50%, 75%, 100% in 5 days, 7 days and 10 days of fermentation. The results of the organoleptic test got the results of color, shape and liquid texture, the results of the homogeneity test were that there were still coarse grains on the Hand sanitizer. The results of the phytochemical content of lemongrass and clove extracts are flavonoids and tannins. The results of the effectiveness test showed that lemongrass and clove extracts were able to inhibit Stahpylococcus aureus bacteria in 5 days, 7 days and 10 days of fermentation. The largest inhibition zone was found in  the 7-day fermentation with 100% concentration of 0.86 mm.

The use of food plants in traditional ceremonies represents a form of local knowledge that reflects the close relationship between communities and the biological resources in their environment. Among the Simalungun ethnic community, various food plants are still utilized in traditional wedding ceremonies; however, scientific documentation regarding their use remains limited. This study aimed to identify the food plant species used in Simalungun wedding ceremonies, determine the plant parts utilized and their sources, and explore their cultural significance. The research was conducted in Silimakuta District, Simalungun Regency, North Sumatra, using a qualitative descriptive approach through observation, interviews, and documentation involving 36 purposively selected informants. The results revealed that 24 food plant species belonging to 13 families were used in the ceremonies. The most frequently utilized families were Zingiberaceae and Liliaceae. The plant parts used included fruits (25%), tubers (21%), seeds (17%), rhizomes (12.5%), leaves (12.5%), stems (8%), and flowers (4%). Food plants were obtained from farmlands (46%), traditional markets (46%), and home gardens (8%). Traditional dishes such as dayok nabinatur and ikan mas arsik carry symbolic meanings related to harmony, togetherness, and the cultural identity of the Simalungun people. This study demonstrates the important role of food plants in preserving cultural traditions and local ethnobotanical knowledge.
