Abstract

The jam is a semi-solid food made from fruit or other processed product. The manufacturing process can add food additives (BTP), one of which is artificial sweeteners such as cyclamate. Cyclamate can be harmful to health if consumed in levels that exceed the maximum limit.The purpose of this research was to identificate and determine the cyclamate content of unbranded jam in the traditional market town of makassar. The type of research used is laboratory observation with simple random sampling technique. This research was conducted qualitatively (depositional method) and quantitatively (gravimetric method). Based on the results of the research from 7 (seven) samples of unmerck jam there were 2 (two) positive samples containing cyclamate with cyclamate levels obtained, namely the K sample 0f 42.273,78 mg/kg and sample T3 of 49, 822. 67 mg/kg. In this study it can be concluded that 2 (two) samples of unbranded jam contained cyclamate levels that exceed the maximum limit set by BPOM No. 4 of 2014, namely 1000 mg/kg and so it is not safe for consumption.

Abstract

Vegetables and fruits are foodstuffs whose cultivation process requires pesticides. In addition to farmers who apply pesticides, pesticide poisoning can also be experienced by people who consume agricultural products including vegetables through the pesticide residues contained in them, so that it will have a negative impact on human health who consume them continuously. The purpose of the study was to determine the presence of pesticide residues in foodstuffs. This research is a laboratory observation with a simple random sampling technique. In this study, a qualitative analysis of organophosphate and carbamate pesticide residues in food ingredients was carried out using the Thin Layer Chromatography (TLC) method. Based on the results of the study, from 15 (fifteen) samples of vegetables, no organophosphate chlorpyrifos pesticide content was detected, but the carbamate group was detected in samples of spinach, cabbage, and carrots marked with spots and the Rf value was the same as the Furadan standard. Thus, it is hoped that the community will wash the vegetables before they are processed and consumed.

Abstract

Masalah kesehatan di era globalisasi saat ini lebih cenderung disebabkan karena adanya perubahan gaya hidup yang berkaitan dengan perilaku, adanya transisi demografi serta epidemiologi. Peran mahasiswa kesehatan sebagai pembaharu perilaku kesehatan dilatarbelakangi karena pendidikan kesehatan yang mereka jalani dapat berperan untuk merubah perilaku individu, kelompok serta masyarakat sesuai dengan nilai-nilai kesehatan yang mereka telah pelajari di bangku kuliah. Namun seringkali perilaku kesehatan ini tidak dilakukan dengan baik karena padatnya jadwal kuliah dan banyaknya tugas. Telah dilakukan pengumpulan data dengan melibatkan jumlah mahasiswa tingkat akhir sebanyak 60. Hasilnya menunjukkan bahwa mahasiswa TLM memiliki Hygiene behaviour yang baik sebanyak 62,3% dan Risk Behavior yang baik sebanyak 87%.

Abstract

Abstract Diabetes mellitus is a multifactorial disease that requires long-term care because it involves major changes in the physical and psychosocial dimensions of each patient. Early public education about diabetes mellitus is an important element to avoid complications of this disease. In addition, the community has never carried out early detection and screening of blood sugar. This community service is aimed at implementing a community-based education program that facilitates the community in increasing knowledge about early detection and self-care for Diabetes Mellitus in Gantarang Keke Village, Bantaeng Regency. The method of implementing community service consists of two stages, namely: 1) the preparation phase includes health counseling with a lecture method to the Gantarang Keke Village community 2) the implementation phase includes the implementation of an implementation program in the form of blood sugar screening. The results show that with the education carried out through counseling about diabetes mellitus, the Gantarang Keke Village community began to understand about Diabetes Militus, its causes, and management through lifestyle changes and can carry out healthy lifestyles, eating patterns / life style that can be done alone at home simply to be implemented as one of the prevention and maintain blood sugar levels. Most of the Kelurahan people who check blood sugar have the risk of developing Diabetes Mellitus. Keyword : Diabetes mellitus, Blood Sugar, Counseling

Abstract

Abstract Children are a future asset that must be considered. At school, children cannot control their behavior. They eat and play without supervision so they are very susceptible to their health problems such as diarrhea. The method of implementing community service consists of two stages, namely: 1) the preparation stage including health counseling with the lecture method for SDI Paku students 2) the implementation stages of the program in the form of how to properly process hands and dispose of garbage in its place. The results showed that with the education carried out through counseling about healthy living patterns, SDI Paku students began to apply the habit of washing hands properly and the habit of disposing of garbage in its place.

Abstract

Pesticides is chemical substances and other materials as well as microorganisms and viruses that are used to control various plant-disturbing organisms. Early public education about pesticides is an important element to avoid increasing exposure for farmers or workers in the spraying division of plant pests. In addition, the community has never carried out early detection and feels that they are already immune and are used to the pungent smell of pesticides. This service activity is carried out with the aim of implementing a community-based education program that facilitates the community in increasing knowledge about early detection and preventive efforts against the using of pesticides that do not meet the requirements in the application of Occupational Health and Safety (K3) principles in Gantarang Keke Village, Bantaeng Regency. Methods of implementation this community service consists of two stages, namely: 1) the preparation stage includes health counseling with the lecture method to the community of Gantarang Keke Village; 2) the implementation stage includes the implementation of the implementation program in the form of implementing K3 correctly and safely. The results show that with education carried out through counseling about the application of K3 to the people of Gantarang Keke Village, they begin to understand about the safe and correct using of pesticides, as well as the use of Personal Protective Equipment in accordance with the requirements in K3 principles.

Abstract

Indonesia is located on the equator with a tropical climate and has two seasons, namely the rainy season and the dry season. When entering the rainy season with high rainfall, this condition can trigger inundation and cause flooding. In addition, human activities that throw garbage in the wrong place can also exacerbate flooding. Manggala sub-district is a sub-district located east of the city of Makassar which has a lower geographical condition and a homogeneous area and is close to the final disposal site of waste so that it is most often affected by floods every year. The high flood vulnerability in the Manggala sub-district has raised concerns from various parties, one of which is the Institute for Research and Community Service of the Muhammadiyah Makassar Health Polytechnic. Through lecturers and students of the Muhammadiyah Makassar Health Polytechnic, efforts were made to prevent post-flood disease such as diarrhea and dengue fever to minimize the impact of flood risk on the community, especially in the health sector. Assistance activities carried out in the form of post-flood health education and provision of biopori pipes to reduce inundation and potential flooding if rainfall is high, this is done as a form of community service so that it can help solve health problems that exist in the community.

Abstract

Rebung betung (Dendrocalamus asper) memiliki kandungan nutrisi, namun di samping itu rebung juga mengandung unsur anti nutrisi yang membahayakan kesehatan yaitu kandungan hidrogen sianida (HCN). Asam sianida merupakan senyawa beracun yang sangat mematikan, apabila masuk kedalam tubuh dalam dosis yang tinggi maka akan menyebabkan gangguan kesehatan bahkan kematian dalam sekejap. Tujuan penelitian ini untuk mengetahui pengaruh waktu perendaman pada rebung betung (Dendrocalamus asper) terhadap penurunan kadar sianida dengan variasi waktu 0 menit,15 menit, 30 menit, 45 menit dan 1 jam. Pada penelitian ini menggunakan metode eksperimen laboratorik yang diuji secara kuantitatif dengan menggunakan alat spektrofotometer UV-Vis. Hasil penelitian ini menunjukkan bahwa kadar sianida pada perendaman 0 menit diperoleh kadar sianida sebanyak 64,07 mg/kg dengan selisih 0, pada perendaman 15 menit diperoleh kadar sebanyak sianida sebanyak 49,78 mg/kg dengan selisih sebanyak 14,29 pada perendaman 30 menit didapatkan kadar sianida sebanyak 45,15 mg/kg dengan selisih sebanyak 18,92 mg/kg, pada perendaman 45 menit didapatkan kadar sianida sebanyak 44,85 mg/kg dengan selisih sebanyak 19,22 mg/kg dan penurunan kadar sianida tertinggi yaitu pada perendaman selama 1 jam sebanyak 43,83 mg/kg dengan selisih sebanyak 20,24 mg/kg, Sehingga dapat disimpulkan bahwa waktu perendaman rebung mempengaruhi kadar sianida pada rebung, semakin lama waktu perendaman kadar sianida semakin menurun sehingga masih aman untuk dikonsumsi karena tidak melewati ambang batas yang telah ditentukan yaitu <50 mg/kg.

Abstract

Keracunan makanan salah satunya disebabkan karena adanya cemaran kimia dalam makanan tersebut, seperti penambahan boraks untuk memperpanjang masa simpan produk. Data Badan Pengawas Obat dan Makanan (BPOM) menunjukkan bahwa sepanjang tahun 2012, Insiden keracunan akibat mengkonsumsi makanan menduduki posisi paling tinggi, yaitu 66,7%, dibandingkan dengan keracunan akibat penyebab lain. Dalam data tersebut, diketahui 2,93% sampel makanan jajanan pada anak sekolah mengandung boraks. Akumulasi boraks di dalam tubuh dapat berdampak negatif bagi kesehatan. Boraks merupakan Kristal lunak yang mengandung unsur-unsur boron, bewarna dan larut dalam air, tidak berbau, stabil pada suhu tinggi serta tekanan normal. Boraks digunakan sebagai pengawet pada ayam potong untuk memperpanjang masa penyimpanan pada ayam potong. Namun pemakaian boraks disalahgunakan untuk dijadikan sebagai bahan pengawet pada makanan karena memiliki sifat sebagai antiseptik, pengontrol kecoa, bahan solder dan pembersih alat dapur. Penelitian ini bertujuan untuk mengidentifikasi boraks pada daging ayam potong dengan menggunakan Cutton bud yang diperjualbelikan pada pasar pa’baeng-baeng Makassar. Berdasarkan hasil pemeriksaan yang dilakukan dengan menggunakan 20 sampel paha ayam potong menunjukan bahwa 1 sampel positif mengandung boraks. Hasil ini ditunjukan dengan adanya perubahan warna pada kapas cutton bud dari kuning menjadi bewarna merah ini menandakan bahwa boraks ditambahkan pada sebagian kecil pedagang ayam potong dipasar pa’baeng-baeng Makassar.

Abstract

Hidroquinon merupakan zat berbahaya yang dilarang digunakan, berbentuk jarum halus yang sering digunakan dalam krim pemutih. Pemakaian hidroquinon secara berlebih dapat mengakibatkan gangguan kesehatan seperti menyebabkan iritasi pada kulit dan kanker darah. Penelitian ini dilakukan secara observasi laboratorik dengan tujuan untuk mengatahui kadar hidroquinon pada lulur racikan tidak bermerek yang diperjualbelikan di pasar sentral kota Makassar. Berdasarkan penelitian yang telah dilakukan menggunakan metode spektrofotometer UV-Vis , diperoleh hasil kadar hidroquinon pada lima sampel yaitu A 0.0001% B 0.0001%, C 0.0006%, D 0.0007%, dan E 0.0001%. Hasil yang diperoleh menunjukkan sampel A, B, C, D dan E mengandung hidroquinon dengan kadar yang rendah, tetapi hidroquinon tidak dapat digunakan pada kosmetik berdasarkan public warning/peringatan nomor KH.00.01.432.6081 tahun 2009 yang menyatakan kosmetik mengandung bahan berbahaya/bahan dilarang termasuk hidroquinon, dimana penggunaan bahan tersebut dapat membahayakan kesehatan dan dilarang digunakan karena hidroquinon termasuk obat keras. Tetapi hidroquinon hanya dapat digunakan berdasarkan resep dokter.
