Abstract

Green tea (Camellia sinensis (L.) Kuntze) leaf has polyphenol substance that able to inhibit tyrosinase enzyme. Tyrosinase enzyme is one of the essential components that can be initiated melanin formation on the skin (melanogenesis). The natural inhibitory enzyme can be utilized in cosmetics and medicinal industries as depigmentation agent. Green tea leaf was formulated in the dosage form of a gel with carbomer 934 as a gelling agent. This study aimed to determine the optimum concentration of carbomer 934 on green tea leaf extract gel that has an inhibitory tyrosinase activity. This research used three carbomer 934 concentration, there was 0.5%, 0.75%, and 1% respectively. Which every formula was evaluated during six weeks involve organoleptic, homogeneity, viscosity, pH, centrifuge, and freeze-thaw test (during six cycles). The optimum formula was evaluated tyrosinase activity used a spectrophotometer-vis. The results showed that the great concentration of carbomer 934 was contained on the first formula, which has not phase separation and 49.62 ppm of IC50 value. This research showed that green tea leaf extract gel with 0,5% carbomer 934 prevented tyrosinase activity. Keywords: Carbomer 934, gel, green tea leaf extract, inhibitory of tyrosinase

Abstract

ABSTRAKProduk pangan yang aman dan halal merupakan aspek penting yang harus terpenuhi bagi produsen baik industri mikro maupun industri skala makro. Hal ini akan menjadi pertimbangan bagi konsumen khususnya Muslim. Salah satu UMKM yang memproduksi sejumlah produk pangan di lingkungan Tytian Indah Bekasi yaitu Salimah. Tujuan dilaksanakan pengabdian masyarakat ini yaitu untuk meningkatkan pengetahuan dalam menentukan makanan yang aman dan halal. Metode pelaksanaan kegiatan pengabdian ini adalah pemberian materi dan diskusi yang dilakukan secara online melalui zoom dan grup whatsapp. Kegiatan pengabdian masyarakat ini telah berlangsung pada tanggal 24 dan 25 Oktober 2020. Evaluasi dilakukan dengan memberikan pre-test dan post-test. Nilai rata-rata antara pre-test dan post-test mengalami peningkatan yaitu 8,13 menjadi 8,73. Namun, hasil uji statistik Wilcoxon menunjukkan hasil yang tidak signifikan sebesar 0,068. Kegiatan edukasi ini memberikan pengaruh terhadap peningkatan nilai rata-rata test, meskipun tidak signifikan secara statistik. Kata kunci: aman; edukasi; halal; salimah. ABSTRACTSafe and halal food products are essential aspects that must be fulfilled for manufacture, both micro and macro-scale industries. This will be a consideration for consumers, especially Muslims. One of the micro-scale industry that produces a variety of food items in the Tytian Indah Bekasi neighborhood is Salimah. The aim of this social project is to enhance people’s awareness of what constitutes healthy and halal food. The method of implementing this activity was material presentation and discussions which is conducted through Zoom and Whatsapp group applications. This project took place online on 24 and 25 October 2020. Evaluation is done by giving a pre-test and post-test. The average score between the pre-test and post-test has increased from 8.13 to 8.73. However, the results of the Wilcoxon statistical test showed unsignificant results at 0.068. This educational activity has an effect on increasing the average score of testing, although it is not statistically significant. Keywords: education; halal; safe; salimah.
