Abstract

AbstractCherry tomatoes are categorized as high value agricultural product. However, the short ripening period accompanied by declining quality due to ongoing respiration and poor postharvest handling became a constraint to the marketability. Therefore, it’s necessary to select a treatment that can maintain quality bydelaying ripening. High electrostatic field (HEF) pretreatment, a non-chemical and low energy techniques, was known to be a viable method to delay fruit ripening. The present study aimed to evaluate the effect of field strength and exposure time of HEF pretreatment on postharvest quality of cherry tomatoes duringstorage. The fruits were treated by HEF of 1, 2, or 3 kV/cm in strength for 1 or 2 hours in a parallel plate electrode system. Then, all fruits were stored at 13oC, 85-90% RH for up to 21 days and regularly measured for respiration rate and quality. The results showed that HEF was able to reduce fruit weight loss 1.2-1.9 times and the effect increases with increasing field strength. Fruit softening percentage also became lower when the field strength and exposure time increased. Climacteric peak successfully postponed for 3 days in all HEF pretreatment, which the greatest emphasis of respiration rate was in 2 kV/cm for 2 hours pretreatment. HEF pretreatment capable of maintaining high level fruit total soluble solids (TSS), despite the field strengh and exposure time had no significant effect. AbstrakBuah tomat ceri termasuk komoditas pertanian bernilai tinggi. Namun, periode pematangan yang singkat disertai penurunan mutu akibat masih berlangsungnya respirasi dan penanganan pascapanen yang kurangbaik menjadi kendala pemasarannya. Oleh karena itu, diperlukan perlakuan yang dapat mempertahankan mutu dengan menunda pematangan. Praperlakuan medan elektrostatik tinggi (HEF), suatu teknik non kimia dan rendah energi, diketahui menjadi metode yang layak untuk menunda pematangan buah. Penelitian ini bertujuan untuk mengevaluasi pengaruh kuat medan dan lama pemaparan praperlakuan HEF terhadap mutu pascapanen buah tomat ceri selama penyimpanan. Buah dikenai pemaparan HEF dengan kuat medan 1, 2, atau 3 kV/cm selama 1 atau 2 jam dalam sistem elektroda plat paralel. Buah lalu disimpan dalam refrigerator 13oC, 85-90% RH selama 21 hari untuk kemudian diukur laju respirasi dan mutunya secara berkala. Hasil menunjukkan bahwa HEF mampu mengurangi susut bobot buah 1.2-1.9 kali dan efeknya meningkat dengan bertambahnya kuat medan. Persentase pelunakan juga makin rendah saat kuat medan dan lama pemaparan HEF meningkat. Puncak klimakterik berhasil ditunda selama 3 hari pada semua perlakuan HEF, dengan penekanan laju respirasi paling besar pada perlakuan 2 kV/cm 2 jam. Perlakuan HEF mampu mempertahankan total padatan terlarut (TPT) buah tetap tinggi meskipun kuatmedan dan lama pemaparan tidak berpengaruh signifikan.

Abstract

Vegetable oil is commonly used for cooking and frying at high temperatures. Information on the oil's specific heat in a process can help estimate the time and energy spent to reach a particular temperature. However, finding an accurate and affordable instrument for measuring specific heat at high temperatures was complex. This study aimed to design a prototype data acquisition device (DAQ) that can support the specific heat of high-temperature vegetable oil determination using the Joule experiment and Newton's correction. This study had two stages: prototype design/construction and prototype testing. The DAQ prototype consisted of a PZEM-003 power sensor, a PT100 temperature sensor, a relay, and an Arduino Mega 2560. The measurement results were displayed on an LCD and recorded in Microsoft data streamer. The prototype was tested by comparing the temperature, voltage, and current with commercial instruments resulting in accuracy and precision of 99.97% (99.95%), 99.97% (99.86%), and 99.99% (99.86 %), respectively. Performance tests showed that the specific heats of canola, corn, and sunflower oils at 100°C based on DAQ data analyzed separately were 2.119 J/kg.°C, 2.082 J/kg.°C, and 2.458 J/kg, respectively. The specific heat values were close to those in the reference, with an accuracy of 94.22%, 97.29%, and 99.80%, respectively. Keywords: ATmega2560, DAQ, Heat capacity, Hysteresis, Vegetable oil

Abstract

Halalness of products has been a global concern in recent years due to increasing awareness, especially in Muslim-populated countries. However, Indonesia, the country with the largest Muslim population in the world, is only ranked 5th in halal industry development. Therefore, producers and consumers are expected to have a deeper understanding of halal practices that can encourage the development of industries with halal-certified products. This paper aimed to systematically and quantitatively plot the output of scientific research on implementing food and postharvest technology to improve the integrity of the halal food industry. The research method was bibliometric analysis using VOSviewer as a mapping tool. This research has four stages: (i) collection of bibliometric data from the Scopus database, (ii) performance analysis using embedded Scopus analysis tool, (iii) data mapping using VOSviewer, and (iv) mapping data analysis. Out of 2,875, only 161 keywords from 455 articles met the analysis threshold. The results showed that the topic of meat received the most attention from 2008 to 2021, found in 84 articles with 878 total link strengths. Furthermore, one of the most cited research topics recently was related to modeling the theory of planned behavior with factors of Halal awareness, certification, food quality, promotion, and brand on the intention to purchase halal products by non-Muslim consumers, with 203 citations from 2013 to 2021. In general, researchers can use this study to examine trends and directions of future research topics comprehensively.

Abstract

Postharvest is a vital stage in agricultural production which is prone to causing losses due to improper implementation. Using a microcontroller that allows automation and increased precision in the postharvest process will likely reduce costs and potential losses. This research conducted a bibliometric study on applying microcontrollers in postharvest systems in Scopus-indexed publications from 2003 to 2022. The aim was to reveal microcontroller developments, evaluate current research topics, and discuss future challenges facing microcontroller applications in postharvest systems. First, this paper presents a bibliometric review of the role of microcontrollers in postharvest. Second, co-citation, coupling, and cluster analysis methods were used to analyze collaboration networks, and VOSviewer was used to visualize these networks. Third, Biblioshiny was used to analyze thematic trends of microcontroller applications. Finally, the paper discusses the challenges of using microcontrollers and provides suggestions for overcoming them. The results show that institutions from China and Italy lead research production in this field, with globally popular studies focusing primarily on fruit, digital storage, moisture determination, and cost. In addition, the thematic evolution of keywords indicating response time, cost, and design reliability issues have become basic and emerging topics in microcontroller application research for postharvest systems in recent years.

Abstract

Bibliometric analysis is a crucial way to understand trends and progress in a field of research. Using the VOSviewer application for bibliometric analysis becomes an effective tool to demonstrate research patterns, networking, and research focus. This study explains the analysis of scientific publications related to rotary dryers using the VOSviewer application. This study aims to find trends through analyzing bibliometric data on rotary dryer research for 10 years (2014–2023). Data was collected from the Scopus database. The method used is descriptive causality, using VOSviewer to visualize relationships between keywords, authors, institutions, countries, and network collaborations between authors. The study showed 1,356 articles relevant to rotary dryers between 2014 and 2023. After elimination by document type (article, conference paper, review, and conference review) and language type (English), 465 articles were obtained. The bibliometric analysis results show changes in research trends, from performance studies to the study of the use of energy resources in rotary dryers and their integration with intelligent systems. There are five keyword clusters, with primary keywords in each cluster. The number of articles on the topic of rotary dryers has increased from year to year, with China being the country with the most publications and citations. Still, the number of links and strength of the author's relationship with other countries in carrying out joint publications remain relatively low. The results of this bibliometric analysis provide a helpful overview of research progress and prospects with the topic of rotary dryers and help the authors plan further research.
