Abstract

Fruit leather is a fruit preserved product that is still able to maintain the taste of the raw materials used. This study aims to obtain the right formulation between subgrade pineapple puree and red dragon fruit peel puree that affect the characteristics of fruit leather. The design of this study used a Completely Randomized Design (CRD) with 3 treatment levels of concentration between subgrade pineapple puree and red dragon fruit puree with a ratio of 80% and 20%, 85% and 15%, 90 and 10%, respectively. The total puree used was 400 g in each treatment, then 0.6% carrageenan and 8% sorbitol were added. Each treatment was repeated 3 times so that a total of 9 experimental units was obtained. The data generated was then analyzed using ANOVA and continued with the Duncan test. The results showed that each treatment had a significant effect on antioxidant activity, and had a non-significant effect on water content, total sugar, total acid, and organoleptics (color, taste, texture, aroma and overall). Based on the hedonic test (overall), the best research results were obtained in F1 treatment (80% puree of pineapple fruit and 20% puree of dragon fruit skin) with a moisture content of 9.5%, total acid of 1.46%, total sugar of 36.25% antioxidant activity 73.93%.

Abstract

The implementation of cleaner production to analyze the production process so as to reduce and utilize the waste generated. The research was conducted on cooperative Latansa bakery Gontor 1 islamic boarding school. Research began the general condition of the industry, the identification of the production process, the identification of problems at cooperative Latansa bakery Gontor 1 islamic boarding school, identification of alternative cleaner production, and feasibility analysis of alternative clean production. Cleaner production alternatives in the form of recommendation and feasibility analysis to management. This study found the lack of SOP workers, hygiene and sanitation, storage of raw materials that are less tidy, spills flour and other ingredients, the bread did not sell, and eggshell directly discarded. Recommendations net production will involve the application of SOP workers, hygiene and sanitation, rearrangement of raw material storage areas, Good Manufacturing Processing, utilization of the remaining unsold bread as feed, and the use of egg shells as organic fertilizer. Bread making in the day as much as 8 batches.

Abstract

Cassava is one type of tuber that is very famous in Indonesia. Cassava in a state of fresh is easily damaged because it is very sensitive to the infestation of fungi and other microbes. Therefore it needs further processing, one of them is by drying. Cassava that has dried can be processed into cassava flour. In the drying process, the shape of the slices of cassava will affect the duration of drying, the quality and durability of cassava flour during storage. Therefore, the purpose of this study is to measure the yield of cassava and analyze the effect of cassava slices on drying characteristics. Before drying, cassava is cleaned and peeled. Peeled cassava is sliced in 3 slices, namely an upright circle with a thickness of 0,5 cm (S1), an oblique circle shape with a thickness of 0,5 cm (S2) and a circle shape of 5 cm thickness and then split upright into 8 or 4 parts with a thickness of 0,5 cm (S3). The data taken are peeled cassava, water content, dried cassava, rate of decrease in water content, and visual appearance of cassava drying. Based on the results of the study, the best cassava slices are sliced circle shape (S2) because of the accumulated data, the results obtained from S2 slices show maximum results.
