Abstract

Soymilk has become progressively consumed in Indonesia since early 1990. However, soymilk has a short shelf life due to its high protein content that promotes growth of spoilage microorganisms. This study was aimed at utilizing peel waste of eggplant (Solanum melongena L.) and dragon fruit (Hylocereus polyrhizus), to prolong shelf life of fresh soymilk through microbial growth inhibition, so that it will not be easily contaminated during storage, transportation and distribution time to meet the needs of consumers. Microbiological analysis showed a notably higher inhibitory effect of dragon fruit peel extract when soymilk was stored at 4ºC and it exhibited lower number of colonies even after 6 days. Interestingly, the antimicrobial activity of eggplant peel extract in cold soymilk could only be observed on day 3 until day 9. Hence, it is assumed that chlorogenic acid, as a primary antimicrobial agent in eggplant peel, needed certain time interval to activate its inhibitory activity against microorganism. However, the two peel extracts could not prolong the shelf life of soymilk stored at ambient temperature. All soymilk samples added with the peel extracts fulfilled the Indonesian National standards (SNI) for pH value, protein, and total solid content. Based on the sensory evaluation, the samples with dragon fruit peel extract attained a comparable acceptance level as plain soymilk and were favored over those added with eggplant extract. In conclusion, this research indicated potential applications of usual household waste of dragon fruit and eggplant peels as antimicrobial agents for protein-rich beverages.

Abstract

Studi ini meneliti ekstraksi kulit buah matoa (Pometia pinnata), buah dari famili Sapindaceae. Ekstraksi dilakukan dengan teknik maserasi menggunakan 3 pelarut: aseton, etanol dan akuades. Ekstrak tersebut kemudian dievaluasi aktivitas antioksidan dan antimikrobanya. Tes antimikroba menggunakan tes difusi lempeng dan difusi cairan. Aktivitas antioksidan tertinggi dihasilkan oleh ekstrak aseton dengan nilai IC50 15.323 ppm, kemudian ekstrak etanol 143.23 ppm dan 451.306 ppm. Aktivitas antioksidan dari ketiga ekstrak tersebut dibandingkan dengan aktivitas antioksidan dari asam askorbat dan ekstrak aseton menunjukkan kekuatan antioksidan setara dengan 50% dari kekuatan antioksidan dari asam askorbat. Aktivitas anti mikroba dievaluasi terhadap Escherichia coli, Bacillus cereus dan Staphylococcus aureus. Hasil evaluasi menunjukkan bahwa semua ekstrak memiliki aktivitas antimikroba dengan karakter bakteriostatis. Karena itu nilai NIC (Non-inhibitory Concentration) ditetapkan untuk semua ekstrak. Aktivitas tertinggi ditunjukkan oleh ekstrak aseton dan etanol dengan NIC <0.5 ppm terhadapsemua bakteri tes, sementara aktivitas terlemah ditunjukkan oleh ekstrak akuades dengan NIC 5 ppm. Pengukuran kadar fenolik dari semua ekstrak dilakukan dengan tes Folin-Ciocalteau, dan ditemukan adanya korelasi positif antara kadar fenolik dan aktivitas antioksidan dari semua ekstrak. Analisa komponen dengan tes tannin, saponin dan spektrometri juga dilakukan dan hasil menunjukkan adanya kandungan tannin, saponin dan alkaloid di dalam kulit buah matoa.Kata kunci :Matoa, Pometia pinnata, Ekstraksi, Antimikroba, AntioksidanEnglish Version AbstractThis study investigated the extraction of matoa (Pometia pinnata) fruit peels, a fruit in the family of Sapindaceae. The extraction was performed through maceration method using three kinds of solvent: acetone, ethanol and water. The extracts were tested for their antioxidant and antimicrobial activities. DPPH radical scavenging assay was used in evaluating the antioxidant activities. The antimicrobial activity was evaluated using disc-diffusion and broth dilution method. The highest antioxidant activity was showed by acetone crude extract with IC50 value at 15.323 ppm, followed by ethanol and water crude extract at 143.23 ppm and 451.306 ppm, respectively. The antioxidant activities of the crude extracts were compared to L-ascorbic acid and it was found that acetone crude extract exhibited half the strength of the antioxidant activity of L-ascorbic acid. Antimicrobial activity of matoa fruit peel extracts were tested against Escherichia coli, Bacillus cereus and Staphylococcus aureus. The results showed that all crude extracts showed antimicrobial activity with bacteriostatic characteristic. Therefore, Non-Inhibitory Concentration (NIC) was determined for all crude extracts. Acetone and ethanol crude extract possessed the strongest antimicrobial activity at NIC <0.5 ppm against all tested microorganisms, while water crude extract showed the weakest antimicrobial activity with NIC at 5 ppm. The total phenolic content of the crude extracts were measured using Folin-Ciocalteau method. Positive correlation between the antioxidant activities and the total phenolic content of the crude extracts was detected. Saponin and tannin test, as well as spectrometric analyses supported the presence of saponin, tannin and alkaloid in matoa fruit peel.Keywords :Matoa, Pometiapinnata, Extraction, Antimicrobial, Antioxidant

Abstract

Lemongrass is a common ingredient in Indonesian traditional herbal medicine that potently inhibits carbohydrate hydrolysis. In this study, the in vitro α-glucosidase inhibitory (AGI) activity of lemongrass was compared with its in vivo activity to retard postprandial blood glucose elevation, and the bioactive compounds responsible for these activities were observed. Both water and ethanolic extracts of lemongrass (WLG and ELG, respectively) were tested in vitro for its inhibition of the sucrose and maltose hydrolyzing activities of rat intestinal glucosidase. ELG was observed to exert higher inhibitory activities (Sucrase IC50 = 8.74 mg/mL; Maltase IC50 = 18.93 mg/mL) than WLG. ELG was evaluated for its in vivo activity to retard blood glucose elevation in mice after sucrose, maltose, and glucose consumption. ELG was also fractionated using activity-guided chromatography, followed by liquid chromatography–mass spectrometry and high-performance liquid chromatography (HPLC). In vivo sugar tolerance test confirmed the AGI activity in a non-dose-dependent manner and showed potential additional mechanisms that may prevent postprandial hyperglycemia. The active principles were acquired in methanol-soluble fraction and purified using preparative thin-layer chromatography. HPLC analysis with commercial standards identified caffeic acid and kaempferol as the compounds responsible for the bioactivity of ELG. Results showed that lemongrass has the potential as herbal medicine ingredient in the management of diabetes.

Abstract

Di Indonesia kontribusi UMKM tercatat cukup signifikan dalam penyerapan tenaga kerja maupun menciptakan lapangan kerja baru. Menurut Badan Pusat Statistik, pada triwulan II-2022, terjadi peningkatan pertumbuhan produksi Industri Mikro dan Kecil nasional yang signifikan dibanding periode sebelumnya. Provinsi Banten berkontribusi dalam kinerja positif ini dengan pertumbuhan produksi IMK ketiga tertinggi. Akan tetapi kontribusi UMKM terhadap Produk Domestik Bruto dan ekspor nasional masih perlu ditingkatkan. Melalui program Kedaireka Matching Fund dari Kemendikbudristek, SGU bersama dengan Pemerintah Kota Tangerang Selatan melakukan implementasi inovasi pendampingan UMKM Naik Kelas dengan strategi rebranding, repacking, dan digital marketing melalui koperasi. Dengan tujuan peningkatan kualitas produk UMKM, pelatihan dalam penggunaan teknologi untuk meningkatkan karakteristik sensori dan memperpanjang umur simpan produk pangan diberikan kepada 20 UMKM terpilih di Tangerang Selatan. Selain itu pelatihan mengenai jenis bahan dan teknis pengemasan yang sesuai untuk berbagai produk pangan, mulai dari makanan ringan, minuman serbuk instan, makanan beku dan makanan kering telah dilakukan. Para pelaku UMKM juga dilatih cara menghitung informasi nilai gizi dan pembuatan label kemasan yang sesuai dengan regulasi. Hasil dari kegiatan tersebut, ke-20 UMKM berhasil membuat kemasan baru yang lebih inovatif dan dapat meningkatkan umur simpan produk serta sesuai dengan ketentuan pemerintah, sehingga terjadi peningkatan daya saing produk UMKM tersebut.

Abstract

This study addressed the issue of inventory discrepancies in the spare parts warehouse of PT XYZ, which previously recorded a discrepancy rate of 0.94% in 2024. The objective was to design and evaluate a mitigation strategy to reduce the discrepancy rate to 0.5%. An integrated approach combining Root Cause Analysis (RCA), Failure Mode and Effect Analysis (FMEA), and Quality Function Deployment (QFD) was applied. RCA identified human error, inaccurate recording, and weak monitoring as the dominant causes of discrepancies. FMEA results showed that stock visibility, accuracy of receiving, and shipping errors were the most critical risks. QFD analysis further revealed that three technical requirements—real-time stock visibility, 100% receiving accuracy, and the penalty system—contributed most significantly to discrepancy reduction. The implementation of these requirements reduced the discrepancy rate from 0.94% to 0.5% between January 2024 and May 2025. Pearson correlation analysis confirmed that these factors had strong positive relationships with customer requirements and discrepancy reduction, with correlation coefficients above 0.7. These findings demonstrated that the integrated RCA–FMEA–QFD approach not only reduced discrepancies but also improved process reliability and operational performance in warehouse management.
