Abstract

Bread has been chosen as an alternative food because of its availability. In Indonesia, consumptionof breads is increased due to the change of diet pattern into packed and ready-made meals. Therefore, it isimportant to raise the awareness of bakery products quality. The purpose of this study was to detect andidentify the microbial contaminant in bakery products in Yogyakarta City, Indonesia. Bacterial coloniesfrom expired bakery products were isolated into pure isolate then confirmed by API Staph and PolymeraseChain Reaction (PCR) method. The results showed there were five kinds of gram-positive bacteria. Isolatedbacteria identified by API were Bacillus cereus (52.8%), Bacillus subtilis (97.7%), Staphylococcus aureus (97.7%),Staphylococcus epidermidis (97,9%) and Staphylococcus saprophyticus (72,2% and 61,8%).

Abstract

Food poisoning caused by the contamination from Staphylococcus aureus are frequently found in foodespecially in dairy products. Pasteurization process in milk production was not enough to kill S. aureus becauseit formed biofilm that could survive in high temperature. This research aimed to study the presence of biofilmforming S. aureus in samples from packed commercial milk products in Yogyakarta City, Indonesia. Twentyisolates from dairy products were grown in Brain Heart Infusion (BHI) broth then inoculated into Braid-ParkerAgar (BPA) medium to get the candidate of S. aureus isolates. These isolate candidates were selected usingMannitol Salt Agar (MSA) and Congo Red Agar (CRA) medium. Another selection was done by carbohydratefermentation analysis and confirmed using API STAPH. Confirmation analysis showed that eight isolateswere identified as S. aureus. Another two isolates were identified as S. xylosus and S. haemolyticus. Therefore,it indicated the presence of Staphylococcus aureus as contaminant in dairy products.

Abstract

White oyster mushroom (Pleurotus ostreatus) is a highly nutritious food with simple cultivation process using sawdust as its main substrate. Nowadays, availability of sawdust become a problem for some mushroom farmers. Cardboard and vegetable wastes are easily found and difficult to maintain. Based on their characteristics, those wastes can be used as mushroom growth media. This study aims to determine the effect of cardboard and vegetable waste on mushroom growth and the best media composition to obtain maximum productivity. Those wastes are used as the main substrate in eleven composition variations with complete randomized design (CRD) analysis method using One-Way ANOVA and simple linear regression statistical test. The results showed, variations in media composition affect the condition of the media which then influence the growth of P. ostreatus. Maximum productivity was found in media composition XI with mycelium growth rate up to 3.91 cm/day, media IX with the biological efficiency up to 45.38%, and media X with the highest total yield up to 97.28 grams. From this study it can be concluded that cardboard and vegetable waste can be an alternative growth substrate for P. ostreatus in urban areas with a maximum concentration of vegetable waste no more than 30% by weight of the media used.

Abstract

Corn cob is one of the most common agricultural wastes in Indonesia with high content of xylan. Xylan can be used to produce xylitol which cannot be digested by human digestive enzymes thus, make it a potential candidate of prebiotic. This preliminary research aimed to study the potency of corn cob in supporting the growth of Bifidobacterium longum. Corn cob was produced into powder and used as the carbon source in the growth medium of B. longum. Total plate count method was done to count the growth of B. longum in various concentrations of bacteria solution. The result showed that crude corn cob powder can support the growth of B. longum from bacterial enumeration with the value of 2.01 x 106 CFU/mL. The study indicated that corn cob has a potential to be used as prebiotic.

Abstract

Limbah berupa ampas kopi dapat mencemari lingkungan apabila dibuang tanpa pengolahan. Tujuan penelitian yaitu mempelajari dampak pemberian pupuk ampas kopi Robusta (Coffea canephora) fermentasi dan non fermentasi terhadap pertumbuhan tinggi, jumlah daun, berat basah, bobot kering dan panjang akar dari tanaman Bayam Brasil (Altenanthera Sissoo) dan mengetahui kualitas pupuk ampas kopi berdasarkan kandungan senyawa C, N, P, dan K. Rancangan penelitian yaitu Acak Kelompok (RAK), dianalisis dengan UNIANOVA, uji DMRT dan uji LSD. Hasil penelitian yaitu pupuk ampas kopi robusta (Coffea canephora) yang difermentasi dengan dosis 140 g memiliki pengaruh signifikan dalam mendukung pertumbuhan tanaman bayam Brasil (Altenanthera Sissoo).

Abstract

Tanaman berkhasiat obat banyak dimanfaatkan oleh masyarakat di Indonesia secara turun-temurun untuk mendukung kesehatan. Inventarisasi dan pemanfaatan beragam tanaman obat mutlak dilakukan untuk pengembangan potensinya dalam menunjang kesehatan. Pemanfaatan jamu sebagai produk olahan tanaman obat mulai mendapatkan perhatian lebih dari pemerintah melalui institusi kesehatan. Pengabdian ini bertujuan untuk membuat percontohan taman tanaman obat keluarga (Toga) di Dusun Ngelosari, Kecamatan Piyungan, Kabupaten Bantul yang memadukan rintisan ekowisata lereng bukit dan pengolahan tanaman obat keluarga. Kegiatan pengabdian ini didasarkan pada analisis situasi dan permasalahan kesehatan di lingkup Puskesmas Piyungan. Berdasarkan identifikasi masalah dan analisis kebutuhan yang dilakukan bersama puskesmas dan kader kesehatan maka pendekatan pengembangan percontohan taman toga, pelatihan dan pendampingan pada kelompok wanita tani (KWT) dipilih sebagai pendekatan yang diharapkan mampu menyelesaikan permasalahan kesehatan dan ekonomi masyarakat. Program terealisir dalam bentuk persiapan dan observasi lokasi taman Toga, pengembangan taman Toga percontohan, pelatihan budidaya tanaman obat, pasca panen dan pengolahan, serta pengemasan dan pemasaran produk herbal. Kegiatan ini mempunyai hasil berupa Taman Toga Ngupoyo Sehat yang menjadi sumber bahan baku produk jamu yang dihasilkan oleh KWT setempat. Selain meningkatkan pendapatan KWT setempat, pelaksanaan program dapat dipergunakan sebagai model sinergisme pengembangan konservasi dan peningkatan kesehatan masyarakat.

Abstract

Tahu adalah salah satu makanan jajanan yang banyak digemari oleh sebagian besar masyarakat. Proses pengolahan, umumnya masih dilakukan secara tradisional dan kurang memperhatikan aspek kebersihan sehingga masih memungkinkan terkontaminasi bakteri patogen yang dapat mengganggu kesehatan.  Penelitian ini bertujuan untuk mendeteksi keberadaan bakteri enteropatogen pada jajanan tahu. Sebanyak 15 sampel dari 5 jenis jajanan tahu diperoleh dari pedagang kaki lima. Sampel ditumbuhkan pada medium CCA untuk mendapatkan bakteri terduga enteropatogen. Isolat terduga kemudian diseleksi melalui pengujian biokimia menggunakan uji indol, MR, VP, sitrat, TSIA, sorbitol dan laktosa. Isolat terduga enteropatogen kemudian dikonfirmasi menggunakan kit API 20 E.  Hasil pengujian dari 15 sampel tahu ditemukan bakteri enteropatogen yang teridentifikasi sebagai Pasteurella pneumotropica / Mannhelmia haemolytica, Aeromonas sp. Yersinia pestis, Y. enterocolitica, E. cloacae dan Grimontia hollisae dengan tingkat kontaminasi tertinggi didominasi oleh Pasteurella pneumotropica / Mannheimia haemolytica sebesar 60%.

Abstract

Pembumian konsumsi Bayam Brasil (Althernanthera sissoo) sebagai tanaman sayur alternatif bagi masyarakat perkotaan perlu didukung oleh pemahaman teknik budidaya yang baik. Sebagai salah satu unsur penting dalam tahapan budidaya, pemilihan dan pembuatan pupuk pendukung pertumbuhan tanaman sayur mutlak untuk dicermati. Pupuk organik cair (POC) sebagai salah satu bentuk pupuk organik layak menjadi opsi dalam pemilihan pupuk tanaman bayam brasil karena faktor ketersediaan bahan baku dan ruang pembuatan di lingkungan komunitas pegiat urban farming. Penelitian ini bertujuan untuk memaparkan cara pembuatan pupuk organik cair (POC) berbasis sampah organik yang ada di sekitar lingkungan komunitas urban farming Omah Paseduluran Sleman Gemah Ripah Yogyakarta yang menjadi lokasi pilot project budidaya tanaman Bayam Brasil. Hasil kegiatan menunjukkan bahwa POC berbasis sampah organik seperti air cucian beras, irisan kulit buah dan urin ternak domba mudah untuk dibuat. Peserta kegiatan pelatihan pembuatan POC antusias dalam mengikuti kegiatan dan bertekad untuk membuat POC ini secara mandiri untuk diaplikasikan di tanaman budidaya yang dipunyai, baik itu bayam brasil atau tanaman lainnya. Abstract

Agriculture is claimed as Indonesia’s strategic pillar sector. The existence of a community-based enterprise with a traditional business model is often seen as a weakness, while social capital is a strength to thrive. However, a well-managed conventional business model can become one of the foundations of a sustainable livelihood. This community service program wass carried out with the Artha Mandiri Group, which is domiciled in Kemadang Village, Gunungkidul, Special Region of Yogyakarta. This program aimed to increase the economic resilience of group members by empowering and growing business capabilities with their social capital as their fundamental strength. The empowerment method used in this program was Participatory Action Learning and Action Research (PALAR), which is considered an effective tool for strategically transforming paradigms. This method focused on a balance between progressive, collaborative practice accompanied by an action research foundation. The 6-month program has resulted in collaborative business competency learning practice for group members, emphasizing different processing methods to produce business line diversification. This group made flour from land-owned rice paddy harvests with the same quality as commercially produced. This achievement can also have an impact on business cost efficiency.
