Abstract

The addition of collagen derived from bone and scales gouramy into red guava juice drinks and the characteristics of collagen red guava juice drinks based on chemical, physical and organoleptic properties was done. This study used a 5x5 factorial experimental design in a factorial randomized block design (RCBD) with 5 replications, which included factors: added collagen concentration, namely a1 (1%), a2 (1.5%), a3 (2%), a4 (2.5%), a5 (3%). The analysis responses included organoleptic responses (taste, aroma and color), physical responses (viscosity) and chemical responses (protein content and Vitamin C levels). The results of this study indicate that the concentration of collagen added to red guava juice drinks affect the response of taste, aroma, viscosity, protein and Vitamin C from red guava juice drinks. The concentration of collagen added to the red guava juice drink has no effect on the color of the drink

Abstract

Research has been done on the optimization of fermentation conditions for the manufacture of coconut oil from coconut meat slurry using Saccharomyces cereviceae. The purpose of this study is to determine the ratio of oil and water, stirring speed and concentration of inoculum S. cerevisiae the quantity and quality of the oil produced from the coconut meat slurry fermentation method. Stages of the process include the making of starters and age determination of S. cerevisiae, inoculation, fermentation and filtration. Best products achieved at inoculum concentrations of 14% with a speed of 200 rpm and produces yield of 35.77%. Starter culture is the optimum time of 30 hours at 35°C by the number of cells 185 x 105 cells / ml. Temperature and time of fermentation was significant effect on yield and starch content but does not affect the saponification numbers, levels of free fatty acids (FFA), iodine number.Keywords: fermentation condition, coconut meat slurry, coconut oil, S. cerevisiae, yield, starch content

Abstract

Telah dilakukan penentuan penambahan kolagen yang berasal dari tulang dan sisik ikan gurami kedalam minuman jus jambu biji merah serta karakteristik pada minuman jus jambu biji merah berkolagen berdasarkan sifat kimia, sifat fisik serta organoleptik. Penelitian ini menggunakan rancangan percobaan faktorial 5x5 dalam rancangan acak kelompok (RAK) satu faktorial dengan ulangan sebanyak 5 kali, dimana faktornya meliputi : konsentrasi kolagen yang ditambahkan (A), yaitu a1 (1%), a2 (1,5%), a3 (2%), a4 (2,5%), a5 (3%). Respon analisis yang dilakukan meliputi respon organoleptik (rasa, aroma dan warna), respon fisik (viskositas) dan respon kimia (kadar protein dan kadar Vitamin C). Hasil Penelitian ini menunjukan bahwa konsentrasi kolagen yang ditambahkan kedalam minuman jus jambu biji merah berpengaruh terhadap respon rasa, aroma, viskositas, protein dan Vitamin C dari minuman jus jambu biji merah. Konsentrasi kolagen yang ditambahkan kedalam minuman jus jambu biji merah tidak berpengaruh terhadap warna minuman.

Abstract

Telah dilakukan penelitian megenai karakteristik minuman jeli ikan lele yang dipengaruhi oleh konsentrasi pemanis buatan dan karagenan. Penelitian ini diharapkan dapat memberikan informasi mengenai produk diversifikasi ikan lele menjadi produk yang mempunyai nilai ekonomis dan memiliki nilai gizi yang tinggi. Penelitian dilakukan dalam dua tahap. Tahap pertama dilakukan untuk mengetahui jenis pemanis buatan yang sesuai untuk minuman jeli ikan lele. Penentuan berdasarkan uji skala hedonik dengan parameter warna, aroma, dan rasa. Sedangkan tahap kedua dilakukan untuk menentukan konsentrasi jenis pemanis buatan terpilih (sakarin:siklamat) dengan konsentrasi 0.02% : 0.06% b/b; 0.014% : 0.042% b/b; 0.01% : 0.03% b/b dan konsentrasi karagenan 0.1%; 0.2%;0.3% b/b. Pada penelitian ini digunakan Rancangan Acak Kelompok (RAK) dengan pola faktorial 3x3 tiga kali pengulangan yang dilanjutkan uji Duncan. Pengujian meliputi respon kimia yaitu analisis uji kadar gula pereduksi (metoda titrimetri), respon fisik meliputi uji pH menggunakan pH meter, uji total padatan terlarut (metoda gravimetric), dan viskositas menggunakan viskometer. Hasil penelitian menunjukkan bahwa konsentrasi pemanis buatan berpengaruh nyata terhadap karakteristik minuman jeli ikan lele, yaitu terhadap respon viskositas, total padatan terlarut, rasa, dan tekstur. Tetapi tidak berpengaruh nyata terhadap respon kadar gula reduksi, pH, warna, dan aroma. Konsentrasi karagenan berpengaruh nyata terhadap karakteristik minuman jeli ikan lele, yaitu respon viskositas, total padatan terlarut, pH, rasa, dan tekstur. Tetapi tidak berpengaruh nyata terhadap respon kadar gula reduksi, warna, dan aroma. Interaksi konsentrasi pemanis buatan, dan konsentrasi karagenan berpengaruh nyata terhadap karakteristik minuman jeli ikan lele, yaitu respon viskositas, total padatan terlarut, pH, rasa, dan tekstur. Namun, tidak berpengaruh nyata terhadap respon kadar gula reduksi, warna, dan aroma. Sampel terpilih adalah formula a3b3, yaitu dengan penambahan pemanis buatan (sakarin : siklamat) sebanyak 0.1% : 0,03%, dan karagenan sebanyak 0,3% dengan pH 5,50, kadar gula pereduksi 7,17%, viskositas 866,67 mPas, total padatan terlarut 20,54 °Brix, dan kadar protein 3.80%.

Abstract

The motive of research is to find out how to make a jelly drink from catfish. While the purpose of this researchis to determine the effect of jelly powder concentration on the characteristics of catfish jelly drink. The benefits of this research is to provide a reference processing functional beverage made from animal foods, provide product information diversification catfish jelly drinks,manufacturing process of catfish jelly drink and accurate concentrate jelly powder also panelists preferred to make a catfish jelly drink.The research was conducted in two stages; preliminary research and primary research. Preliminary research was involve the removal of the fishy smell, raw materials analysis and determining the ratio of meat catfish and the water that used in the primary research. The method was used in this research is a randomized block design (RBD) with 12 × 1 factorial with two replications. Variable concentrations of jelly powder were used to make a catfish jelly drink is f1 (0.10%), f2 on (0.15%), f3 (0.20%), f4 (0.25%), f5 (0.30%), f6 (0.35%), f7 (0.40%), f8 (0.45%), f9 (0.50%), f10 (12:55%), f11 (0.60%) and f12 (0.65%). Based on the results of research, concentration of jelly powder give significant effect on water content, viscosity, total dissolved solids, color, flavor, texture and appearance of jelly drinks catfish but it is not give significant effect on reducing sugar content and smell. Selected samples of the research are f7 with the concentration of jelly powder as much as 0.40% and that catfish jelly drinks contains moisture 80.15%, levels of reducing sugars 1.175%, viscosity 1:53 dPas, total dissolved solids 18.7 ° Brix, protein content 3.72% and levels 1.78% crude fiber.

Abstract

This study investigates the effect of jelly powder concentration on the quality characteristics of broccoli jelly drink (Brassica oleracea var. Italica). A randomized block design with four levels of jelly powder (0.6%, 0.7%, 0.8%, and 0.9%) was applied. Parameters analyzed included pH, vitamin C content, viscosity, sensory attributes (color, aroma, taste, suction power), and antioxidant activity (IC₅₀) for the best treatment. Results showed significant effects (p < 0.05) of jelly powder concentration on all variables. Higher concentrations increased viscosity but decreased pH, vitamin C stability, and sensory acceptability. The 0.6% concentration was selected as optimal, showing balanced pH (4.78), viscosity (198.83 cP), vitamin C (131.67 mg/100 g), and favorable sensory scores. However, its antioxidant activity was classified as very weak (IC₅₀ = 4667.89 ppm). Optimization is required to enhance functional benefits.
