Abstract

ABSTRAK: Kurma (Phoenix dactylifera) adalah buah yang mengandung kalium tinggi. Minuman yang banyak digemari saat ini adalah jus tetapi penggunaan kurma dalam jus jarang digunakan karena rasanya yang terlalu manis sehingga dalam penelitian ini ditambahkan sari kedelai untuk meminimalkan rasa manis dan meningkatkan nilai gizi. Tujuan dari penelitian ini adalah untuk menentukan mutu terbaik jus kurma soya terhadap karakteristik fisik, kimia, dan organoleptik, serta mengetahui formulasi yang dapat diterima panelis. Rancangan penelitian yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan satu faktor dan tiga kali pengulangan yang terdiri dari 5 taraf A1 (70:30), A2 (65:35), A3 (60:40), A4 (55:45), A5 (50:50). Teknik analisis data yang digunakan adalah analisis varian, jika terdapat perbedaan nyata antar perlakuan dilanjutkan dengan uji Duncan. Hasil penelitian menunjukkan bahwa formulasi jus kurma dan sari kedelai yang berbeda memberikan pengaruh sangat nyata (α=0,01) terhadap viskositas, stabilitas, kadar air, kadar protein, kadar karbohidrat, nilai pH, total padatan terlarut, dan organoleptik jus kurma soya. Perlakuan formulasi terbaik adalah formulasi 60:40 (A3) yang menghasilkan nilai viskositas 243,85 cps, nilai stabilitas 98.67 %, total padatan terlarut 18,60 ⁰Brix, kadar air 81,41 %, kadar abu 0,59 %, kadar lemak 0,16 %, kadar protein 1,49 %, kadar karbohidrat 15,93 %, nilai pH 6,39, kadar kalium 430,452 ppm dengan nilai mutu warna cokelat muda, aroma agak bau kurma, rasa manis, dan memiliki kekentalan yang kental.ABSTRACT: Dates (Phoenix dactylifera) are fruits that contain high potassium. The most popular drink today is juice, but the use of dates in juice is rarely used because it is too sweet, so in this study soybean milk was added to minimize the sweet taste sweetness and increase nutritional value. . The purpose of this study was to determine the best quality of soya date juice on physical, chemical, and organoleptic characteristics, as well as to determine which formulations were acceptable to the panelists. The research design used was a completely randomized design (CRD) with one factor and three repetitions consisting of 5 levels A1 (70:30), A2 (65:35), A3 (60:40), A4 (55:45). , A5 (50:50). The data analysis technique used was ANOVA, if there was a significant difference between treatments, it was continued with Duncan's test. The results showed that the different formulations of date juice and soybean juice had a significant effect (α=0.05) on the viscosity, stability, moisture content, protein content, carbohydrate content, pH value, total dissolved solids, and organolepticity of soy date palm juice. The best formulation treatment was formulation A3 (60:40) which produced a viscosity value of 243.85 cPs, a stability value of 98.67%, total soluble solids 18.60⁰Brix, a moisture content of 81.41%, an ash content of 0.59%, a fat content of 0.16%, a protein content of 1, 49%, carbohydrate content 15.93%, pH value 6.39, potassium content 430,452 ppm with a creamy color quality value, slightly smelly soy aroma, sweet taste, and has a thick consistency.
