Abstract

Food intake is a direct factor that can affect the nutritional status of adolescents. Imbalance of food intake will cause nutritional problems in adolescents. The survey results from two senior high schools showed that 16.46% of adolescents were overweight. This study aims to determine the description of macronutrient intake with nutritional status of high school adolescents in the city of Surakarta. This type of research uses observational research with a cross-sectional approach. The population in this study were teenagers in class XI and XII as many as 943 students. Sampling by simple random sampling method with a sample of 88 students. Food intake data was obtained by food recall 3x24 hours, namely 2 weekdays and 1 weekend with the method of 1 day direct interview and 2 days via whatsapp, food intake data was processed using NutriSurvei 2007 software. Nutritional status data was obtained based on anthropometric measurements, namely weight weighing using digital weight scales and measurement of height with microtoice, nutritional status assessment parameters using Body Mass Index according to Age (BMI/U). The results showed that most of the intake of carbohydrates (73.9%), fat (64.8%) and protein (52.3%) of adolescents were included in the category of weight deficit. As many as 14.8% of adolescents have abnormal nutritional status. Respondents with poor intake of protein, fat and carbohydrates showed more abnormal nutritional status. Adolescents must pay attention to the adequacy of fat intake so that it is balanced with daily needs.

Abstract

Pendahuluan: Kekurangan Energi Kronis (KEK) pada ibu hamil masih menjadi masalah gizi di Indonesia yang berdampak pada risiko BBLR, prematuritas, hingga kematian ibu dan bayi. Tujuan: Penelitian ini bertujuan untuk mengembangkan formula enteral berbasis pangan lokal ikan lele, tempe kedelai, dan labu kuning (ENTELELA) serta membandingkannya dengan formula enteral komersial. Bahan dan Metode: Penelitian eksperimental dilakukan di laboratorium dengan menggunakan dua formula lokal (ENTELELA 1: 70:80:25; ENTELELA 2: 80:90:25) dan satu formula komersial sebagai pembanding. Uji yang dilakukan meliputi kandungan gizi, viskositas, osmolalitas, pH, kadar air, daya alir, intensitas warna, serta uji organoleptik oleh 15 panelis. Data dianalisis dengan uji statistik ANOVA menggunakan SPSS 26. Hasil: Formula ENTELELA 1 dan 2 memiliki energi (303 & 306 kkal/250 mL) dan protein (15,9-16,1 g/250 mL) lebih tinggi dibanding formula komersial (250 kkal/250 mL; 14 g/250 mL). Kandungan omega-3 pada formula lokal telah memenuhi kebutuhan ibu hamil, namun nilai viskositas (126-150 cP) dan osmolalitas (535-628 mOsmol/kg) lebih tinggi dari standar, sehingga menurunkan daya alir (0,95-1,14 cc/detik) dibanding formula komersial (2,17-2,50 cc/detik). Uji organoleptik menunjukkan penerimaan baik pada warna, tetapi skor lebih rendah pada aroma, tekstur, dan rasa dibanding formula komersial. Kesimpulan: Formula enteral berbahan pangan lokal memiliki potensi sebagai alternatif nutrisi ibu hamil KEK, namun diperlukan modifikasi formulasi dan pengolahan untuk meningkatkan mutu fisikokimia dan daya terima produk. Saran: penelitian lanjutan diperlukan untuk menurunkan viskositas dan osmolalitas agar sesuai standar klinis.
