Abstract

One of the nutritional problems that is still quite high in Indonesia is stunting. Stunting is a growth and development disorder in children caused by chronic malnutrition and recurrent infections, characterized by height for age (TB/U) or body length for age (PB/U) less than -2 SD. The prevalence of stunting under five in Kalora Village, Kinovaro District, Sigi Regency has increased by 9% from 2020-2021. The purpose of this activity is to help integrate the implementation of interventions to reduce stunting in Kinovaro District, especially Kalora Village, by carrying out nutritional interventions in the form of demonstrating the making of Moringa pudding to Posyandu cadres, introducing and providing additional food for Moringa pudding accompanied by providing information related to the benefits of consuming Moringa to toddlers, school-age children, teenagers or WUS, and pregnant women. The demonstration activity went smoothly and the provision of Moringa pudding was well received.

Abstract

Rendahnya partisipasi ibu balita ke posyandu di Puskesmas Kinovaro (71,5%) dapat berdampak pada bertambahnya kasus malnutrisi, dengan mengikuti kegiatan posyandu ibu dapat memantau tumbuh kembang balita. Penelitian ini bertujuan untuk mengetahui hubungan karakteristik ibu, pelayanan dan fasilitas posyandu dengan partisipasi ibu balita ke posyandu di wilayah kerja Puskesmas Kinovaro. Desain cross sectional dengan populasi seluruh ibu balita di wilayah kerja Puskesmas Kinovaro. Sampel sebanyak 104 orang dengan teknik pengambilan sampel simple random sampling. Hasil penelitian menunjukkan bahwa masih rendah tingkat partisipasi ibu di posyandu Puskesmas Kinovaro (58,7%), tidak terdapat hubungan umur dan pendidikan ibu (p=0,890 dan p=0,304) dan ada hubungan pekerjaan, pengetahuan ibu, pelayanan dan fasilitas posyandu dengan partisipasi ibu balita ke posyandu (p=0,005; p=0,001; p=0,017 dan p=0,059). Kesimpulan pada penelitian ini yaitu terdapat hubungan pekerjaan, pengetahuan ibu pelayanan dan fasilitas posyandu dengan partisipasi ibu balita ke posyandu sedangkan umur dan pendidikan ibu tidak terdapat hubungan.

Abstract

Red dragon fruit peel has high antioxidant content and abundant availability in Indonesia but is still rarely utilized. Brown rice has a higher fiber content than white rice. Brown rice and dragon fruit skin can be processed into keciput snacks. Keciput is a snack made from glutinous rice flour wrapped in sesame seeds that can be varied in shape, color and taste. The aim is to determine the effect of the acceptability of red dragon fruit peel keciput with the addition of brown rice flour as a healthy snack. Completely randomized design (CRD) experiment with 3 treatments on red dragon fruit peel and brown rice F1 (50%:50%), F2 (60%:40%) and F3 (70%:30%). Acceptability test on 30 untrained panelists and analyzed using Kruskal Wallis and Mann Whitney tests with a significance of p<0.05. Analysis of fiber content, protein, and antioxidant power was done twice on the selected formulations. There was an effect on the acceptability of red dragon fruit skin snails and brown rice flour (p<0.001). There was no effect of acceptability in the comparison of F2 and F3 on color, aroma, and taste (p=0.252; p=8.24; p=0.247). The highest mean value of acceptability was in F2 (selected). F2 contained 27.653% fiber, 17.346% protein, and 107.268 ppm antioxidant power.
