Abstract

Abstract Indonesia is the third largest cocoa producing country after Ivory Coast and Ghana. Indonesian cocoa agribusiness still faces obstacles, among others, the low quality of cocoa beans caused by different types of cocoa plant varieties. The amount of phenolic compounds in cocoa depends on the variety. There are 3 variety of cocoa plants, namely Criollo (fine flavoured cocoa) Forestero (bulk cocoa) and Trinitario (Criollo and Forestero hybrids). This study aims to identify cocoa varieties quickly and efficiently to control the quality of cocoa bean production. The method used in this study is a combination of Fourier Transform Infrared (FTIR) Spectroscopy Method and Multivariate Analysis Method. The combination of these two methods has been widely developed for the identification and authentication of types of plants that have similar or close ties. Based on the results of FTIR (Fourier Transform Infrared) analysis at a wave number of 4000-400 cm-1 to 15 samples of cocoa beans, a spectrum that is multicomponent and relatively the same is obtained. The spectrum data is processed by the multivariate analysis method, Principle Component Analysis (PCA) and obtained that the 3 variety of cocoa can be clearly distinguished where the value of the main components (PC-1 and PC-2) is 92.03%.

Abstract

Food safety is a critical issue for public health, especially in developing countries like Indonesia, where the use of unauthorized food additives still occurs frequently. This study aims to analyze the presence of borax, or sodium tetraborate, in food circulating in Ambon City. The methods employed include qualitative analysis using turmeric paper and quantitative analysis through UV-Vis spectrophotometry. Out of 10 samples tested, 4 samples (40%) were positively detected to contain borax in the qualitative test. Quantitative analysis revealed borax concentrations ranging from 2.461 to 3.051 ppm, with the following details: Wayame Market Noodles (2.858 ppm), OM Supermarket Noodles (2.641 ppm), OM Supermarket Meatballs (2.935 ppm), and Mardika Market Meatballs (3.051 ppm). These findings indicate a serious health risk due to the consumption of borax-containing foods, which can lead to various health issues in both the short and long term.

Abstract

Abstract This study aimed to evaluate the phytochemical profile and antioxidant activity of ethanol extract from Gatal leaves (Laportea decumana) sourced from Maluku. Dried leaf powder was extracted with 96% ethanol over three cycles of 24 hours, followed by concentration using a rotary evaporator. Qualitative phytochemical screening confirmed the presence of phenols, flavonoids, alkaloids, tannins, and terpenoids, while saponins and steroids were not detected. Phenols and flavonoids were identified as the dominant bioactive compounds responsible for strong antioxidant properties. Antioxidant activity was assessed using the DPPH assay, yielding an IC₅₀ value of 55.31 ppm slightly higher than the positive control, vitamin C (IC₅₀ = 47.20 ppm) indicating potent free radical scavenging ability. These findings confirm that the ethanol extract of Gatal leaves is rich in bioactive phytochemicals, particularly antioxidants, and holds significant potential as a natural raw material for the development of herbal or nutraceutical products.
