Abstract

A study on the production of Aloe Vera (Aloe Vera Linn) powder using spray dryer has been conducted. The fillers used were arabic gum 1%, CMC 1%and Carragenan 1%. Analysis done on the Aloe powder are moisture content, acidity (pH), amino acids, particle spread and viscosity. The moisture content and pH of Alue powder filled with arabic gum and CMC met the requirement of CTFA code TN. 001. It moisture content were 6.40 - 7,23%, while the pH 4-5. Aloe powder with carragen did not meet the above requirement. However the amino acid content in powder using carragen filler was almost the same as those of Aloe gel. Its particle size was also finer and therefore it is more soluble in water.

Abstract

The study is aimed at increasing the added value of white pepper waste products by producing oleoresin. The solvents used were ethanol 95%, ethyl acetate and dichloro ethane. The particle size of white pepper powder are 40,60,80 and 100 mesh. The highest yield of oleoresin was obtained from 80mesh powder i.e. 14.60% using ethanol 95% ; 14.21% using ethyl acetate and 14.18% using dichloro ethane. The piperine content was 41.39% in ethanol 95%: 37.95% in ethyl acetate and 41.02% in dichloro ethane.

Abstract

Terpinol is one of the compounds which are terpene used as flavorand fragrance materials.In nature it is found in more than 200 derivatives from leaves,herbs and flowers.Syntheticaly it can be prepared from terpene hydrate which are derived from alpha-pinene trough its reaction with sulphuric acid,acetic glacialand aceton.It was observed that when alpha-pinene reacted with sulphuric acid,acetic glacial andaceton in 50:60:10 and 45 ratio,62% alpha-pinene was converted into alpha-terpineol.The contents of alpha-terpineol can also be observed from its refractives indexes and specific gravities,the higher the content had increased the values.

Abstract

A study to extract and isolate gel forming compound (GFC)of black cincau had been conducted successfully using soda ash and alcohol as extracting and isolating agent. the result showed that the yield of GFC will increase with the increase of soda ash, and so will the Ph value of black cincau gel. the sensory test result showed that the highest acceptance score of black cincau gel was obtained from the extrtact using 5% soda ash. observation on gelatinization characteristics of black cincau showed that the addition of GFC will produce changes on amylogram pattern of tapioca, i.e. the increase of consitency with the increase of GFC addition. The amylogram also showed that black cincau GFC has tw fractions which interacted with strach

Abstract

A study on the effect of distillation time and physico-chemical properties of while pepper waste had been done.The particle sizes were ground pepper and whole pepper,and the distllation method waswater and steam distillation for 2,4,6,8, and 10 hours.The yield of pepper oil of whole pepper were 1.56, 1.84, 2.77, and 2.97% respectively.For the ground pepper the yield were 2.50, 2.77, 2.81, 2.88, and 3.24%.The main components of the oil were alpha-pinene,beta-pinene,limonene and beta-caryophyllene.The physico-chemical test showed that the oil was suited the requirement of EOA(Essential Oil Assosiation Of America)

Abstract

Curcuma is a jind of spices which is usually in household as food and it is also useful in the traditional medicine.Curcuma contents curcumin which usually used as a coloring agent for food.The curcuminoid can be extacted from spice by using an organic solvent.In this experiment extraction was done by using ethyl ethanol with the concentration of 70,82 and 95% and particle sizes of 20,40,60 and mesh.The extraction was carried out at  40 degree C for 5 hours.The result showed that the yield increased with the increase of solvent concentration and the increase of particle size.The curcumin content also increased with the increase of solvent concentration and particle size.The highest result of oleoresin was 28.11% with the curcumin content of 7.50%.
