Abstract

Meskipun memiliki definisi yang luas dan cenderung samar, pembangunan berkelanjutan telah menjadi paradigma pembangunan yang ideal bagi berbagai negara di dunia. Termasuk Indonesia sebagai salah satu negara yang turut berkomitmen untuk merealisasikan pembangunan berkelanjutan. Sayangnya, kebijakan pembangunan pangan di Indonesia masih terpusat pada ketahanan pangan. Padahal pembangunan pangan berkelanjutan di dunia, menambahkan konsep industri pangan yang kuat melalui pertumbuhan dan penyediaan lapangan pekerjaan sekaligus turut memerhatikan isu kesehatan lingkungan. Penelitian ini bertujuan untuk menganalisis dan merumuskan strategi alternatif dalam upaya mencapai tujuan pembangunan berkelanjutan di bidang pangan, melalui contoh kasus komoditas cabai di Kabupaten Garut. Data primer diperoleh melalui wawancara semi terstruktur, kuisioner, dan observasi terhadap 27 informan kunci yang dipilih melalui teknik pengambilan sampel snowball. Adapun data sekunder, diperoleh dari berbagai publikasi ilmiah. Data dianalisis secara deskriptif dengan menggunakan sSWOT-QSPM. Hasil penelitian menunjukkan bahwa keempat kelompok strategi (S-O, S-T, W-O, dan W-T) memperoleh skor daya tarik yang tidak jauh berbeda. Adapun strategi-strategi alternatif yang menjadi prioritas dan dapat diterapkan oleh stakeholder yang terlibat dalam mengembangkan komoditas cabai adalah koordinasi jadwal budidaya cabai merah di lokasi sentra, meningkatkan posisi tawar petani, meningkatkan kualitas produk, pembuatan sistem informasi harga dan cuaca/musim, meningkatkan intensitas kegiatan edukatif petani.

Abstract

Penelitian ini menggunakan perspektif rantai pasok untuk mengkaji keberlanjutan pada komoditas Cabai Merah segar dengan membandingkan beberapa jenis rantai pasok berdasarkan pilar-pilar keberlanjutan. Responden dalam penelitian ini sebanyak 27 orang informan kunci. Data diambil melalui wawancara dan observasi di lokasi produksi dan pemasaran Cabai. Hasil penelitian menunjukkan terdapat tiga jenis rantai pasok yang dibedakan berdasarkan jumlah pelaku yang terlibat dan jenis pasar yang dituju. Rantai tipe I dan II merupakan rantai pasok Cabai menuju pasar induk. Perbedaannya terletak dari ada tidaknya pengumpul dalam rantai tersebut. Adapun rantai tipe III merupakan rantai pasok cabai menuju pasar eceran lokal tanpa adanya peran pengumpul. Total marjin yang tinggi pada rantai tipe II menunjukan panjangnya rantai pasok cabai, sedangkan rantai tipe III menunjukkan rantai yang pendek dengan marjin keuntungan terendah. Perbandingan ketiga jenis rantai menunjukkan bahwa rantai tipe III merupakan rantai yang memberikan manfaat lebih dalam aspek ekonomi, sosial, dan, lingkungan. Secara ekonomi, ROI petani meningkat dari 26,7% menjadi 43,7%. Secara sosial, konflik dapat dihindari melalui sistem pembayaran tunai. Ditinjau dari aspek lingkungan, rantai tipe III mampu mencegah emisi CO2 sebesar 92,84%.

The strategic strategies that can be addressed and can be applied by stakeholders involved in the development of chili commodities are coordination of red chili cultivation schedule at the central location, increasing bargaining position of farmers, improving product quality, making information system price and weather / season, increasing intensity of educative activity of farmer.

Ditinjau dariaspek lingkungan, rantai tipe III mampu mencegah emisi CO2sebesar 92,84%.Kata kunci: keberlanjutan, rantai pangan, cabai merah.ABSTRACTThis study uses a supply chain perspective to analyze the sustainability of fresh red chili bycomparing several types of supply chain based on the pillars of sustainability. Respondents were 27key informants. Data were collected through interviews and observations of production andmarketing sites.The results show that there are three types of supply chains differentiated by thenumber of actors involved and the type of market. Chain types I and II are chili supply chains to thewholesale market. The difference lies in the presence of the role of middlemen in the chain (Chaintype II). While chain type III is chili supply chain to the local retail market without the role ofmiddleman. The highest margin total on the chain type II indicates the length of chain, whereas thetype III chain shows the shortest chain with the lowest total margin. The comparison of the threetypes of chains indicate the type of chain III is a chain that provides more benefits in economic,social, and environmental aspects. Economically, ROI of farmers increased 26.7% to 43.7%.Socially, conflicts can be prevented by cash payment system. Viewed from environmental aspect,chain type III able to decrease CO2emission equal to 92,84%.Keywords: Sustainability, food chain, chili

Abstract

Cassava is a potential commodity as a flour substitute products. Cassava can be used as flour known as mocaf (modified cassava flour). Mocaf is the product of cassava flour processed using the principle of modifying cells of cassava by fermentation. This fermentation process will produce flour which almost resembles the characteristics and qualities of wheat flour. The purpose of this study was to analyze the efficiency of business and added value analysis. The results showed that the value of business efficiency (R/C ratio) of 1,81, which means that these businesses efficiently and profitably (R/C > 1). The ratio of added value amounted to 49.0%, this means that the processing of mocaf provide added value high enough. Total profits earned by the production process (from 200 kg of cassava) were 227,500.00 IDR. Keywords: Cassava, mocaf, business efficiency, added value.

Abstract

Tulisan ini berangkat dari kesadaran bahwa sistem pangan global memiliki dampak negatif bagi ketahanan pangan masyarakat lokal dan lingkungan hidup, khususnya di daerah perkotaan. Sebagai solusi, banyak penelitian di seluruh dunia bergerak menuju Gerakan Pangan Lokal (Local Food Movements) untuk memitigasi dampak-dampak negatif tersebut. Merujuk pada keberhasilan penelitian partisipatif yang dilakukan oleh anggota tim peneliti sebelumnya di kota lain, penelitian ini bertujuan memetakan potensi sosial dari kota Bandung di dalam tumbuhkembangnya sistem pangan lokal dalam berbagai bentuknya. Tulisan ini mengkategorikan berbagai inisiatif pangan lokal menjadi: (1) kebun organik dan permakultur, (2) artisan lokal, (3) outlet dan pasar, (4) pusat edukasi dan wisata, serta (5) kebun komunitas; serta membandingkannya dengan bagaimana inisiatif serupa berkembang di negara-negara lain di berbagai belahan dunia. Tulisan ini ditutup dengan kesimpulan bahwa telah terjadi evolusi di dalam komunitas pangan di Bandung dari mulai suatu inisiatif menuju jejaring dan gerakan, yang memiliki tujuan yang jelas untuk membangun ketahanan pangan di dalam pengertian yang luas, yaitu ketahanan individu dan masyarakat yang dibangun melalui pangan.

Abstract

The increase in economic needs has resulted in increased community pressure on forest area. This encourage the government to open up access to utilize forest, in order to improve the community's economy. Since March 2018, access to utilize forest has been implemented in Masigit Kareumbi Game Reserve (TBMK). However, research related to the evaluation of activities has not been widely found. This study aims to evaluate and determine the optimal pine tapping management strategy in TBMK. The research was conducted in Sukajaya and Citengah Villages, South Sumedang District, using Ostrom Institutional Analysis and Development Framework, Stakeholder Analysis, and the Analysis Hierarchy Process. The result showed that, the potential of pine resin in the research location was 308,377.3 kg/year, which had a positive economic, social, and institutional impact on the community but tended to have a negative impact on the ecological aspects. Stakeholder analysis showed that the parties involved were among others KLHK, BBKSDA West Java, Sukajaya and Citengah Heads Village, Forest Farmer Group (KTH) Sawargi and Medal Kencana, Pinus Merkusii Cooperation, and the Indonesian Conservation Cadre Communication Forum (FK3I). Each stakeholder has a good relationship, however, there is still a need for a more optimal communication and coordination system between one another. The suggested strategy is to increase community assistance by FK3I and Pinus Merkusii Cooperation involvement in limiting the tapping pine resin.

Abstract

Forests are ecosystems that are comfortable for human health. Spots from the forest ecosystem site suitable for healing forest must be identified. The research aims to analyze the suitability of Kampung Pasundan Cisamaya (KPC) for healing forest activities. The research method refers to the Draft Indonesian National Standard Number 9006:2021 concerning Forest tourism for health therapy (healing forest). The results showed that the KPC site is suitable for healing forest activities. Five reconnection activities with nature, namely invitation by air, invitation by vegetation, invitation by land, invitation by water, and release emotion, can be carried out well in several spots on KPC's healing forest track. Healing forest activities regularly and adequately has a positive impact on health.

Abstract

Asteraceae is known as the largest family of flowering plants. Despite some species members being invasive plants, these species are often adopted and utilized by local community groups for food, traditional medicine, and other uses. In our ethnobotanical study of Asteraceae, we identified ways a local Sundanese community group in West Java utilizes a diverse range of species in the family for different purposes. Our study focuses on a Sundanese village called Cihanjawar, located in the regency of Purwakarta, using ethnobotany and ethnomedicine approaches. People of Cihanjawar utilize some species of Asteraceae for food as ‘lalapan’ and traditional medicinal purposes. In-depth, semi-structured interviews with the people of Cihanjawar were conducted to collect primary data regarding the utilization of Asteraceae species as food and traditional medicine. A total of eight species of Asteraceae were found during the field-guided exploration in Cihanjawar Village, which include Acmella paniculata, Ageratum conyzoides, Calyptocarpus vialis, Crassocephalum crepidioides, Dichrocepala integrifolia, Emilia sonchifolia, Erechtites valerianifolia, Sphagneticola trilobata, some of which are considered invasive alien species. The species of A. paniculata, C. crepidioides, E. sonchifolia, Er. valerianifolia is eaten as a raw food (lalapan, Ind.). Then Ag. Conyzoides and C. crepidioides are utilized in traditional medicine. C. vialis, D. integrifolia, and Sphagneticola trilobata are not used by the people of Cihanjawar as food or as traditional medicine.
