Abstract

Penelitian ini bertujuan untuk menganalisis pengaruh substitusi ubi jalar putih sebanyak 30% terhadap kualitas bentuk, warna, aroma, tekstur dan rasa mie basah. Jenis penelitian ini adalah eksperimen menggunakan metode kuantitatif dengan uji organoleptik. Data yang digunakan adalah data primer yang diperoleh langsung dari 3 orang panelis ahli dengan format pengisian uji organoleptik terhadap kualitas mie basah dengan substitusi ubi jalar putih. Data yang diperoleh kemudian ditabulasikan dalam bentuk tabel dan dilakukan uji ketinggian terhadap masing-masing variabel X 1 dan X 2  untuk mengetahui apakah terdapat mean perbandingan pada variabel tersebut menggunakan uji independen semple t-tes. Hasil penelitian ini menunjukkan bahwa terdapat pengaruh substitusi ubi jalar putih sebanyak 30% yang signifikan terhadap kualitas warna, sedangkan untuk kualitas bentuk, aroma, tekstur dan rasa tidak berpengaruh. Hasil analisis data diperoleh skor pencapaian tertinggi secara keseluruhan yaitu bentuk 3,67 (cukup rapi dan seragam), warna 3,89 (cukup kuning), aroma 3,89 (cukup beraroma harum khas mie basah), tekstur kenyal 3,67 (cukup kenyal), tekstur mudah putus 3,11 (cukup mudah putus), rasa 3,67 (cukup rasa gurih) dan rasa khas ubi jalar 2,00 (kurang khas ubi jalar). Hasil uji kualitas mie basah terbaik dengan substitusi ubi jalar pada perlakuan X2 dengan substitusi ubi jalar sebanyak 30%.

Abstract

The development of halal tourism has become a significant global trend, driven by the increasing number of Muslim tourists worldwide and the demand for Sharia-compliant tourism services. Malaysia is one of the countries that has successfully positioned itself as a leading halal-friendly destination globally. This article aims to analyze the concept, policies, and implementation of halal tourism in Malaysia based on a field study conducted by Master of Tourism students from Padang State University in November 2025. The method used was a descriptive qualitative approach through direct observation, academic discussions, and interviews with stakeholders at the Malaysia Tourism Information Center (MaTiC) and related institutions. The study results indicate that the success of Malaysian halal tourism is supported by strong synergy between the government, religious institutions, the tourism industry, and higher education institutions. In addition to its economic impact, halal tourism also contributes to strengthening cultural identity and community empowerment. This study is expected to serve as a reference for empirical learning and benchmarking for the development of halal tourism in Indonesia.

Abstract

This study aims to synthesize scientific evidence on food quality, children's nutritional status, and the sustainability of nutrition interventions in Indonesia using a systematic literature review approach. A total of 11 national and international articles published between 2019 and 2025 were selected based on relevance to child nutrition programs and the availability of empirical data on food quality, determinants of nutritional status, and local food innovations. The data were analyzed thematically to identify key findings and implementation gaps. The results indicate that spatial disparities and socio-economic factors, particularly maternal education, sanitation access, and household purchasing power, are major determinants influencing children's nutritional status. In addition, local resource–based food innovations, such as locally produced therapeutic foods and nutrient-dense local ingredients, show strong potential to improve dietary quality and support the sustainability of nutrition programs. Therefore, the implementation of the Free Nutritious Meal Program should be supported by evidence-based food quality standards, strengthening of local food systems, and adaptive intervention strategies to achieve long-term improvements in children's nutritional status in Indonesia.
